CHILES RELLENOS (STUFFED PEPPERS)



Chiles Rellenos (Stuffed Peppers) image

This is a great traditional Mexican dish. It takes a little bit of time, but it is worth every minute! Provecho! Serve with a side of Spanish Rice.

4 fresh poblano chile peppers
½ pound lean ground beef
1 onion, chopped
1 clove garlic, chopped
salt and pepper to taste
3 eggs, separated
1 cup shredded mozzarella cheese
2 roma (plum) tomatoes, chopped
½ cup all-purpose flour
1 cup corn oil

Steps:

  • Place whole peppers over an open flame (gas burner) or under the broiler. Roast, turning frequently until evenly black and blistered. Remove from heat, place in a plastic bag, and let them sweat for a while. This will allow the skins to peel of easily.
  • While the peppers are sweating, place the ground beef in a skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. When beef is fully cooked, add the onion, garlic and tomato, and cook for a few more minutes. Season to taste with salt and pepper.
  • Remove the peppers from the bag, and peel off the burnt skin. You may wish to wear protective gloves. Run peppers under cool running water to rinse away any burnt pieces. Make a small vertical slit in the side of the peppers, and remove the seeds and veins. Stuff each pepper halfway with the ground beef mixture, then fill the rest of the way with shredded cheese. Close the slits, and secure with toothpicks.
  • Whip egg whites in a large glass or metal bowl until thick and fluffy. Add the egg yolks, and whip for a minute to blend in.
  • Meanwhile, heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Coat the stuffed peppers with a light dusting of flour, then dip them in the egg so they are fully covered. Carefully place in the hot oil, and fry on both sides until golden. Drain on paper towels, then serve on a large platter.

This is a great alternative to Italian-style stuffed shells. Serve this with sour cream and chips and salsa.

36 jumbo pasta shells
1 pound lean ground beef
1 cup water
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 cup shredded Cheddar cheese
1 (4 ounce) can chopped green chiles
1 (8 ounce) can tomato sauce
¾ cup picante sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 to 10 minutes. Drain well.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add water and taco seasoning mix and simmer until thickened, about 5 minutes.
  • Stir refried beans, Cheddar cheese, and green chiles into ground beef; cook and stir until cheese is melted and mixture is smooth, about 5 minutes. Fill shells with beef mixture.
  • Combine tomato sauce and picante sauce in a saucepan over medium-low heat; cook and stir until heated through, 5 to 7 minutes. Spread 1/2 cup sauce in the bottom of a 9x13-inch baking dish.
  • Arrange stuffed shells side-by-side in the baking dish and top with remaining sauce. Cover dish with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Let stand for 5 minutes before serving.

I found this one on the Cooking Light website and I can't wait to try it! Use reduced fat and reduced sodium ingredients to make this as healthy as possible. You can also add chicken to change this from a vegetarian to a carnivore dish.

4 medium poblano chiles, halved and seeded (you can also use jalapenos)
1 (16 ounce) can fat-free refried beans
1 (8 7/8 ounce) envelope microwaveable cooked long-grain rice (such as Uncle Ben's Original Ready Rice)
1/2 cup picante sauce
1 cup reduced-fat Mexican cheese blend, shredded
chopped fresh cilantro (optional)

Steps:

  • Place chile halves, cut sides up, on a round microwave-safe plate.
  • Cover with wax paper; microwave at HIGH 3 minutes.
  • While chiles cook, combine beans, rice, and picante sauce in a medium bowl, stirring well. (This is where you would add the chicken if using).
  • Spoon bean mixture evenly into chile halves.
  • Cover with wax paper; microwave at HIGH 2 minutes.
  • Uncover chiles, sprinkle each half with 2 tablespoons cheese, and microwave at HIGH 1 to 2 minutes or until cheese melts.
  • Sprinkle evenly with cilantro, if desired.

1/4 cup vinegar
1/2 cup vegetable oil
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
6 poblano peppers (can be substituted with bell peppers)
1 1/2 cups black beans, washed and soaked overnight
1 garlic clove, chopped
1/4 cup vegetable oil or lard
1 small onion, chopped
2 large, ripe avocados
5 ounces raw green tomatoes
5 ounces sauteed green tomatoes
1/4 onion, chopped
1 garlic clove, minced
1 handful cilantro
2 green chiles, finely chopped
1 cup cream, yogurt or creme fraiche
Salt and freshly ground black pepper

Steps:

  • In a large bowl, mix together the vinegar, oil, salt, and pepper and marinate the peppers in this mixture for at least 2 hours. While the beans are simmering, roast the peppers over an open flame, gently turning them so the skin is equally charred, and carefully ensuring not to overcook them. Remove from flame and cover with a damp towel for a few minutes. After this, the peppers are ready to be peeled. Once the skin has been removed, briefly dip them in water to ensure the peppers are clean and ready to be stuffed.
  • For the filling: place the soaked black beans in a large pot or pressure cooker with the garlic and cover with water. Cook for 1 hour until beans are soft and creamy.
  • Once the beans are cooked, puree them in a blender until they form a smooth paste. In a casserole dish, heat the oil or lard, add the chopped onions, and fry until golden brown, about 10 minutes. Next, add the mashed beans and fry them together with the onions. Season with salt and simmer over medium heat for 10 minutes.
  • Gently slice open the peppers, remove the seeds, and fill the cavity with the refried bean paste. Gently fold the pepper over and press gently to maintain its shape.
  • To make the avocado sauce, slice 2 avocados in half, remove the stone, and spoon the avocado flesh out. Place this in a blender and puree with the raw and cooked green tomatoes, onion, garlic, cilantro, and chiles. Add a cup of cream or yogurt and season with salt.
  • Place the peppers on a plate, pour over the guacamole sauce and garnish with chopped cilantro.

1 medium onion, finely chopped
1 clove garlic (medium), finely chopped
3 (15-ounce) cans small white beans, drained and rinsed
1 teaspoon dried oregano (Mexican variety preferred), crumbled
1/2 teaspoon dried thyme
1/3 cup canned fat-free reduced-sodium chicken broth
salt and freshly ground pepper, to taste
1/2 cup , crumbled queso, fresco (fresh Mexican cheese) or mild feta cheese

Steps:

  • 1. Prepare the tomato sauce. Reserve, covered, off heat. Prepare the chiles. Then, put 1 roasted and peeled chile on a work surface. Using a small sharp knife cut a slit to open the chile from the stem end to within 1-inch of the tip. Carefully cut out the seed pod and discard. Gently rinse under running water to wash out remaining seeds. Repeat with the remaining chiles. 2. In a nonstick skillet, heat the oil over medium-low heat and cook the onion and garlic slowly, stirring frequently, until softened, but not browned, about 3 to 4 minutes. Add the beans. With the back of a wooden spoon mash a few of the beans to help thicken the mixture. Add the oregano, thyme, and chicken broth. Bring to a boil and cook, stirring, until the liquid is reduced and the beans hold their shape on a spoon. Season with salt and pepper. (Since the beans already contain sodium, more salt may not be needed.) Cool the beans in the pan. 3. Preheat oven to 350°. Spoon the filling equally into each prepared chile, packing well to reshape the chile. Place the filled chiles in a single layer, cut side up, in a rectangular baking pan. Cover with foil. 1/2 lb monterey jack cheese, Pepper Jack for more heat.Sliced to fit in chilies
1 cup flour
3 eggs, seperated.yolks from whites
3 tablespoons flour
oil, I use peanut oil (for frying)

Steps:

  • Drain chilies,Gently open and insert a slice of cheese.Dredge in flour and set aside on a plate.I salt and pepper the flour.
  • Beat egg whites to a stiff peak stage.Set aside.
  • Seperately mix egg yolks with 3 TBS flour.It will be thick.
  • Take a spoon of whites and gently fold into yolks.continue folding whites into yolks til they are combined.
  • Heat oil to about 350.
  • Dip chilies in batter and then put into hot oil.Fry on each side til golden brown.About 2 minute on each side.
  • Serve with salsa on top some refried beans and some warmed tortillas.
