I was looking for a recipe copy of commercially available BearPaws, but couldn't find one. My kids love them, but I wanted something healthier for them, and less expensive. So, I decided to try to recreate it. This recipe could be easily doubled.

1/2 cup Greek yogurt, with honey
1/4 cup finely chopped strawberry
1 egg
1/2 teaspoon vanilla
1/3 cup sugar
3/4 cup ground oatmeal
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon

Steps:

  • Chop strawberries (I used my mini food processor).
  • Mix all wet ingredients together.
  • Add the dry and mix until combined. The mixture will be slightly wet.
  • Drop by large spoonful onto parchment lined cookie sheet.
  • Bake at 350 for approx 12 minutes.
  • * If you like a sweeter cookie, or use plain Greek yogurt, you could add more sugar.
  • The texture of this cookie is soft, and muffin-like.

1 stick unsalted butter, softened
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup yogurt chips
1/2 cup diced fresh strawberries

Steps:

  • Beat the butter, granulated sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Add the egg and vanilla; beat.
  • Whisk the flour, baking soda and salt in a bowl. Add to the butter mixture and beat until just combined. Stir in the yogurt chips and strawberries.
  • Preheat the oven to 350 degrees F. Scoop rounded tablespoons of dough and roll into balls. Arrange on parchment-lined baking sheets about 2 inches apart. Refrigerate 30 minutes, then bake until the cookies are golden on the bottom, 12 to 15 minutes. Cool on the baking sheets, 10 minutes, then transfer to racks to finish cooling.

A variation on traditional English sour cream scones. A good tip is to use a good quality yogurt with plenty of fruit bits in it.

1 ¾ cups all-purpose flour
4 teaspoons baking powder
¼ cup butter
½ cup strawberry yogurt
2 tablespoons whole milk, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Sift the flour and baking powder into a large bowl. Using your fingers, rub in the butter until the mixture resembles a crumbly texture. Add the yogurt all at once and mix briefly to form a soft dough.
  • On a lightly floured surface, roll the dough out to 1 inch in thickness. Dip a 3-inch cutter into some flour, and stamp out 12 scones. (You may have to re-roll the dough to get 12.) Place scones 2 inches apart onto baking sheets. Brush tops with milk.
  • Bake in preheated oven for 10 minutes or until risen and golden brown. Best served freshly baked with butter.

3 tablespoons sugar
3 tablespoons butter or margarine, melted
3 containers (6 oz each) Yoplait® Original yogurt strawberry (2 cups)
1 quart (4 cups) strawberries, sliced

Steps:

  • Heat oven to 450°F. In medium bowl, stir Bisquick mix, sugar, butter and 1/2 cup of the yogurt until soft dough forms. Turn dough onto surface lightly dusted with Bisquick mix; gently roll in Bisquick mix to coat. Shape dough into ball; knead 8 to 10 times.
  • Roll dough 1/2 inch thick. Cut with floured 3-inch cutter. Place on ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.
  • Split shortcakes. Spoon strawberries and remaining yogurt between halves of shortcakes and over tops.

We were given a lot of strawberries and I had to figure out what to do with them so they didn't go bad. So I came up with this recipe. I hope everyone likes it as much as my kids did. I prefer fresh strawberries over strawberry extract because it gives it a more fruitful flavor. But the extract is good as well. You decide.

1 ½ cups white sugar
1 cup butter, softened
1 egg
3 tablespoons strawberry puree
2 ¾ cups all-purpose flour
1 teaspoon vanilla extract
½ teaspoon baking powder
½ teaspoon salt
½ cup white sugar
1 teaspoon red colored sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Beat 1 1/2 cups white sugar and butter together in a bowl with an electric mixer until creamy, about 3 minutes. Beat egg into butter mixture. Add strawberry puree.
  • Stir flour, vanilla extract, baking powder, and salt into strawberry mixture with a spoon until flour is completely incorporated into dough.
  • Stir 1/2 cup white sugar and red sugar together in a shallow bowl.
  • Roll dough into walnut-sized balls, roll each ball in red sugar mixture, and place each ball 1 1/2 inches apart onto prepared baking sheets. Lightly press each dough ball down to flatten.
  • Bake cookies in the preheated oven until lightly browned, 10 to 15 minutes. Cool.
