Baked Apples image

This recipe is for whole baked apples stuffed with buttery brown sugar oat crumble. For extra flavor, feel free to swap the water with warm apple cider.

3 Tablespoons (43g) unsalted butter, softened to room temperature (extra soft, so it's easy to mash)
1/4 cup (50g) packed light or dark brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 cup (20g) old-fashioned whole rolled oats
4 large apples (see note), rinsed and patted dry
optional: 2 Tablespoons raisins, dried cranberries, or chopped nuts
3/4 cup (180ml) warm water

Steps:

  • Preheat oven to 375°F (191°C).
  • Using a handheld or stand mixer with a paddle attachment, or simply using a fork or spoon, beat/mash the butter, sugar, cinnamon, and nutmeg together until combined. Stir in the oats, then the raisins/dried cranberries/nuts, if using. Set aside.
  • This can be tricky, but I recommend using a sharp paring knife and a spoon. (Or an apple corer.) I find cookie scoops can easily break or crack the apples. Using a sharp paring knife, cut around the core, about halfway or 3/4 down into the apple. Use a spoon to carefully dig out the core. Takes a bit of patience and arm muscle. Once the core is out, use a spoon to dig out any more seeds.
  • Place cored apples in an 8-inch or 9-inch baking pan, cake pan, or pie dish. Spoon filling into each apple, filling all the way to the top. Pour warm water into the pan around the apples. The water helps prevent the apples from drying out and burning.
  • Bake for 40-45 minutes or until apples appear slightly soft. Bake longer for softer, mushier baked apples. The time depends on how firm your apples were and how soft you want them to be.
  • Remove apples from the oven and, if desired, baste the outside of the apples with juices from the pan. This adds a little moisture to the skin, but it's completely optional.
  • Serve warm with salted caramel, whipped cream, or ice cream. Cover and store leftovers in the refrigerator for up to 2 days.

3 Tablespoon Unsalted Butter (43g)
¼ Cup Packed Light Brown Sugar (50g)
½ Teaspoon Ground Cinnamon
½ Teaspoon Ground Ginger
¼ Teaspoon Ground Nutmeg
¼ Cup Old-Fashioned Whole Rolled Oats (20g)
2 Tablespoon Raisins, Chopped Walnuts, Dried Cranberries (OPTIONAL)
¾ Cup Warm Water (180ml)

Steps:

  • Preheat oven to 375°F (191°C) Use a handheld mixer or a stand mixer fitted with a paddle attachment or just a fork or a spoon to beat butter, sugar, cinnamon, ginger, and nutmeg. You need to stir it until it's completely combined. Now stir in oats along with raisins, dried cranberries. and some chopped walnuts. Keep it aside.
  • Either use a sharp paring knife with a spoon or simply an apple corer to core the apples. I used a sharp paring knife. First, hold the apple steadily with your hand and keep it on a cutting board. Now Cut around the core about halfway into the apple. Now use a spoon to dig out this core. This step requires a bit of patience. Once you've taken out the core, use a spoon to scoop out any leftover seeds.
  • Keep the cored apples on a 9-inch baking pan or a cake pan or a pie dish. Spoon filling into your apples. Fill all the way to the top. Pour some warm water into the pan so that your apples don't dry out and burn.
  • Bake these stuffed apples for 40-45 minutes or until the apples look soft. If you want them to be mushy and softer then bake them a little longer. Baking time will also depend on how firm your apple is.
  • Remove the baked apples from the oven. You can also baste the outside of apples with the juices that you see in the pan. This adds more moisture to the skin of the apples and makes it more flavorful, but this is totally optional.Serve with Salted Caramel or Whipped Cream. You can store the leftovers covered in the refrigerator for up to 2 days.

1 tablespoon butter
1 cup chopped walnuts
1 medium apple, peeled and finely chopped
3 tablespoons dried cranberries
1 tablespoon minced fresh parsley
1 tablespoon olive oil
1 garlic clove, minced
1 pork tenderloin (1-1/2 pounds)
1/3 cup apple butter
1/2 teaspoon salt
1/2 teaspoon ground coriander
SAUCE:
1 cup red currant jelly
1 shallot, finely chopped
2 tablespoons cranberry juice
2 tablespoons honey
1 tablespoon dried currants
1 tablespoon cider vinegar

Steps:

  • In a large heavy skillet, melt butter. Add walnuts; cook and stir over medium heat until toasted, about 2 minutes. Remove 1/2 cup for serving. Add apple to the remaining walnuts; cook and stir 1 minute longer. Cool slightly., Place the cranberries, parsley, oil, garlic and apple mixture in a food processor; cover and process until finely chopped., Cut a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove wrap; spread apple butter on 1 long side of tenderloin to within 1/4 in. of edges. Top with apple mixture. Close meat; tie with kitchen string. Place on a rack in a shallow roasting pan; rub with salt and coriander., Bake at 350° until a thermometer inserted into center of stuffing reads 165° and thermometer inserted in pork reads at least 145°, 55-65 minutes. Let stand for 10 minutes before slicing., Meanwhile, in a small saucepan, combine sauce ingredients; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 12-14 minutes. Serve with pork; top with reserved walnuts.

1/3 cup packed light brown sugar

4 large or 6 medium firm baking apples (such as Rome, Golden Delicious or Honey Crisp)

  • Combine the walnuts, cranberries, brown sugar, oats, butter, lemon juice, cinnamon and 1/2 teaspoon salt in a small bowl and squeeze together until a wet and sandy mixture is formed.
  • Scoop the core out of each apple with a melon baller, taking care not to scoop completely through to the bottom or the sides. Stuff each apple with some of the cranberry-walnut mixture. Place the apples in the slow cooker insert and pour in the apple cider.
