Nothing is better on pancakes, waffles or French toast than maple syrup. The only problem is Maple Syrup is almost pure sugar. Here's a recipe we came up with in the Steviva Brands lab that is so close to maple syrup we dare you to tell the difference. Plus this is so easy to me. Enjoy!

2 tsp Maple Extract
2 cups water
0.50 cup Fructevia, Steviva Blend (or a 1/8 teaspoons of SteviaSweet)
1 tsp Guar Gum or Xanthan Gum (or 1/2 of each)

Steps:

  • Bring two cups of water to a boil in a medium or small sauce pan.
  • Add to the boiling water two tablespoons of maple extract.
  • Add the Fructevia, Steviva Blend or a 1/8 teaspoons of SteviaSweet and reduce heat to a simmer.
  • Slowly add the Guar Gum or Xanthan Gum and whisk until fully dissolved.
  • Reduce heat and let cool. Enjoy!

1 cup Besti Powdered Monk Fruit Allulose Blend
1 1/2 tbsp Maple extract
1/2 tsp Xanthan gum

Steps:

  • Whisk together the water, Besti, and maple extract in a small saucepan.
  • Bring the mixture to a gentle boil. Simmer for about 5 minutes, stirring occasionally, until the sweetener dissolves.
  • Pour the liquid into a medium bowl. Sprinkle half of the xanthan gum on top (don't dump, just sprinkle lightly and evenly). Whisk immediately, until no lumps remain. Repeat with the remaining xantham gum.
  • Wait a few minutes to allow the syrup to thicken further. If it's still thinner than you'd like, add a little more xanthan gum, just a tiny bit (1/16 teaspoon) at a time and immediately whisk again.

I have not tried this recipe. I'm posting it for safe keeping. I got this recipe from Big Oven. NOTE: This recipe seems to work best with sucralose sweeteners. I didn't have as much success with the Pink (Sweet N Low) or Blue (Equal) products. Beyond the obvious differences in proportions, the other products didn't give me a syrup-like consistancy and the flavors weren't as "clean". While I used Splenda, there are now generic or house brand sucralose sweeteners that work as well. Don't, however, confuse *Splenda for Baking* with bulk Splenda. The baking and brown sugar versions of the Splenda product are 50% sucrose (sugar). I will have to assume that any generic and house brand baking products will be similar in content. It's important to read the product lables to know what you're dealing with. The version with maltodextrin and sucralose is what is called for in this recipe. The versions that also contain sucrose aren't suitable for this particular purpose. However, they are great for baking and other recipes that require some sugar to make the dish come out properly.

1 cup sucralose artificial sweetener (Splenda or other brand)
1 cup boiling water

Steps:

  • Dissolve Splenda in water and allow to cool. Strain through a coffee filter to remove sediment. Use wherever a recipe calls for simple syrup.
  • VARIATIONS: You can flavor this syrup for other uses.
  • Ginger syrup: Simmer finely minced fresh ginger in syrup for about 40 minutes. Strain and cool.
  • Orange (or Lemon) syrup: Add the zest of one orange (or large lemon) and about a tablespoon of juice to 1/2 cup of syrup and simmer for about 40 minutes. Strain and cool.
  • Spice syrup: Stick cinnamon (crushed) simmered with a drop of red food coloring gives you a delightful cinnamon syrup. Other sweet spices such as nutmeg, clove, or allspice will also yield interesting flavors.
  • Table syrup: Maple flavoring with a bit of real maple syrup isn't bad on waffles. Adding 2 tablespoons to dark (blackstrap) molasses to about 1/2 cup of simple syrup isn't bad either if you like cane syrup on your hotcakes.
  • Chocolate syrup: Add cocoa and vanilla to taste. Try this version with some added cinnamon for a Mexican chocolate version.

3/4 cup walnut halves
1/3 cup walnut halves
1 1/2 cups cake flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup buttermilk
3 tablespoons canola oil
1 tablespoon vanilla extract
2 large eggs, at room temperature
2 large egg whites, at room temperature
1 1/4 cups Splenda granular (low calorie sweetener)
5/8 cup non-fat powdered milk
1 tablespoon water
1 teaspoon vanilla extract
1 teaspoon unflavored gelatin
2 large egg whites
1/2 cup log cabin sugar-free maple syrup
1/4 teaspoon cream of tartar
1 pinch salt
1/3 cup low-fat whipping cream

Steps:

  • Preheat oven to 325°F
  • Toast nuts until fragrant, approximately 4-6 minutes. Let cool Combine nuts, flour, baking soda, baking powder and salt in a food processor or blender. Process until nuts are finely ground. In a medium bowl, combine buttermilk, oil and vanilla. Set aside. In a large bowl beat eggs, egg whites, SPLENDA and non-fat dry milk with an electric mixer on high speed, until mixture is thick and pale, approximately 3-5 minutes. Fold a portion of the dry ingredients into the egg mixture. Then fold a portion of the wet ingredients into the egg mixture. Continue process until both the dry and wet ingredients are combined with the egg mixture. Start and end with the dry ingredients. Bake in a greased and floured 2x9" pan for 25 minutes.
  • Frosting Directions.
  • In a small bowl, combine water and vanilla. Sprinkle with gelatin and let.
  • soften for 1 minute. In a double boiler bring about 1" of water to a slight simmer. In a heatproof mixing bowl combine egg whites, sugar free Maple Syrup, cream of tartar and salt. Set bowl over simmering water and beat with an electric mixer on low speed moving beaters constantly, until and instant thermometer reads 140oF. This should take approximately 3-5 minutes. Increase mixer speed to high and continue beating for 3 ½ minutes. Remove bowl from heat. Add gelatin mixture and continue to beat until cooled to room temperature, approximately 4-5 minutes. In a chilled bowl, beat cream with electric mixer until firm peaks form. Fold into meringue with rubber spatula. Cake Assembling and Decorating (optional).
  • Place 1 cake layer, top-side down, on a cake plate. Spread 1 cup frosting on cake. Top with second cake layer top-side up. Spread remaining frosting over top and sides. Cover loosely and refrigerate for at least 1 hour and up to 8 hours No more than 1 hour before serving, place a large shallow bowl of water beside stove. Pour a ½ cup of sugar free Log Cabin Syrup into a small saucepan and bring to a boil. Reduce heat to low and boil gently, without stirring, until a drop of syrup immersed in cold water forms a thread between fingers, approximately 5-10 minutes. Immediately dip base of saucepan in water to stop cooking and cool syrup quickly. When syrup has cooled and thickened slightly, use a spoon to drizzle syrup over cake. If syrup has hardened re-warm over low heat. Chop 1/3 cup nuts. Using a flat metal spatula or pastry scraper, press nuts around bottom half of cake.
