This delicious Stuffed Chicken Marsala recipe is made with baked chicken breasts stuffed with Italian cheese, sun-dried tomatoes, basil, and green onions, and covered in a creamy Marsala Cooking Wine sauce.

2 cups Italian Style Blend Shredded Cheese
1/2 cup Italian Breadcrumbs
1 clove garlic (, minced)
1/4 teaspoon crushed red pepper
3 green onions (chopped)
1/4 cup chopped sun-dried tomatoes (drained)
2 tablespoons chopped fresh basil ((or Italian Parsley))
3/4 cup sour cream
1-1/2 teaspoons Italian Seasoning
salt and pepper to taste
1 tablespoon butter ((could substitute oil))
1 small onion (thinly sliced)
1 cup Holland House® Marsala Wine
1 cup heavy cream
8 ounces mushrooms
4 medium-sized boneless, skinless chicken breasts
1/2 cup olive oil
2 cups flour
salt and pepper to taste
1/2 teaspoon garlic powder

Steps:

  • Pre-heat oven to 350°F. Spray a baking dish with cooking spray.
  • In a large bowl, add all Cheese stuffing ingredients and stir until well combined. Set aside.
  • On the side of a chicken breast cut a slit to create a "pocket." Do not slice all the way through.
  • Stuff each chicken breast with 1/4 of the cheese stuffing. You do not need to seal the chicken.
  • In a large skillet, heat oil until it shimmers.
  • While the oil heats, place flour, salt, pepper, and garlic powder in a shallow dish.
  • Press each side of the stuffed chicken breasts in flour, shaking off excess.
  • Cook the chicken breasts in the hot oil until the bottom is golden brown, turn and cook the other side until it is golden brown. (Does not have to cook all the way through. We just want to brown the chicken.)
  • Remove the stuffed chicken breasts from pan and place in a baking dish.
  • Bake the stuffed chicken breasts for about 20 minutes, or until juices run clean and the temperature of the center of chicken reaches 165°F.
  • Add butter to the same pan that you cooked the chicken. Add onions and cook for about 2 minutes.
  • Add mushrooms and cook for about 5 minutes or until the onions are translucent.
  • Add the Holland House® Marsala Cooking Wine to the pan and simmer on low heat.
  • Add the heavy cream and cook until the sauce reduces by half.
  • Place the cooked stuffed chicken breasts on a serving dish and top each with the cooked onions, mushrooms, and Marsala sauce.

This classic Italian-American chicken recipe includes tender, perfectly pan seared chicken cutlets, and flavor enhancing browned mushrooms, and it's all covered with a richly seasoned marsala wine, garlic and herb sauce.

1 1/4 cups dry marsala wine*
1 1/4 cups unsalted chicken broth
2 (10 - 11 oz) boneless skinless chicken breasts, (butterflied and halved, pounded to an even thickness)
Salt and freshly ground black pepper
1/3 cup all-purpose flour
2 Tbsp unsalted butter
2 Tbsp olive oil
8 oz. cremini mushrooms, (sliced)
3 garlic cloves, (minced (1 Tbsp))
1 tsp minced fresh thyme ((or scant 1/2 tsp dried))
1 tsp minced fresh oregano ((or scant 1/2 tsp dried))
1 1/2 tsp cornstarch (whisked with 1 Tbsp chicken broth (in a small bowl until well combined))
1/3 cup heavy cream
1 Tbsp minced fresh parsley

Steps:

  • Add marsala wine and chicken broth to a medium saucepan. Heat over medium-high heat, bring to a boil, then reduce heat to medium and let gently boil until reduced to 1 cup**, about 15 minutes.
  • Meanwhile season both sides of chicken with salt and pepper. Dredge each side in flour.
  • Melt 1 Tbsp butter with 1 Tbsp olive oil in a 12-inch skillet over medium-high heat. Add chicken pieces and let sear until cooked through (165 in center), turning once halfway through, about 10 - 12 minutes.
  • Transfer chicken to a plate. Tent with foil.
  • Reduce burner temperature to medium heat. Melt remaining 1 Tbsp butter with 1 Tbsp olive oil, add mushrooms.
  • Sauté mushrooms, just tossing occasionally (and increasing burner temp slightly as needed to encourage browning), until mushrooms have shrunk and are golden brown, about 8 minutes. Add garlic during last 1 minute of sautéing.
  • Remove pan from heat then pour in marsala reduction***, thyme and oregano.
  • Return to heat, bring to a simmer, while scraping up browned bits from the bottom, then stir in cornstarch chicken broth mixture. Stir until thickened****.
  • Off heat stir in heavy cream, season sauce with salt and pepper to taste. Return chicken breasts to pan, spoon sauce over top.
  • Sprinkle with parsley and serve immediately.

4 (About 6 oz) Skinless Boneless Chicken Breasts
4 Slices Prosciutto Cotto (Cooked Ham)
4 Thin Slices Fontina Cheese
1 Cup All-purpose Flour
1 Teaspoon Salt
1/4 Teaspoon Black Pepper
3 Tablespoons Butter
3 Tablespoons Olive Oil
8 oz. Cleaned, Chopped Mushroom (Baby Bella Are Nice)
1/2 Cup Chicken Broth
1 1/4 Cups Marsala Wine
1/4 Cup Heavy Cream

Steps:

  • To stuff the chicken breasts, working with one at a time, butterfly breast halves: Lay each breast half, skinned side up, lengthwise on a cutting board.
  • Holding a sharp knife parallel to work surface and beginning on a long side, cut breast almost in half horizontally (not all the way through), then open it like a book.
  • Cover opened breast halves with a piece of plastic wrap and gently pound each to an even 1/2-inch thickness with a meat pounder or rolling pin.
  • Remove plastic wrap and cover each opened breast half with 1 slice of ham and 1 slice of cheese, tucking in any protruding ends.
  • Fold each breast in half to enclose ham and cheese.
  • Season the flour with salt and pepper, then dredge the chicken breasts in the flour and set aside.
  • Heat the butter and oil in a heavy skillet over moderately high heat until foam subsides.
  • Saute chicken, turning over once, until golden and cooked through, about 8 minutes total.
  • Keep warm.
  • Add the mushrooms to the pan and cook until tender and brown.
  • Add the Marsala wine to the pan and cook over high heat scraping the browned bits into the sauce.
  • Add the chicken broth and continue to cook until the mixture has reduced by half.
  • Stir in the cream and continue cooking until thick.
  • Serve the chicken breasts on a warm platter, spooning the mushroom sauce over top.

4 medium boneless, skinless chicken breasts
8 slices mozzarella cheese
1 12-ounce jar julienned sun dried tomatoes (see note)
⅔ cup shredded parmesan cheese
3 tablespoons oil
salt and pepper to taste
2 teaspoons Italian seasoning
1 ½ cups marsala cooking wine ((may sub chicken broth))
3 teaspoons minced garlic
1 cup sliced mushrooms
½ cup heavy cream
½ teaspoon salt (or to taste)
¼ teaspoon black pepper (or to taste)
grated parmesan cheese and parsley or thyme for topping (optional)

Steps:

  • Preheat oven to 400 degrees. Use a sharp knife to cut a slit horizontally along one side of the chicken breast, being sure not to cut all the way through the chicken - the goal is to make a "pocket".
  • Fill each pocket with 2 slices of mozzarella cheese, 1/4 of the sun dried tomatoes, and 1/4 of the shredded parmesan cheese.
  • Pinch together the open side of the chicken breasts and secure with toothpicks. Drizzle chicken with oil, then sprinkle with salt and pepper to taste, and Italian seasoning, rubbing in with your fingers.
  • Transfer chicken to a large oven-safe skillet and brown chicken over medium-high heat for 3-4 minutes on each side. Place chicken on a plate while you prepare the marsala sauce.
  • In the same pan (don't clean it) add marsala cooking wine, garlic, mushrooms, salt and pepper, and heavy cream. Stir and bring to a boil and cook for 3-4 minutes. Return chicken pan and spoon some of the sauce over the chicken.
  • Transfer skillet to preheated oven and bake for 20-25 minutes until chicken is cooked all the way through and cheeses are melted. Spoon sauce over the chicken, top with grated parmesan cheese and parsley or thyme if desired, and serve.

1/4 cup parmesan cheese, grated

2 tablespoons sun-dried tomatoes, flakes if in oil drain first
1/3 cup sour cream
1/2 teaspoon salt and pepper
2 lbs boneless skinless chicken breasts
4 ounces cooking oil
2 cups flour
salt and pepper, to taste
1 small onion, chopped
6 cups button mushrooms, thinly sliced
24 ounces marsala wine or 24 ounces beef broth
8 ounces heavy cream

Steps:

  • Preheat oven to 350°F.
  • Stuffing:Combine all cheese stuffing ingredients in a bowl.
  • Chicken:Butterfly thickest section to create two lobes.Place pounded chicken breasts on a plate and place desired amount of stuffing on one half of chicken breast.
  • Gently press stuffing down and fold over other side of chicken breast. Preheat a large sauté pan on stove top. Add 4 oz. oil; heat oil until shimmering.
  • Place approximately 2 cups flour in a pan and season it to taste with salt and pepper. Dredge chicken in flour and shake off excess flour. Place stuffed chicken breasts in sauté pan with the preheated oil.
  • Cook each side until golden. When chicken is seared on both sides remove them from sauté pan and place them in a baking pan and into the oven for 10-20 minutes.
  • Bake until juices run clear and stuffing and center reach a temperature of at least 165°.
  • Sauce: Add the onions to the sauté pan. Stir with spatula. After 2 minutes add the mushrooms; sauté mixture until onions are translucent. Deglaze sauté pan with the marsala wine (make sure to incorporate particles from bottom of pan). Bring wine to a simmer and add heavy cream. Simmer sauce on low heat until reduced by half.
  • Place cooked chicken breast on a plate and top with onions, mushrooms and sauce.

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup flour
2 tablespoons vegetable oil
2 tablespoons butter
12 ounces mushrooms, sliced button variety
2 tablespoons shallots, finely chopped
1 tablespoon dried porcini mushrooms, ground (can use other varieties depending on your taste or availability)
1/2 cup marsala wine
1/2 cup fat free chicken broth

Steps:

  • Season chicken with 1/4 tsp each of salt and pepper.
  • Dredge chicken in flour, shake off excess.
  • Heat vegetable oil in large skillet over medium heat.
  • Add chicken and cook, turning once after 6-8 minutes. Should be lightly browned on both sides and barely firm when you press the centers of the chicken.
  • Remove chicken from chicken and set aside.
  • In same skillet, heat butter over medium heat. Add button mushrooms, stirring occasionally, cook about 6 minutes or until liquid evaporates.
  • Stir in shallots and cook 2 minutes.
  • Stir in ground porcini mushrooms and Marsala wine. Increase heat, boil for 1 minute. Add chicken broth and return to boil.
  • Add chicken breasts; turn to coat in sauce.
  • Simmer until sauce thickens.
  • Transfer to serving plates.
  • NOTE: You can find dried mushrooms in the ethnic foods aisle in your grocery store. I have also found them in the produce department. Once I couldn't find the dried porcini mushrooms so I bought a mix of dried mushrooms. Then I put the dried mushrooms in my spice grinder to grind. I'm sure if you didn't have a spice grinder, you could use a clean coffee grinder or food processor.

8 ounces sliced mushrooms, finely chopped
1/3 cup shallot, minced
1 cup fresh Baby Spinach
2 tablespoons fresh parsley, chopped
1/3 cup breadcrumbs
1 egg white
1/2 teaspoon salt, divided
1/2 teaspoon fresh ground pepper, divided
1 lb skinless chicken breast half (4 breasts)
1/4 cup all-purpose flour
1/2 cup marsala wine
1 ounce white sauce mix (1/2 of a 1.8 oz package such as Knorr)
1/2 cup fat-free low-sodium chicken broth
1/2 cup nonfat milk
1/2 tablespoon lemon juice

Steps:

  • Preheat oven to 400°F.
  • Heat 1 tsp oil in a large non stick skillet over medium-high heat. Add mushrooms and shallot; cook 6 minutes. Add spinach and parsley; cook 1 minute. Transfer to a bowl. Stir in bread crumbs, egg white, 1/4 tsp salt, and 1/4 tsp pepper.
  • Sprinkle chicken with 1/4 tsp each salt and pepper. Insert a clean, sharp knife into the thickest side of each chicken breast. Make a 2 inch slit. Cut to, but not through the opposite side. Holding the knife blade parallel to the cutting board, guide the blade around the inside, creating a pocket. Be careful not to cut through the sides.
  • Divide the mushroom mixture between the 4 breasts. Stuff into the pockets.
  • Wipe the pan clean with paper towels. Heat 2 tsp oil in pan over medium heat; add chicken. Cook 5 minutes, turning frequently, until browned. Transfer chicken to a baking sheet lined with foil. Bake for 13 minutes or until done at 400°F.
  • Add wine to pan; cook 2 minutes over medium heat, scraping pan to loosen bits.
  • Whisk together cream sauce mix, broth, and milk; add to pan. Bring to a boil; reduce heat, and simmer 1 minute. Stir in lemon juice.
  • Spoon sauce onto serving plates; arrange chicken over sauce.
  • Yields 4 servings: 1 breast and about 1/4 cup sauce).
