Apple Slice Squares image

My mom has been making these since I was a kid, and they are the hit of every family get-together, from my brothers and sisters all the way down to the grandchildren; it is even spreading to my in-laws. Enjoy this family-favorite.

2 cups all-purpose flour
½ teaspoon salt
⅔ cup shortening
¼ cup water
2 eggs
1 tablespoon lemon juice
6 apples - peeled, cored, and cut into 1/2-inch thick slices, or more to taste
1 cup white sugar
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
  • Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.
  • Place apple slices in a large bowl; add sugar, 3 tablespoons flour, and cinnamon. Toss apples to coat; spread over crust. Cover apple filling with remaining crust, piecing together any scraps to cover any holes. Cut several slits into top crust for ventilation while cooking.
  • Bake in the preheated oven until edges are browned and crisp, 45 minutes to 1 hour. Cool to room temperature before cutting into squares, about 30 minutes.

2-1/2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter, cubed
1 egg, separated
3 to 4 tablespoons 2% milk
1 cup crushed cornflakes
9 cups thinly sliced peeled tart apples (about 10 medium)
1 cup plus 2 tablespoons sugar, divided
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. Gradually add to the flour mixture, tossing with a fork until dough forms a ball. , Preheat oven to 350°. Divide dough in half. Roll one portion into a thin 15x10-in. rectangle. Transfer to the bottom of an ungreased 15x10x1-in. baking pan. Sprinkle with cornflakes. , In a large bowl, combine apples, 1 cup sugar, 1-1/2 teaspoons cinnamon and nutmeg; toss to coat. Spoon over crust. , Roll remaining dough into a thin 15x10-in. rectangle; place over apple filling. Beat egg white; brush over pastry. Combine remaining sugar and cinnamon; sprinkle over the top. Bake 45-50 minutes or until golden brown. , For glaze, combine confectioners' sugar, vanilla and enough milk to achieve a drizzling consistency. Drizzle over warm pastry. Cool completely on a wire rack. Cut into squares.

My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
  • Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

This is the only cake my mom ever baked - she was the daughter of a confectioner and taught me nearly everything about making cakes and tarts, but she never baked anything except this cake, because it was my favorite apple cake. She also made it with plums, but you can use any fruit you like. This cake maybe is not what you expect a cake to be - in Germany it is called a baking tray - cake which means that you spread the batter onto a baking tray which makes a flat cake, more like what you would call a "bar", I suppose, with a crisp bottom.

1 lb flour
8 tablespoons sugar
1 pinch salt
1 egg
1/2 lb margarine, non hydrogenated
1 tablespoon baking powder
3 lbs apples or 4 lbs plums
vanilla (optional)
cinnamon (optional)

Steps:

  • Peel, core and slice apples or wash, pit and half plums.
  • Preheat oven to 350 ° F.
  • Keep 1 tablespoon of the margarine and two tablespoons sugar.
  • Knead flour, the rest of the margarine and sugar, egg, salt and baking powder until you get a soft dough.
  • Spread 2/3 of the dough onto a well greased or paper lined baking tray.
  • Layer with sliced apples or halved plums (they have to overlap).
  • Mix remaining 1/3 of the dough with 2 tablespoons sugar and 1 tablespoon margarine, add vanilla and / or cinnamon to taste and sprinkle over apples.
  • Bake at 350 ° for about 35 minutes.
  • Attention: This cake easily burns - so start watching it closely after half the baking time!
  • Slice while still warm and let cool completely on a wire rack. Or serve warm with vanilla ice cream!

  • Whisk whole-wheat flour, all-purpose flour, 2 tablespoons sugar, salt and baking powder in a large bowl. Cut butter into small pieces and quickly rub them into the dry ingredients with your fingers until smaller but still visible. Add oil and toss with a fork to combine. Whisk water and egg yolk in a small bowl. Add to the flour mixture and stir until it begins to come together. Knead the dough with your hands in the bowl a few times until it forms a ball. Divide the dough in half and shape into 5-inch disks. Wrap each in plastic and refrigerate for at least 1 hour.
  • Preheat oven to 400°F. Coat a 9-by-13-inch baking pan with cooking spray and line the bottom and sides with parchment paper.
  • Roll one portion of dough between sheets of parchment or wax paper into a 9-by-13-inch rectangle. Peel off the top sheet and invert the dough into the prepared pan. Peel off the remaining paper. Trim the dough so it covers just the bottom of the pan. Spread the apple filling evenly over the dough. Using the parchment or wax paper, roll out the remaining dough, invert it over the filling and trim the edges so it just covers the filling. Whisk the egg white in a bowl until frothy and evenly brush over the top crust. Lightly sprinkle the crust with additional sugar, if desired.
