1 1/2 pounds fresh jalapeños (or a combination of jalapeños and mini bell peppers)
14-16 ounces Mexican chorizo
12 ounces cream cheese, (softened (could be low-fat))
2 cups shredded smoked cheddar
1/4 teaspoon garlic powder
3 ounces crumbled queso fresco
1/2 cup chopped green onions

Steps:

  • Preheat the oven to 400 degrees F. Line two baking sheets with parchment paper and set aside. Place the chorizo in a skillet over medium heat. Brown the chorizo until mostly cooked, and break into small pieces with a wooden spoon. Then move the chorizo to a paper towel lined bowl to drain.
  • Cut the jalapeños lengthwise and use a spoon to scrape out the veins and seeds. Set them cut-side-up on the baking sheets. Then mix the cream cheese, smoked cheddar, and garlic powder in a medium bowl until well combined.
  • Spread 1 tablespoon of cheese filling into each jalapeño half. Press crumbled chorizo into the top of the cheese filling. Bake for 9-10 minutes until the filling has melted and the peppers are soft.
  • While the jalapeños are still warm, sprinkle the tops with crumbled queso fresco and green onions. Serve warm.

Steps:

  • Preheat oven to 450 degrees. In a small bowl, mix together cream cheese and cheddar. Season with salt and pepper. With a small spoon, fill each jalapeno half with about 1 tablespoon cheese mixture. Place peppers on a parchment-lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet halfway through.

15 jalapenos, preferably red, cut in 1/2, seeded and deveined
1 tablespoon canola oil
2 pounds mild Italian sausage, casings removed
1/4 cup minced red onion
1/4 cup minced red bell pepper
3 tablespoons minced garlic
2 cups mascarpone or cream cheese
1/4 cup grated Parmesan, plus more for garnish
Salt and pepper
1/2 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F and set a rack in the middle of the oven.
  • Place jalapenos on a sheet tray and roast for 10 minutes. Remove from the oven and let cool. Turn broiler on medium.
  • Heat the oil in a medium saute pan. Add the sausage and cook for 5 to 7 minutes. Add the onions, peppers, and garlic and cook to soften for about 5 minutes. Remove and place in a large bowl. Cool to room temperature, then add mascarpone, and Parmesan. Mix ingredients thoroughly and season with salt and pepper.
  • Place approximately 1 tablespoon of mixture into each jalapeno half, and top with 1/2 teaspoon of mozzarella cheese.
  • Place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.

Enjoy watching your tailgate buddies wipe tears off their faces after eating one of these tastefully disguised cheese-stuffed jalapenos. Originally created with the broiler in mind, these Jalepeno poppers have been enhanced by the BBQ to spice up tailgate parties and backyard mixers. These are easy to prepare in advance and store well in a cooler until ready to be BBQ'd.

Number Of Ingredients 8

1 to 2 packages cream cheese, depending on the size of your pepper, room temperature
2 to 4 cloves chopped garlic or granulated, depending on your preference (c'mon, no spicy finger food is complete without this spice)
1/4 cup finely chopped sun-dried tomatoes - a nice handful from the jar
Chopped fresh basil leaves
Pinch salt
10 to 25 jalapeno peppers (larger then average size will make them easier to stuff)
1/2 to 1 pound thinly sliced bacon (Pork Fat Rulez!)
Toothpicks (for the peppers, not your teeth silly)

Steps:

  • Preheat the grill.
  • Mix each package of cream cheese with chopped garlic, sun-dried tomatoes, and a dash of chopped basil. Add a pinch of salt. Mix until mixture is soft and manageable.
  • Slice each jalapeno lengthwise on 1 side, being careful not to cut the jalapeno in 1/2. Remove the seeds if you don't think your friends can handle the heat, otherwise leave'em and enjoy watching your friends shed a few extra tears. hehe... Depending on your pepper, you may have to slice around the stem of the pepper to create a manageable opening to squeeze the filling in.
  • Fill either a pastry bag, or your choice of tools with the filling. Use something that will allow you to sqeeze the filling into the opening of the pepper with ease. I've used a plastic frosting tool, cookie press, and even just a small spoon to squeeze the filling in. However you choose, insert a liberal amount of filling into each jalapeno. Be careful not to overfill as the filling may spurt out during cooking.
  • Wrap each pepper with 1 to 2 strips of bacon, securing the opening in the pepper. Secure the bacon with a toothpick (best to soak the toothpicks first, to prevent burning on the BBQ). This also helps the jalapenos from falling into the BBQ (you're bound to loose at least 1, oh well). Long metal or wood skewers also work well for large amounts.
  • BBQ the peppers until they lightly roasted, or until the bacon is fully cooked. Use some foil to cook on if your peppers are cooking or burning too fast on a HOT BBQ.
  • Serve 'em up and watch your friends squirm with delight!

1/4 pound cream cheese
2 tablespoons sour cream

  • Preheat oven to 375. In a small bowl, combine the grated Cheddar cheese with the cream cheese and sour cream, and use a fork to mash and combine. Add the cilantro, salt and pepper, and mix again to combine. Spoon the mixture into a quart-size plastic freezer bag, and set aside.
  • Wearing disposable latex gloves (or at any rate being very careful not to get the interiors of the jalapeños on your skin or in your eyes or nose), use a knife to split the peppers down the center, and dispose of the seeds and ribs. Rub lightly with oil, and place on a roasting pan.
  • Cut a half-inch triangle from one corner of the bag with the cheese in it, and pipe the mixture into each of the jalapeños. Gently press the cheese mixture into the peppers. Roast until the peppers have softened and the cheese has just started to bubble, approximately 15 minutes. Finish over the grill, if you like.

12 jalapeño peppers
1 block pepper jack cheese
4 eggs
2 cups flour, as needed
2 cups bread crumbs, as needed
24 toothpicks

Steps:

  • Cut the top off each jalapeño and core it, scraping out all the seeds, with the back side of a spoon.
  • Fill the jalapeños with pepper jack cheese, either melted or cubed.
  • Place the top back on the jalapeños and secure with two toothpicks inserted diagonally.
  • NOTE: Be sure each toothpick goes through both the top and the bottom of the jalapeño to secure it.
  • Dredge in flour, eggs, then breadcrumbs. For a thicker breading, double bread the jalapeños by repeating the egg and breadcrumb dredging.
  • Heat oil to 325°F (160°C).
  • Fry each jalapeño popper until golden brown (about 2-3 minutes).
  • Cool and allow extra oil to drip off on a plate lined with paper towels. Remove the toothpicks.

  • I'm using this great grill rack I bought from Sur La Table. It basically just a stand for the peppers so you dont have to slice them in half longways and lets you make a whole stuffed pepper. It also comes with a really interesting tool to gut the jalapenos.
  • pre-heat oven to 400.
  • Cut stems off all Jalapenos and gut them of seeds.
  • Cut Cheddar Cheese into 12 "sticks" that you can shove into the jalapenos.
  • Cut 6 Bacon strips in half.
  • Stuff cheese stick into jalapeno.
  • Wrap pepper with bacon and "pin" it pepper using tooth picks.
  • Place peppers on grill rack and bake for 15 minutes.

DEEP-FRIED STUFFED JALAPENOS



Deep-Fried Stuffed Jalapenos image

24 large pickled jalapenos chiles
1/4 refried beans
1/4 cup chunky peanut butter
4 ounces Monterey Jack cheese, cut into 8 (1/4 by 1-inch strips)
1/2 cup yellow cornmeal
1/2 cup unbleached all-purpose flour
1/2 teaspoon salt
2 eggs
Corn oil, for deep-frying
8 ounces sour cream, whisked until smooth and shiny, for dipping

Steps:

  • Cut a short slit in the side of each jalapeno. Carefully scrape out as many seeds as possible, but avoid tearing or enlarging the slit. Stuff each of 8 jalapenos with about 1 teaspoon of refried beans. Stuff 8 more jalapenos with about 1 teaspoon peanut butter each. (The capacity of individual chiles will vary, but they should not be so full that the slits gape open.) Insert 1 strip of cheese into each of the 8 remaining chiles. On a plate, mix together the cornmeal, flour, and salt. In a small bowl, thoroughly whisk the eggs. One at a time, dip the jalapenos into the beaten egg and then roll them in the cornmeal mixture until well coated. Let the jalapenos stand on a rack for 30 minutes to firm the coating. In a deep fryer or in a wide, deep pan fitted with a deep-fry thermometer, heat about 4 inches of corn oil (the fryer or pan should be no more than half full) to 375 degrees. Working in batches and using a slotted spoon, lower the jalapenos into the hot oil. Fry, turning the chiles gently, until they are just crisp and golden, about 4 minutes. (Overcooking the chiles may cause the fillings to boil away.) With the slotted spoon, transfer the fried jalapenos to absorbent paper. Keep the chiles warm in a 250 degree oven until all have been fried. Serve them hot or warm, accompanied by sour cream for dipping.

If you love jalapenos, a Chili Grill is the perfect gadget for you. There are so many fillings you can use for stuffing these wonderful little peppers. This cornbread filling is one of my favorites. These are totally addicting.

1 (8 1/2 ounce) box cornbread mix
1/2 cup shredded cheese (your favorite, I use cheddar)
1/2 teaspoon liquid smoke
salt or creole seasoning, for sprinkling in peppers
24 large jalapenos, tops cut off and seeds and membrane removed

Steps:

  • Preheat grill to medium.
  • Wash jalapeños and cut off tops.
  • Using end of vegetable peeler, scrape out seeds and membrane (NOTE: wear plastic gloves to protect hands if you are sensitive to hot peppers).
  • Poke a hole in the bottom of each pepper (so it can release moisture during cooking and so it won't force the cornbread filling to boil out of the top).
  • Season inside of each pepper with a little salt or creole seasoning.
  • Make cornbread mix according to directions on box adding cheese and liquid smoke.
  • Fill peppers to within 1/4-inch to top of pepper leaving that space for cornbread to bake and rise.
  • I use a pastry bag or a Zip style bag with the end cut off to fill the peppers.
  • If your peppers are small they will shrink more as they cook so stick a toothpick through the tops of them to keep them from falling through the Chili Grill® holes.
  • Place them all in the Chili Grill® holder and place on preheated grill (med heat).
  • Close grill cover and let them cook for about 30 minutes checking them halfway through.
  • (You might have to adjust the heat to low if they are browning too quickly).
  • Peppers will look shriveled and cornbread will pop up over top of peppers when done.
  • Enjoy!

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). I get many requests for this recipe, so I decided to post it here on Zaar. Its a little different from other stuffed jalapeño recipes because these are served cold. This recipe makes A LOT of appetizers.

16 ounces colby-monterey jack cheese, grated
5 ounces slivered almonds, roughly chopped
1 (5 ounce) jar bacon bits
1 1/2 cups Hellmann's mayonnaise
5 (10 ounce) cans whole jalapeno peppers (I use Faro brand)

Steps:

  • Place jalapeños in a 13 x 9 glass dish or large bowl. Cover with ice and let chill 2 hours or overnight.
  • Cut peppers in half lengthwise. Scrape out seeds.
  • Combine all remaining ingredients, stuff pepper halves.
  • Store in a airtight container in the refrigerator until ready to serve.
  • **Note: You may need an extra can of jalapeños. Sometimes I use 5 cans, sometimes 6. It depends on how big the peppers are in the brand that you use.

This recipe was given to me by a dear friend and we love these things. They are great appetizers and it seems you can never have too many. The stuffing will be good for about a week before stuffing the peppers. It really gets better as it sits. I use Faro brand mild jalapenos, but use whatever your taste buds can stand.

2 cups cheddar cheese, finely shredded
1/2 lb bacon, cooked
1/2 bunch green onion, chopped
2 ounces almonds, slivered
1/2 cup mayonnaise
2 (12 ounce) cans mild jalapenos

Steps:

  • Fry or nuke bacon until crisp and drain on paper towels.
  • Chop bacon, green onions and almonds in a food processor.
  • Pour into a bowl with cheese and mix. Stir in just enough mayonnaise to bind.
  • The 1/2 cup measurement is just a guess as I do not measure it.
  • Stuff the peppers the day you plan to serve them.

1 cup shredded reduced-fat cheddar cheese
1/4 cup fat-free mayonnaise
1 garlic clove, minced
1/2 teaspoon dried oregano
18 jalapeno peppers (about 3 inches long), halved lengthwise and seeded
2 large egg whites
1 tablespoon fat-free milk
1-1/2 cups crushed cornflakes

Steps:

  • In a small bowl, combine the first five ingredients; beat until blended. Spoon into pepper halves, packing tightly. , In a shallow bowl, whisk egg whites and milk. Place cornflakes in another shallow bowl. Dip peppers into egg mixture, then coat with cornflakes. Place on a baking sheet coated with cooking spray. Bake at 350° for 30 minutes or until browned.

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.
  • In a bowl, mix the sausage, cream cheese, and Parmesan cheese. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in baking dishes.

8 jalapeno peppers
4 ounces cream cheese, softened
1/2 cup finely shredded colby-monterey jack cheese
1/4 cup real bacon piece

Steps:

  • Preheat oven to 350 degrees.
  • Mix cream cheese, cheese and bacon bits until blended well.
  • Cut peppers in half lengthwise and remove seeds and membranes (wear gloves to prevent irritating your skin).
  • Steam peppers in boiling water for a few minutes just to soften them a bit (can omit this step if you like a crunchier pepper).
  • Place peppers on foil-lined baking sheet and stuff each half with cream cheese mixture.
  • Bake for approximately 10 to 15 minutes or until cheese is just starting to bubble.
  • Enjoy!
