Sugar Free White Chocolate Bars image

It's so easy to make your own low carb homemade white chocolate. It's an indulgent treat with only 1 net carb per serving.

2.5 ounces cocoa butter (food grade)
3 tablespoons Swerve Confectioners Powdered Sweetener
1 tablespoon coconut milk powder (or whey protein powder)
1 teaspoon sunflower lecithin (optional)
1/8 teaspoon stevia concentrated powder
1/8 teaspoon monk fruit powder (or extra stevia)
1/2 teaspoon vanilla extract (look for one with no added sugar)

Steps:

  • Melt together cocoa butter, Swerve, coconut milk powder, lecithin, stevia, and monk fruit in microwave, double boiler, or chocolate melter.
  • Remove from heat and stir in vanilla.
  • Pour into molds
  • Refrigerate (or freeze) until solid. Remove from mold.
  • Store covered in refrigerator.

  • Cut the cocoa butter into small pieces, no larger than 1/2 in (1.3 cm) in any direction. This important to prevent overheating the outside when melting.
  • Place the cocoa butter, coconut oil, and sunflower lecithin into a small saucepan. Melt on the stove over VERY low heat. Do not allow it to simmer or boil. (Even better, use a double boiler if you can.) Remove from heat once melted.
  • Stir in the sweetener, until dissolved. Stir in the cream powder, vanilla extract, and sea salt, until smooth.
  • Pour into chocolate molds (or onto a small parchment lined pan). Refrigerate until hardened. Keep refrigerated for best results.

  • Start the double proofing method. In a deep pot or large saucepan, fill with 2-3 inches of water. Place a heat proof bowl or plate on top, ensuring the bottom isn't touching the water. Turn the heat to low, and bring the water to a gentle simmer.
  • Once it beings to simmer, add the cacao butter and let it melt. Once it begins to melt, stir it gently until smooth. Add the allulose and coconut milk powder mixture, and mix until combined. Remove from the heat.
  • Transfer the mixture into the high speed blender. Pulse for 1-2 minutes, or until completely smooth. If using the coconut oil, add it now and blend once more.
