4 ounces cream cheese, softened
2 tablespoons Splenda sugar substitute
2 cups cold milk
8 ounces sugar-free whipped topping, thawed, divided
1 sugar-free chocolate wafer pie crust
2 (4 ounce) packages sugar-free chocolate instant pudding
1 chocolate bar

Steps:

  • For the first layer: Beat cream cheese, and splenda in medium bowl until blended and smooth. You can add a splash of milk if it won't smooth out.
  • Stir in half the whipped topping. Mix until smooth. Spread this layer on the bottom of the crust.
  • For the second layer: Beat pudding mixes and milk with whisk until smooth, approximately 2 minutes. The pudding will be thick. Stir in the remaining whipped topping and spread over the previous layer.
  • Grate chocolate shavings over pie. Refrigerate for 4 hours or until firm.

2 cups almond meal
2 tablespoons coconut oil
3 tablespoons ghee
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup Splenda granular (sugar substitute)
1 pint heavy whipping cream
4 ounces cream cheese
2 (1 ounce) boxes sugar-free instant chocolate pudding mix
2 tablespoons water

Steps:

  • Crust.
  • Melt coconut oil or butter, add sweetener, vanilla and butter extract, salt and almond meal in a bowl. Take mixture and press into a deep dish pie pan. Bake at 350* for about 15 to 20 minutes. Cool crust.
  • Filling.
  • Whip heavy whipping cream till it forms a peak (about 5 minutes). Add brick of cream cheese that is at room temperature (really clumpy if added cold). **Can add some Truvia if you want a little more sweetness, Joe prefers no added sweetness**. Add both boxes of pudding mix. Mixture will be very thick, add water as needed to make mixture smooth not thick. Pour into cooled crust and refrigerate for about 1 hour.
  • I have substituted sugar free pudding with sugar free lime jello and fresh squeezed limes to make Key Lime Pie!

4 ounces reduced-fat cream cheese, softened (Neufchatel)
1 (1 1/2 ounce) package sugar-free instant chocolate pudding mix
2 cups skim milk
1/4 cup pecans, chopped and toasted

Steps:

  • In mixing bowl, beat cream cheese with electric mixer until very smooth.
  • In a separate bowl, combine pudding mix and milk and mix well.
  • Add pudding to cream cheese and gently stir or swirl to mix.
  • Fold in pecans.
  • Spoon mixture into 1 (6 ounce) graham cracker crust.
  • Cover and chill before serving.

1 box 2.1 oz. Sugar free instant chocolate Pudding
1/4 cup Unsweetened cocoa Powder
2 cups Milk
1 quart Heavy Whipping Cream or 2 Pints
2 cups Splenda
2 teaspoons Vanilla Extract
1 Frozen Pie Crust

Steps:

  • Cook frozen pie crust according to directions on package. Meanwhile, Mix chocolate pudding, unsweetened cocoa powder, and milk in a big mixing bowl. Let stand while you Whip cream splenda and vanilla in another large mixing bowl untill mixture hold it's shape when you remove the beaters. Mix at least half the whipped cream into the pudding mixture. Remove pie crust from oven when it is slightly browned or golden brown, your preference. Let pie crust cool. Put chocolate moose pudding mixture into cooled pie shell. Top with remaining whip cream. Any extra moose pudding mixture and cream can be made into parfaits. Refrigerate pies, and any extra pudding and cream for at least two hours, or put in freezer for 30 minutes. Enjoy!
