I have found several recipes, vintage, if you will that might remind some of the baby-boomers and older of another time in our history. I would like to share some of them with you. As in earlier times, when money was a little harder to come by,this "old-fashioned" recipe is made with cooked rice and a few of the "usual suspects," gelatin, pineapple, nuts, are you beginning to remember? If you do,maybe you would like to make this again, and if you don't maybe you would like to try it anyway, because this is a wonderful dish, that I truly hope you will enjoy. Cooling time is cooking time. Plan ahead, this is better made the day before you plan to serve it.

2 (4 ounce) packages strawberry gelatin
2 cups boiling water
3/4 cup cold water
1 cup cooked cold rice
1/2 cup milk
1 cup sweetened whipped cream
1 (12 ounce) can crushed pineapple, with juice
1/2 cup chopped nuts

Steps:

  • Dissolve gelatin in boiling water; add cold water.
  • Chill until it starts to congeal.
  • Fold in rice, milk, whipped cream, pineapple and nuts;
  • Chill until firm.

1 cup pecans
1 egg white
3/4 teaspoon vanilla
1 cup sugar
1 tablespoon water
1 cup salad oil
1/3 cup cider vinegar
1/4 cup sugar
1 tablespoon poppy seeds
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon celery seed
2 tablespoons corn syrup
6 cups fresh spinach, washed and dried
2 cups strawberries, sliced (or any fruit desired for color)
3/4 cup red onion, thinly sliced
1 cup fresh mushrooms, sliced

Steps:

  • Make spiced pecans. Beat egg white until very frothy, but not stiff. Add remaining ingredients, excluding pecans. Now add pecans and mix to coat. Spread pecans on baking sheet in single layer and bake in a preheated 200 degree oven for 45 minutes, turning every 15 minutes.
  • For dressing, shake together all ingredients. Toss together salad ingredients. Toss dressing with salad just before serving, sprinkle dressed salad with pecans.

1 cup uncooked long grain rice
3/4 cup dried cranberries
2 green onions, sliced
2 tablespoons sugar
1/2 teaspoon dried minced onion
1/2 teaspoon poppy seeds
1/8 teaspoon paprika
1 tablespoon white wine vinegar
1 tablespoon cider vinegar
2 tablespoons canola oil
3/4 cup sliced almonds, toasted

Steps:

  • Cook rice according to package directions; drain and rinse with cold water. In a large bowl, combine the rice, cranberries and green onions. , In a small bowl, combine the sugar, minced onion, poppy seeds and paprika; whisk in the vinegars and oil. Drizzle over rice mixture and toss to coat. Cover and refrigerate for up to 2 hours. Just before serving, stir in the almonds.

CREAMY STRAWBERRY RICE PUDDING

3 cups water
1 cup long-grain or medium-grain white rice
1/2 teaspoon salt
1/3 cup plus 3 tablespoons sugar
1/2 teaspoon ground cinnamon
2 cups low-fat (1 %) milk
1 teaspoon vanilla extract
2 12-ounce baskets strawberries, hulled, sliced
1 8-ounce container low-fat (1 1/2 %) vanilla yogurt

Steps:

  • Bring 3 cups water to boil in heavy medium saucepan. Add rice and salt. Reduce heat to medium-low and simmer uncovered until rice is very tender and water is absorbed, stirring occasionally, about 20 minutes. Add 1/3 cup sugar and cinnamon and stir to blend. Add milk and simmer until mixture is very thick, stirring frequently, about 25 minutes. Remove from heat. Cool 10 minutes. Stir in vanilla extract. Cool to room temperature, about 2 hours.
  • Mix strawberries and remaining 3 tablespoons sugar in large bowl. Let stand until juices form, at least 30 minutes. (Rice pudding and strawberries can be prepared 4 hours ahead. Cover and refrigerate separately. Bring to room temperature before continuing.)
  • Stir yogurt and 2 cups strawberry mixture into rice pudding. Transfer to large bowl. Top with remaining strawberry mixture and serve.

2 cups chicken stock or 2 cups vegetable stock
1 cup whole grain brown rice
1/3 cup coarsely chopped pecans
1/3 cup coarsely chopped sunflower seeds
1/3 cup coarsely chopped pumpkin seeds
1/4 cup cider vinegar
1/4 cup vegetable oil
1 tablespoon liquid honey
1 teaspoon cracked pepper
3 cups quartered strawberries
3 green onions, trimmed and sliced
1/2 cup torn fresh basil
1/3 cup silvered dried apricot
lettuce leaf
lettuce leaf
whole fanned strawberry
basil leaves

Steps:

  • In medium saucepan, bring stock and rice to a boil, cover, reduce heat to medium low and cook for 20 to 25 minutes or just until tender.
  • Drain off any liquid and let cool.
  • Meanwhile, in dry medium frypan, toast pecans, sunflower seeds and pumpkin seeds for 2 to 3 minutes, let cool.
  • In bowl or jar, mix or shake together vinegar, oil, honey and pepper.
  • Five to ten minutes before serving, pour dressing over berries and toss to coat.
  • Add toasted nuts, seeds, green onions and basil to rice, stir in strawberry mixture and apricots.
  • Serve at room temperature on lettuce lined plates and garnish with fanned whole strawberries and basil leaves if desired.

1-3/4 cups cold milk, divided
1/2 teaspoon salt
1 package unflavored gelatin
1/2 cup sugar
1 cup heavy whipping cream, whipped
FILLING:
2 packages (10 ounces each) frozen sweetened sliced strawberries, thawed
2 tablespoons cornstarch
1 tablespoon lemon juice

Steps:

  • In a saucepan, combine the rice, 1-1/2 cups milk and salt. Bring to a boil over medium heat, stirring frequently. Reduce heat; cover and simmer for 20 minutes or until liquid is absorbed and rice is tender., In a microwave-safe bowl, sprinkle gelatin over remaining milk; let stand for 1 minute. Stir in sugar. Microwave on high for 45 seconds; stir. Let stand for 1 minute or until gelatin and sugar are completely dissolved. Stir into hot rice. Transfer to a bowl. Refrigerate until chilled, about 1 hour. Fold in the whipped cream. Spoon into a 5-cup ring mold coated with cooking spray. Refrigerate for at least 2 hours or until firm., Meanwhile, drain the strawberries, reserving 1 cup juice. In a saucepan, combine cornstarch and reserved strawberry juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in lemon juice. Cool for 10 minutes. Add strawberries and stir to coat. Refrigerate until chilled. Invert rice mold onto a serving platter and unmold. Fill center with strawberry mixture. Garnish with mint if desired.

one 6 oz box regular (not sugar free) strawberry jello, prepared according to instructions
one 8 oz container of Cool Whip
2 cups or 1 pound fresh strawberries, diced or sliced how you prefer
optional add-ins include whipped cream for topping, strawberry jam at the bottom, or mini marshmallows to mix in

Steps:

  • Boil one cup water on stove top, and mix into bowl with jello powder in mixing bowl. Add in one cup cold water and stir. Chill jello, preferably in a shallow pan, for about 45 minutes or until it is completely cool, just starting to set. Pour the jello into a large mixing bowl. Mix the jello up vigorously, for about one minute. Using an electric mixer is great for this step. But watch out it splashes. This breaks up any jello bits that have started to set, and adds air to the mix. Then fold in the Cool Whip and then strawberries. Mix completely, but be gentle and don't deflate the mix by stirring too aggressively. If you want to add in mini marshmallows, do it now. Add them in about 1/2 cup at a time to make sure you don't overdo it. Transfer to a 9×13 pan for serving, or into individual dishes if you prefer. You can top with whipped cream and sliced strawberries if you prefer. If you want to dress up this dish, spread a spoonful of strawberry jam in the bottom of a glass dessert dish or shallow glass. Then add the salad mix. After the dish has chilled, dollop with some fresh whipped cream and a slice of strawberry.
