  • Combine the Dressing ingredients in a jar and shake well. Set aside - or refrigerate up to 2 days. Bring to room temperature before using.

Coarse salt and ground pepper
1/3 cup olive oil
2 tablespoons white-wine vinegar
1 teaspoon Dijon mustard
2 cups quartered cherry tomatoes
1/2 cup sliced scallions
1/2 cup crumbled feta cheese

Steps:

  • Cook beans in a large pot of boiling salted water until crisp-tender, 6 to 8 minutes. Drain in a colander; run under cold water to stop cooking.
  • Whisk oil with vinegar and mustard; season with salt and pepper.
  • Toss beans with vinaigrette, tomatoes, scallions, and feta.

1-1/2 pounds fresh green beans, cut into 1-inch pieces
1/3 cup olive oil
1/3 cup white wine vinegar
1 garlic clove, minced
1 teaspoon dill weed
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup coarsely chopped pecans, toasted
1/2 cup chopped red onion
1 cup crumbled feta cheese

Steps:

  • Place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Drain and rinse with cold water. Place beans in a large bowl; cover and refrigerate for at least 1 hour., In a jar with a tight-fitting lid, combine the oil, vinegar, garlic, dill, salt and pepper; shake well. Add pecans and onion to beans. Drizzle with dressing; toss to coat. Sprinkle with cheese. Serve immediately with a slotted spoon.

1 ½ pounds fresh green beans
1 sweet onion, peeled
2 cloves garlic, chopped
½ cup rice wine vinegar
½ cup apple cider vinegar
⅓ cup canola oil
1 tablespoon white sugar
¾ teaspoon salt
ground black pepper to taste
1 dash hot sauce
1 dash Worcestershire sauce
4 ounces feta cheese, crumbled

Steps:

  • Thinly slice the onion and place into a colander over the sink. Add the cleaned green beans to a large pot of boiling water and boil until crisp tender (about 4 minutes). When the beans are done, drain the water into the colander to slightly cook the onions. Immediately rinse all in cold water to stop the cooking process.
  • For the dressing: In a large bowl, whisk together the garlic, rice wine vinegar, cider vinegar, oil, sugar, salt, pepper, hot sauce and Worcestershire sauce. Add beans, onions and cheese and stir until combined. Place in a nonreactive container and refrigerate for at least 4 hours. Enjoy!

2 lbs fresh green beans, ends trimmed
1 small purple onion, thinly sliced
4 ounces crumbled good quality feta cheese
1 cup coarsely chopped toasted pecans
1/2 cup olive oil
1/4 cup champagne vinegar
4 -5 drops good balsamic vinegar, to taste
1 tablespoon chopped fresh basil
2 cloves garlic, minced
1/4 teaspoon salt, to taste
1/8 teaspoon pepper, to taste

Steps:

  • Trim the ends (and strings, if you like) from the green beans, then snap or cut them into thirds.
  • Using a steamer basket in a pan, cover and cook for 15 minutes or until crisp-tender; plunge the cooked beans into cold water to stop the cooking process, then drain and pat dry.
  • Toss together the cooked green beans, sliced onion, feta, and pecans in a large bowl; cover and chill in refrigerator for at least 1 hour.
  • Meanwhile, whisk together the remaining ingredients in a non-reactive bowl to make the vinaigrette; chill for 1 hour.
  • Pour the vinaigrette over bean mixture, toss, and chill an additional 1 hour; toss again just before serving.
  • Makes 8 servings.

500 g (1lb) green beans (trimmed and halved )
250 g (½lb) tomatoes (chopped )
1 cup cubed feta cheese
1-2 garlic cloves (finely grated/chopped)
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp salt
½ tsp pepper

Steps:

  • Bring a large pot of salted water to a boil.
  • Add the green beans and cook for 5 minutes. Remove and place in a bowl of ice water to stop the cooking immediately. Drain and add to a bowl.
  • Mix the dressing ingredients together then pour over the green beans. Mix well then allow to marinade for at least 10 minutes but up to 24 hours covered in the fridge. You can add the feta cheese at this stage as well if you prefer.
  • When you're ready to serve, add the feta cheese and tomatoes, toss well and serve.

1 red onion, thinly sliced
1 1/2 cups toasted chopped walnuts
1/2 cup white wine vinegar
3/4 cup olive oil
1 cup feta, crumbled

  • Bring a large pot of water to a boil over high heat and season with a large pinch of salt. Add the green beans and cook for 3 to 4 minutes until tender but still crisp. Transfer to a boil of iced water to cool and then drain and pat dry.

1 pint cherry tomatoes (any small, sweet summer tomatoes will work)
2/3 cup feta cheese
2 tbsp fresh mint
1 1/2 tbsp olive oil
2 1/2 tbsp white balsamic vinegar
kosher salt (to taste)
cracked black pepper (to taste)

Steps:

  • Cut green beans into 1-inch pieces, and slice tomatoes into halves or quarters, depending on size.
  • To make the dressing, mix olive oil, vinegar and a pinch of kosher salt and cracked black pepper. (I like to put this in a small plastic container with a lid and just shake the dickens out of it to combine. But whisking works too.)
  • Pour dressing over beans and toss to combine. Store in fridge for about 1/2 hour to let beans absorb the flavor of the dressing.
  • Remove from fridge, add tomatoes, feta and mint and toss to combine. Garnish with fresh mint leaves and serve.

Plan ahead to soak dried chickpeas overnight. With a soak, they only take an hour to cook, and taste better than canned ones.
