This Toasted Israeli Couscous Salad is a beautiful symphony of textures and flavors with minced vegetables, herbs, and a zesty lemon/basil vinaigrette. It is a lovely lunch or a healthy side dish.

1 large lemon, the juice and the zest
⅓ cup extra virgin olive oil
1 tablespoon finely minced fresh basil
1 teaspoon dried dill
2 large garlic cloves, minced
¼ cup grated parmesan cheese
1 teaspoon black pepper
Salt to taste
1 quart chicken stock
2 tablespoons olive oil
2 cups pearl couscous
⅓ cup finely chopped scallions, both white and green part
½ cup finely chopped fresh basil, more for garnish
½ medium English cucumber, finely chopped
1 ½ cups chopped Roma tomatoes

Steps:

  • Make the vinaigrette. In a mason jar, combine the lemon juice, lemon zest, olive oil, basil, dill, garlic, parmesan cheese, and black pepper. Shake vigorously or use an immersion blender to mix well. Taste and adjust for salt.
  • Make the salad. Bring the chicken stock to a rolling boil. Keep at a low boil.
  • Meanwhile, in a large pot over medium-high heat, add two tablespoons of olive oil. When hot, pour in the couscous and saute, moving constantly, until golden brown.
  • Carefully pour in the boiling chicken stock and cook until the couscous is tender.
  • Drain the couscous in a colander and add to a large bowl to cool.
  • To the couscous, add the scallions, chopped basil, cucumber, and Roma tomatoes.
  • Shake the jar of dressing to incorporate all of the ingredients and pour over the couscous and vegetables. Toss well to combine.
  • Cover the bowl tightly and refrigerate for at least 1 hour.
  • Toss again and garnish with a sprig of basil.

1 ¼ cups chicken stock
2 Persian cucumbers, sliced
1 cup chopped fresh spinach
1 cup grape tomatoes, halved
1 cup quartered black olives
¼ cup sliced scallions
¼ cup chopped fresh Italian parsley
¼ cup julienned fresh mint leaves
¼ cup julienned fresh basil leaves
lemon, zested and juiced
3 tablespoons extra-virgin olive oil
½ tablespoon Dijon mustard
salt and ground black pepper to taste

Steps:

  • Heat 1 teaspoon olive oil in a saucepan over medium heat. Add shallot and garlic; cook until soft and fragrant, 2 to 3 minutes. Add dry couscous and saute until slightly toasted, 2 to 3 minutes. Pour in chicken stock and increase heat to high. Bring to a boil, then reduce heat to low and cover. Cook until couscous is tender and all liquid has been absorbed, about 15 minutes. Remove from the heat and allow to cool for about 45 minutes.
  • While the couscous is cooling, mix lemon zest, lemon juice, 3 tablespoons olive oil, and Dijon mustard together for the dressing in a small bowl. Season with salt and pepper; set aside.
  • Transfer cooled couscous to a serving bowl. Add cucumbers, spinach, tomatoes, olives, scallions , parsley, mint, and basil. Pour dressing over top and mix to incorporate.

1 1/2 cups (220 grams) Israeli or other large couscous

3 cups of finely chopped parsley and mint leaves
1 large garlic clove, very finely chopped
1 red onion, finely chopped
4 medium tomatoes, seeded and diced
2 lemons
Black pepper

Steps:

  • Heat a tablespoon of oil in a large skillet over medium-high heat. Add the couscous and stir until it turns a deep golden brown and smells toasted.
  • Add 2 3/4 cups of water and a pinch of salt and bring to a boil. Lower the heat to a simmer and cook, stirring often, until all the water has been absorbed, 10 to 14 minutes. Let cool.
  • Stir the remaining olive oil into the couscous. Add the parsley and mint, garlic, onion, tomatoes and the finely grated zest of one lemon. Season to taste with salt and pepper. Add the juice of both lemons, or to taste.

1 cup Israeli couscous, preferably whole-wheat
2 tablespoons extra virgin olive oil
1/2 cup finely chopped cilantro
2 tablespoons chopped chives
1 ounce feta, diced
2 tablespoons pine nuts, lightly toasted
1 can chickpeas, drained and rinsed
1/2 red pepper, cut in thin 2-inch slices
2 tablespoons fresh lemon juice
1 teaspoon cumin seeds, lightly toasted and ground
Salt to taste
1/4 cup plain low-fat yogurt (or use half olive oil)
1/2 teaspoon Aleppo pepper or mild chili powder (more to taste)

Steps:

  • Heat one tablespoon of the olive oil over medium-high heat in a medium saucepan and add the couscous. Stir until the couscous begins to color and smell toasty, 4 to 5 minutes. Add 2 cups water and salt to taste and bring to a boil. Reduce the heat, cover and simmer 15 minutes, or until the couscous is tender. Drain if any liquid remains in the pan.
  • Transfer the couscous to a bowl and add the cilantro, chives, feta, pine nuts, chickpeas and red pepper.
  • In a small bowl or measuring cup, mix together the lemon juice, salt, cumin, remaining olive oil, yogurt and Aleppo pepper or chili powder. Toss with the couscous mixture. Refrigerate in a bowl or in containers until ready to take to work or eat.

Steps:

2 cups Israeli couscous
1/4 cup shelled unsalted roasted pistachios, coarsely chopped
2 1/4 cups hot water
Kosher salt and freshly cracked black pepper
6 dried Turkish apricots, chopped
2 scallions, sliced

Steps:

  • Heat the oil in a saucepan over medium heat. Add the couscous and pistachios and cook, stirring, until toasted and light golden brown, about 7 minutes. Add the water, season with salt and pepper, to taste, and bring to a boil. Reduce the heat to a simmer, cover, and cook until the liquid is absorbed, about 10 minutes.
