Microwave peanut brittle is an easy 15 minute candy perfect for the holidays. It's a family favorite recipe at every Christmas!

Provided by Danielle Green

Categories     Candy

Time 15m

Number Of Ingredients 6

1 cup granulated sugar
1/2 cup light corn syrup + 2 Tbsp
1 1/4 cup roasted salted peanuts
1 1/2 tsp. butter
1 1/2 tsp. vanilla extract
1 tsp. baking soda

Steps:

  • In a glass 1.5 qt casserole or mixing bowl, stir the corn syrup and granulated sugar together and microwave for 3.5 minutes. Stir in the peanuts and microwave for 3 more minutes until light brown. Add the butter and vanilla to the mixture and stir until well combined. Microwave for an additional 1.5 minutes.
  • You will need to work quickly for the next step, so be sure to have your buttered cookie sheet ready to go. Add the baking soda to the mixture and gently stir until light and foamy. Quickly pour the foamy mixture onto the greased cookie sheet.
  • Do NOT use a spoon to spread the mixture around. Instead, gently rotate the pan to spread the mixture around until it is about 1/2 inch thick. Work quickly, because it will began hardening very fast.
  • Let the peanut brittle cool for at least 1/2 hour or until it is hard and smooth to the touch. When it is cooled, break the candy into small pieces and store in an air-tight container.

MICROWAVE PEANUT BRITTLE CANDY

Microwave Peanut Brittle Candy image

This is an ancient family recipe that has been adapted to a microwave. This is better than any peanut brittle you can buy at the store. Be careful its addictive

Provided by Heather Reynolds in

Categories     Candy

Time 15m

Yield 6-10 serving(s)

Number Of Ingredients 7

1 1/2 cups unsalted peanuts
1 cup granulated sugar
1/2 cup light corn syrup (I use Karo)
1/8 teaspoon salt
1 teaspoon real butter
1 teaspoon real vanilla extract
1 teaspoon baking soda

Steps:

  • Remember all microwaves vary so you may need to adjust your time by 15 seconds. If the first batch comes out to soft then you know you didnt cook it long enough. After you make the first batch it gets really easy and fast to make.
  • In a large microwave safe bowl stir peanuts, sugar, syrup and salt together. Be sure to mix them well. (rubber spatula works really well).
  • Microwave for 3 minutes 45 seconds to 4 minutes.
  • Stir with a metal spoon so it doesnt stick. Stir it quickly so it doesnt have time to cool.
  • Microwave 3 1/2 to 4 more minutes.
  • Stir in butter.
  • Microwave 2 more minutes.
  • Stir in vanilla and dont panic when it steams and turns brown.that is what you want.
  • Add baking soda and stir quickly until is gets light and foamy.
  • Immediately pour onto a lightly buttered baking sheet and spread to about 1/4 inch thick.
  • Cool.
  • break into pieces and store in an airtight container.

MICROWAVE PEANUT BRITTLE

Microwave Peanut Brittle image

Peanut Brittle, a family favorite at Christmastime, can now be made easily in the microwave in about 7 1/2 minutes.

Provided by Terri @ that's some good cookin'

Time 15m

Number Of Ingredients 7

1 cup raw peanuts, these are dry, raw peanuts - not roasted or baked
1 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda

Steps:

  • Butter/grease a cookie sheet. Alternatively, line a cookie sheet with a Silpat or buttered foil. Set aside.
  • In a large glass (no plastic) microwave safe bowl, stir together the raw peanuts, sugar, corn syrup and salt. (If using baked or roasted peanuts do not add add at this time.)
  • Cook 3 minutes on high.
  • Stir well. If using baked or roasted peanuts, add them now and stir.
  • Cook 3 minutes on high.
  • Stir in butter and vanilla.
  • Cook 1 1/2 minutes longer on high.
  • Add baking soda and stir quickly until light and foamy.
  • Immediately pour onto lightly greased cookie sheet.
  • Cool and break. I 'drop' the pan on the counter top once or twice to break up the brittle. It works great! If there are still large pieces remaining, simply break them by hand. They snap easily.
  • Follow the cooking instructions the same as for the 1100-1200 watt microwaves except that the cooking times will be 3 minutes, 3 minutes, 2 minutes.
  • Follow the cooking instructions the same as for the 1100-1200 watt microwave except that the cooking times will be 4 minutes, 4 minutes, 2 minutes.

  • Replace the bowl in the microwave and cook on high for 2 to 4 minutes, until the mixture turns a nice medium-brown caramel color. Start watching carefully around the 2-minute mark, and remove when the caramel color is achieved.
  • Add the baking soda and vanilla. The mixture will bubble furiously upon the addition of these ingredients — this is what gives the candy its hallmark airy texture. (This is also why you need to use a large bowl.) Stir quickly to combine. The finished mixture will look creamy and caramelized.
  • Working quickly, pour the mixture onto your prepared baking sheet and spread it as evenly as possible. If you end up with an uneven spread, don't worry — the candy should still set up nicely, even in the thicker areas.
