- In a small bowl, toss 1 pint strawberries, rinsed, hulled, and thinly sliced, with 1 to 2 tablespoons firmly packed dark-brown sugar. Let sit at least 5 minutes to bring out the juices.
- In a medium saucepan over medium heat, warm 1 3/4 cups water, 1 3/4 cups milk, and 1/4 teaspoon salt. Stir in 2 cups quick-cooking oats; cook, stirring occasionally, until thick and creamy, 5 to 6 minutes.
- Ladle oatmeal into bowls. Top each serving with 1 tablespoon sour cream and some of the strawberries; sprinkle with brown sugar.

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
- Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

- In a bowl, combine first five ingredients. Add butter and vanilla; stir until crumbly. Set aside 1 cup. Press remaining crumb mixture evenly into an ungreased 13-in. x 9-in. baking pan. Spread preserves over crust. Combine coconut and reserved crumb mixture; sprinkle over preserves. , Bake at 350° for 25-30 minutes or until coconut is lightly browned. Cool.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine the strawberries with 1/4 cup sugar in a medium bowl. Toss gently to blend, and set aside.
- Combine the flour, baking soda, and cinnamon in a large bowl. Stir in the rolled oats and blend evenly; set aside.
- Beat the butter, brown sugar, and white sugar in the large mixing bowl of an electric mixer at medium speed until fluffy. Add the egg, milk, and vanilla, and continue beating until smooth. Stir in the flour mixture, and mix well to blend. Combine the strawberries with the flour mixture, and stir to blend. Drop by teaspoonfuls onto ungreased baking sheets.
- Bake in preheated oven until slightly brown, about 8 minutes. Cool on baking sheets. Store in an airtight container.

I came up with this bread late one night because I had too many strawberry that were about to go bad. I love it. This works equally well with fresh or frozen strawberries.

- Preheat oven to 350 degrees F (175 degrees C). Grease two 7x3 inch loaf pans.
- Stir together the flour, 1 1/2 cups rolled oats, sugar, cinnamon, baking powder, and salt in a large mixing bowl. In another bowl, whisk together the vegetable oil and eggs; stir into flour mixture until just moistened. Fold in strawberries. Pour into the prepared loaf pans, and sprinkle the tops with the remaining 1/4 cup of rolled oats.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool the strawberry bread in the pans for 5 minutes before cooling completely on a wire rack.

STRAWBERRY OATMEAL
My family really enjoyed this oatmeal. When I made this recipe I made a few adjustments. I halved the recipe. I did used frozen strawberries which I cut in chunks. I used Splenda brown sugar substitute. When cooking my milk/water mix it seemed to curdle. I also took some advise of a reviewer and added the strawberries to the milk and water. This seemed to make the mix curdle alot worse. I added my sour cream directly to hot mixture. I got this recipe from Pinching Your Pennies.

- Prepare strawberries. The should be hulled and thinly sliced.
- In a medium bowl, combine strawberries and brown sugar and gently stir until all strawberries have sugar on them. Set aside.
- In a medium saucepan over medium heat, bring water and milk and salt to a boil. Immediately add the oats and reduce heat to medium. Stirring occasionally, allow to cool 5 to 6 minutes to desired texture.
- Fill four serving bowls wil oatmeal, leaving room for the topping. Spoon 1 Tablespoon of sour cream on each bowl followed by 1/4 of the strawberries.

- Drain strawberries on paper towels; set aside. In a large bowl, combine flour, oats, brown sugar, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Reserve 1-1/2 cups for topping. Pat remaining crumb mixture into a greased 9-in. square baking pan. , In a bowl, combine sugar and cinnamon; stir in strawberries. Spoon over the prepared crust. STRAWBERRIES AND CREAM OATMEAL
I tried this one morning when I was out of blueberries (my usual favorite) and it is surprisingly good! I am posting it because, like me, I am sure not too many people would think to put strawberries in oatmeal, but it actually has become one of my favorite ways to eat oatmeal (a daily staple for me!) Also, fruit measurements are estimates, as I usually just use whatever I have.

- Add milk to oats in a deep bowl and microwave 3-5 minutes, depending on your microwave wattage and desired thickness. Watch carefully so it doesn't spill over the sides!
- While oatmeal is cooking, wash and slice strawberries. Soft strawberries work well, so you may want to mash them a little bit, but that is up to you.
- When cereal is done, stir strawberries and sliced banana (if using) into oatmeal. If desired, add a little sugar or splenda.
- NOTE: It is also good with a little vanilla extract if you are using plain milk, just to give it some flavor. ALSO, You may need to re-heat oatmeal a little before eating if your strawberries cool it down too much.
