TURKEY & MUSHROOM STUFFED PEPPERS



Turkey & Mushroom Stuffed Peppers image

Number Of Ingredients 15

1 small onion, chopped
1 lb ground turkey
1-1/2 lbs baby bella mushrooms
3 cups fresh spinach
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp Italian seasoning
2 tbsp olive oil
6 bell peppers
1 tbsp olive oil
Salt and ground black pepper
The stuffing can be made a day ahead and refrigerated until ready to stuff the peppers.

Steps:

  • 1Mix seasoning in a small bowl.Wash the mushrooms, remove woody stems and chop into medium-sized pieces.Add 2 tbsp olive oil to a pan and saute the onions on medium heat for about 5 minutes until translucent.Add the ground turkey and half of the seasoning mixture to the pan.Cook the turkey for about 5-6 minutes until it starts to brown, breaking up the pieces as it cooks.Add the mushrooms, remaining seasoning, and toss to combine.Reduce to medium heat, cover, and let simmer for about 3 minutes until the mushroom give up their liquid.Uncover, stir, and continue cooking to reduce the liquid (about 5 minutes).Add the spinach and stir until just wilted.
  • 2Preheat the oven to 375 degrees F.Wash the peppers and trim a little off the bottom so that they sit up without tipping over. Cut off as little as possible trying to avoid cutting a hole in the bottom of the pepper.Cut off the top to make a lid.Drizzle a little olive oil over the peppers to lightly coat the outside. Sprinkle a little salt and ground pepper on each pepper to season it inside and out. Place the peppers in a lightly oiled baking dish and stuff each pepper with the filling.Place the lids on top and cover with foil.Bake for 30 minutes covered.Remove the foil and bake for 15 minutes longer until the peppers are tender. If the tops start to brown, place the foil back over them and continue to bake until tender.

4 green bell peppers, tops removed, seeded
1 pound ground turkey
2 tablespoons olive oil
½ onion, chopped
1 cup sliced mushrooms
1 zucchini, chopped
½ red bell pepper, chopped
½ yellow bell pepper, chopped
1 cup fresh spinach
1 (14.5 ounce) can diced tomatoes, drained
1 tablespoon tomato paste
Italian seasoning to taste
garlic powder to taste
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.
  • In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.
  • Return peppers to the oven, and continue cooking 15 minutes.

12 ounces lean ground turkey
1 onion, chopped
1/2 cup whole garlic cloves, chopped
2 cups sliced mushrooms
4 cups chopped greens, such as kale or collards
2 cups water
1 cup wild rice
1 cup raw pumpkin seeds
1 teaspoon hot sauce, if desired
6 whole green or red bell peppers, halved, seeds removed

Steps:

  • Cook turkey in a skillet lightly coated with cooking spray or olive oil. Stir in chopped onion, garlic, mushrooms, and greens. Allow to steam slightly. Add 2 cups water and then stir in the rice. Cook covered 30 minutes or until rice is tender.
  • Add pumpkin seeds and hot sauce, if desired.
  • Place peppers hollow side up in a baking dish and stuff with turkey mixture. Bake, covered, for 1 hour or until peppers are tender.

1 cup white rice
14 1/2 ounces canned diced tomatoes
14 1/2 ounces tomato sauce
2 tablespoons olive oil
6 green peppers
1 medium onion
1 teaspoon salt

chicken stock or water, enough to cook rice according to its directions

Steps:

  • Wash green peppers. Carefully, cut top off. Reserve and chop usable parts. Remove seeds and discard. Spray dutch oven or casserole dish with nonstick spray and place empty peppers inside. Season with Salt and Pepper. Heat large skillet with olive oil. Brown turkey with onion and chopped green pepper tops. Add tomatoes and tomato sauce. Heat through. Add rice and stock or water. Stir and cover. Simmer until rice is done and liquid is absorbed. Remove from heat and evenly distribute rice mixture into the empty peppers. Cover with foil and bake until peppers are soft. 6 bell peppers (any color)
5 tablespoons plus 1/2 teaspoon extra-virgin olive oil
Kosher salt
1 pound king oyster mushrooms, trimmed and finely chopped
Freshly ground pepper
8 ounces ground turkey
2 carrots, diced
1 large stalk celery, diced
1 shallot, diced
3 cloves garlic, minced
1 tablespoon Italian seasoning
2 tablespoons tomato paste
1 15-ounce can diced tomatoes
1/2 cup chopped fresh parsley
2 cups cooked white rice
3/4 cup panko
1/2 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400˚F. Cut off the tops of the peppers; pull out the seeds. Drizzle the insides with 1/2 teaspoon olive oil and season with salt. Arrange cut-side down in a 9-by-13-inch baking dish. Bake until softened but not collapsed, about 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring, until browned, about 15 minutes; season with salt and pepper. Transfer the mushrooms to a bowl. Add 1 more tablespoon olive oil to the skillet. Add the turkey and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6 minutes; season with salt and pepper. Remove to the bowl with the mushrooms and wipe out the skillet.
  • Heat 1 tablespoon olive oil in the same skillet over medium heat. Add the carrots, celery and shallot; cook until softened, 4 to 5 minutes. Add the garlic, Italian seasoning and 1 teaspoon each salt and pepper; cook 1 minute. Add the tomato paste and cook, stirring, 1 minute. Stir in the tomatoes and scrape up any browned bits with a wooden spoon. Add the parsley and cook until the sauce has thickened, 5 to 6 minutes.
  • Add the rice and mushroom-turkey mixture to the skillet and stir to combine. Season with salt and pepper. Stuff the filling into the peppers, being sure to pack it in. Stand the stuffed peppers upright in the baking dish. Cover with foil, return to the oven and bake until heated through, about 20 minutes.
  • Stir together the panko, Parmesan and remaining 1 tablespoon olive oil in a small bowl. Uncover the peppers and sprinkle evenly with the panko mixture. Return to the oven and bake until starting to brown, about 10 more minutes.

Steps:

  • Mix ground turkey, mushroom-rice-onion mixture, Italian seasonings, egg white, 1/2 can of diced tomatoes and Worcestershire sauce together.
  • Stuff into pepper halves. Place peppers into a baking dish, Pour tomato sauce over the peppers and spoon remaining diced tomatoes onto each pepper. Bake covered at 350 degrees for 45 minutes. Bake uncovered for an additional 30mins or until mixture temps out at 165.
