SUNNY'S EASY AND CHEESY STUFFED SLIDER BAKE-TWO WAYS
Steps:
- Preheat the oven or a grill for indirect cooking to 350 degrees F.
- Prepare the rolls: Place the rolls on a nonstick-foil-lined baking sheet. With a serrated paring knife, carve out a circle on the top of each, cutting down about 1 inch deep. (You need to keep the bottom sturdy, so you don't want to cut all the way to the bottom. Get your fingers in there and pull out the plug of bread, leaving room for your filling. Save the excess bread for breadcrumbs!)
- For the buffalo chicken sliders: Mix the chicken, blue cheese, 1 1/2 cups wing sauce or to taste and 1/2 cup of the shredded Italian cheese blend in a medium bowl. Set aside.
- For the Italian meatball sub sliders: Assemble 12 sliders by spooning into the cavity of each: 1 tablespoon marinara sauce followed by 1 tablespoon mozzarella, then a meatball, then a teaspoon of marinara. Sprinkle the tops of the meatball sliders with the Parmesan.
- For the buffalo chicken sliders: Assemble the remaining 12 sliders by stuffing 2 to 3 tablespoons of the buffalo chicken mixture into each cavity. Top with the remaining shredded Italian cheese blend.
- Bake the sliders in the oven or over indirect heat until the cheese is melted and the tops are golden, about 25 minutes.
STUFFED SLIDERS YOUR WAY
Treat this recipe as a basic template from which to have a blast mixing and matching different meats with different cheeses. The Parmesan is a must and not an option to switch out; it's the magic ingredient that will make the meat more savory and any cheese you stuff in your slider taste cheesier. The recipe can be halved or doubled easily, so if there are a lot of kids in your crowd, you might want to cut back on the number you make. If a bunch of your drinking buddies are on their way over, however, you'll likely want to do 1 1/2 times the recipe, or even double it. We've given you suggestions for toppers and meat-and-cheese combinations, but those are just ideas to get your imagination going. If the weather is cooperative, fire up your grill, but if you are grill-less, the broiler does a fine job. Any which way you do it, you can't help but have fun!

- Gently combine meat, eggs, cheese, parsley, garlic, 1 teaspoon salt and 1/2 teaspoon pepper with your hands. (Do not overmix).
- Form scant 1/4 cupfuls of meat mixture into about 30 meatballs. Push a cheese cube into center of each ball and encase meat around cheese, then slightly flatten each ball to a 2-inch diameter.
- Broiler directions:
- Preheat broiler. Put half of sliders on an oiled rack of a broiler pan and broil, turning over once, until just cooked through (no longer pink), 4 to 8 minutes total. Repeat with remaining sliders.
- Grill directions:
- For easy entertaining, go with a gas grill. Preheat all burners on high, covered, 10 minutes, then adjust heat to medium-high. Grill sliders, in batches if necessary, turning once, until just cooked through, 4 to 8 minutes total.
- Make sliders with toppings and rolls.
MEATBALL-STUFFED GARLIC BREAD SLIDERS
We're getting close to the Super Bowl, and it's not about who wins the trophy, but rather who wins the snack table. If you show up with these super fun sliders, that will be you. The real secret to these beauties is placing the meatball in through the top of the roll, versus splitting and stuffing in the traditional manner. Maybe it's the symmetry, or center of gravity, that makes these just feel right in your hand. If you're short on time, using pre-made meatballs will do.

- Preheat the oven to 400 degrees F (200 degrees C).
- Heat 1 tablespoon olive oil in a saucepan over medium heat. Add onion and 2 cloves garlic; cook and stir until onion is soft, about 5 minutes.
- Place beef in a large bowl. Add onion-garlic mixture, parsley, egg, bread crumbs, and 1 large handful of fontina cheese, reserving the rest for topping. Season with salt, pepper, and cayenne. Mix by hand until just combined. Scoop meat mixture into 24 mini muffin cups; meatballs need not be perfectly round.
- Bake in the preheated oven until no longer pink in the centers, about 12 minutes. Leave oven on. Let meatballs cool briefly while you make the garlic butter.
- Melt butter in a saucepan over medium heat. Add remaining minced garlic once butter starts to bubble; stir, then immediately remove from heat. Stir well and set aside.
- Line a rimmed baking sheet with foil; coat foil with remaining olive oil. Transfer rolls, still attached, to the baking sheet. Cut a hole in the top of each roll, about 2/3 of the way down. Brush garlic butter over the insides and outsides of the rolls.
- Bake until golden brown, about 8 minutes. Pour about 1 tablespoon tomato sauce into each hole. Stuff meatballs into the holes. Top each roll with a spoonful of tomato sauce and remaining fontina cheese. Sprinkle Parmesan cheese on top.
- Continue baking until cheese is melted, 12 to 15 minutes. Garnish with more parsley. Let rolls sit for 5 to 10 minutes to firm up; transfer to a serving platter.

- Mix together the beef, salt, salt and pepper. Shape into 8-2 ounce balls.
- Fill each ball with a cube of cheddar cheese.
- Shape each burger ball into a small slider burger shape.
- At this point you can freeze in a resealable freezer proof bag or cook.
- I like to cook in the broiler for a few minutes to the desired doneness as the sliders are so small on the grill grates. You can also cook in a toaster oven if you are doing just a few as a quick after school snack.
- My kid likes to eat these without bread and dipped in ketchup with a side of dill pickles. You can use hot dog rolls cut into pieces to make mini cheeseburgers.

STUFFED JALAPENO SLIDERS
Bold and adorable, these stuffed jalapenos get sliced into rings to become mini sliders!

Steps:
- Heat oil in a skillet over medium heat. Add onion; cook and stir until soft, about 5 minutes. Add beef; cook, stirring to break into very small pieces, until browned, about 5 minutes. Drain any excess grease. Stir in 2 tablespoons water and taco seasoning; cook until water evaporates, about 5 minutes.
- Let beef mixture cool completely, about 10 minutes. Stir in Chihuahua cheese.
- Preheat oven to 350 degrees F (175 degrees C).
- Cut tops off jalapeno peppers and scoop out seeds and ribs. Stuff with beef mixture, using the thick end of a chopstick to pack in mixture. Stack upright against the edge of a casserole dish.
- Bake in the preheated oven until jalapeno peppers are soft, about 45 minutes.
- Refrigerate jalapeno peppers until stuffing firms up, 1 to 2 hours.
- Combine 1/4 cup water, sugar, and yeast in a small bowl. Let stand until foamy, about 5 minutes.
- Combine flour, 1 egg, milk, and butter in a large bowl. Pour in yeast mixture; mix until well combined. Turn dough onto a lightly floured surface and knead until mostly smooth but slightly sticky, about 5 minutes.
- Form dough into a ball and place in a lightly greased bowl. Cover with a towel and let rise, about 20 minutes.
- Line a baking sheet with parchment paper. Turn dough out onto a floured surface; push down to knock out air. Form into 1-inch buns and arrange 1 inch apart on the baking sheet. Cover with the towel and let rise until puffy, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C). Brush tops of buns with beaten egg.
- Bake buns in the preheated oven until tops are golden brown, 6 to 7 minutes. Transfer to a cooling rack and let cool, about 10 minutes.
- Reduce oven temperature to 200 degrees F (95 degrees C).
- Slice cold jalapeno peppers into 1/4-inch thick rings. Cut buns in half. Sandwich jalapeno pepper rings in the buns and secure with a toothpick. Arrange sliders in a casserole dish. Cover with aluminum foil.
- Bake sliders in the preheated oven until warmed through, about 10 minutes.
