1/2 cup creamy peanut butter
2 tablespoons butter, softened
1/2 cup confectioners' sugar
3/4 cup graham cracker crumbs
1 ounce semisweet chocolate
1/3 cup sliced almonds, toasted

Steps:

  • In a small bowl, cream the peanut butter, butter and confectioners' sugar until smooth. Stir in crumbs. , Shape a teaspoonful of dough into 1-1/2-in. ovals; place on a waxed paper-lined baking sheet. Place chocolate in a small microwave-safe bowl; microwave on high for 1 minute or until melted. Let stand for 5 minutes. , Transfer melted chocolate to a resealable plastic bag; cut a very small hole in corner in bag. Pipe three stripes on each bee. Insert two almonds into each bee for wings. Use a toothpick to poke holes for eyes. Store in the refrigerator.

2 1/3 cups vanilla protein powder
1 ounce unsweetened chocolate square
1/2 cup butter
4 ounces cream cheese
1 ounce chopped walnuts
1 teaspoon vanilla extract
1 teaspoon natural-style peanut butter or 1 teaspoon no-sugar-added peanut butter
1/4 cup Splenda granular, sugar substitute

Steps:

  • Melt butter, cream cheese, peanut butter, and chocolate. Mix well.
  • Add splenda and vanilla, mix well again.
  • Now add nuts and portein powder and mix. Mix well so that the powder dissolves into the mixture.
  • Place in baking pan, flatten and refrigerate, a rectangle casserole dish works well here.
  • Cut into 8 bars.

Recipe is from Sunrise Beach is Still Cooking, Cooking from Texas Hills and Lakes compiled by the Ladies Auxiliary of Sunrise Beach Volunteer Fire Department and credited to Nancy Brown. My kids loved these easy bars! The young one calls them honey brownies. You can't taste the mayo in the icing, which is thin and sinks into the hot bars giving them a glazed appearance.

1 cup sugar
1 teaspoon cinnamon
3/4 cup oil
1/4 cup honey
1 egg, well beaten
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 cup chopped nuts
1 cup powdered sugar
2 tablespoons mayonnaise (Hellmann's)
2 tablespoons water
1/2 teaspoon vanilla

Steps:

  • Mix flour, sugar, cinnamon, salt, and baking soda. Add oil, honey, egg, vanilla, and nuts. Dough will be stiff.
  • Press into a 10x15 inch jelly roll pan. Bake at 350 degrees for 18 minutes.
  • Combine icing ingedients and pour over bars immediately after removing from oven. Cut into squares.

½ cup low-calorie natural sweetener (such as Swerve®)
1 ½ teaspoons ground cinnamon
1 ¼ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 large egg, at room temperature
⅓ cup canola oil
¼ cup unsweetened applesauce
¼ cup honey
1 cup chopped nuts
¾ cup powdered sugar substitute (such as Swerve®)
2 tablespoons unsalted butter, melted
2 tablespoons honey
1 teaspoon almond milk
1 teaspoon vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish.
  • Combine flour, sweetener, cinnamon, baking powder, baking soda, and salt in a large bowl; mix until well combined.
  • Whisk together egg, oil, applesauce, and honey in a second bowl until well combined. Stir into the dry ingredients. Fold in nuts. Transfer batter into the prepared baking dish and smooth out the surface.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 22 minutes. Remove from oven and allow to cool.
  • For the icing, combine powdered sugar substitute, butter, honey, almond milk, vanilla, and cinnamon in a bowl. Spread or drizzle icing onto the cooled bars.

For this recipe I substituted fresh local lavender honey instead of store bought. Use a combination of nuts such as: almonds, Brazil nuts, cashews, hazelnuts/filberts, macadamia nuts, peanuts, pecans, pistachios, walnuts, pumpkin seeds, etc. Compliments of the Sue Bee Honey website.

3/4 cup cold butter
2 1/3 cups unbleached white flour
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg, lightly beaten
2/3 cup honey (flavor of choice)
1/2 cup packed brown sugar
1/4 teaspoon salt
6 tablespoons butter, cubed
2 tablespoons heavy whipping cream
4 cups nuts, shelled and toasted, of your choice (read intro)

Steps:

  • CRUST: Line a 13x9x2 inch aluminum baking pan with parchment paper or foil and grease lightly with butter.
  • In a mixing bowl combine the flour, sugar, baking powder and salt. Cut in butter using a pastry blender until mixture resembles coarse crumbs. Stir in egg. Note: the mixture will be dry. Press firmly into prepared pan.
  • Bake at 350 degrees for about 20 minutes or until edges are golden brown. Set aside to cool on wire rack.
  • TOPPING: Bring honey, brown sugar and salt to a boil in a large heavy saucepan over medium heat. Stir until brown sugar is dissolved. Boil for 2 minutes *without* stirring. BE CAREFUL NOT TO BURN YOURSELF during this process!
  • Add butter and whipping cream to honey mixture. Bring to boil; cook and stir 1 minute. Be careful not to scorch!
  • Remove pan from heat and stir in the nuts. Spread mixture over prepared crust. Bake at 350 degrees for about 20 minutes or until top is bubbly.
  • Remove from oven and cool completely on wire rack. Use the foil or parchment paper to lift the mixture out of the pan.
  • Cut into bars.
