KETO 'SUGAR-FREE' SWEETENED CONDENSED MILK
Steps:
- Add ingredients to a large based saucepan and heat to boiling watching it carefully.
- As soon as it boils turn to low to simmer for 20 to 25 minutes until it is reduced by half, whisking every couple of minutes.
- Allulose is very sensitive to browning so you do need to watch the heat so it doesn't caramelize into a dulce de luce (which is lovely but another recipe!)
- It should be a light yellow, off white, kind of but not quite tan like colour. The darker the colour the more caramelized it has become.
- No matter what colour yours becomes as it simmers, it will be delicious. Do not fret. It's ok if it's still runny as it will thicken further as it cools.
- If not using right away, cool and store in airtight jar in fridge. It should last as long as your cream would have and will soften if re-warmed.

- Heat oven to 350 degrees F.
- Cook sugar in heavy skillet over medium-low heat, stirring constantly until melted and caramel-colored. Carefully pour into 8 (6 oz.) ungreased custard cups, tilting to coat bottom completely.
- Beat eggs in medium bowl; stir in water, sweetened condensed milk, vanilla and salt. Pour into prepared custard cups; set cups in larger shallow pan. Fill larger pan with 1 inch of hot water.
- Bake 25 minutes or until knife inserted near center comes out clean. Move cups from larger pan to a wire rack; cool 1 hour. Chill several hours or overnight.
- Serve by loosening side of flan with knife; invert onto individual serving plates with rim. Top with Sugar Garnish, if desired, or garnish as desired.
- Sugar Garnish: Fill medium metal bowl half-full of ice. Combine sugar with water in medium saucepan; stir. Cover; bring to a boil. Cook over high heat 5 to 6 minutes or until light brown in color. Immediately put pan in ice for 1 minute. Carefully drizzle sugar decoratively over foil lined cookie sheet. Cool. To serve, peel from foil.

- Cover and microwave on HIGH (100% power) for 45 to 60 seconds or until mixture is hot but not boiling.

- In large bowl, with mixer on low speed, beat sweetened condensed milk, butter, eggs and vanilla until combined. Beat at medium speed for 1 minute, until smooth. Add flour mixture and beat on low speed until combined. (If using portable mixer, use wooden spoon to stir in last portion of flour mixture.)
- Divide dough into thirds. Wrap and chill dough about 2 hours or until easy to handle.
- Preheat oven to 350 degrees F. On lightly floured surface, roll out dough, one portion at a time, to 1/8-inch thickness; cut with floured cookie cutters. Reroll as necessary to use all dough. Place 1 inch apart on ungreased baking sheets. Sprinkle with colored sugar (optional).
- Bake 9 to 11 minutes or until very lightly browned around the edges (do not overbake). Cool. Glaze and decorate as desired. Store loosely covered at room temperature.
- Confectioners' Sugar Glaze (optional): Combine confectioners' sugar and vanilla extract, almond extract or lemon extract. Stir in enough milk to make glaze consistency. Tint with food coloring (optional).
