GRILLED BABY CARROTS

Steps:
- Place all ingredients inside a large, plastic, zipper-top bag or large mixing bowl.
- Toss them well to coat the carrots with oil and spices.
- Place a piece of aluminum foil on the BBQ grill and place your carrots on that. Spread them out so that they are in a single layer. (You can also use a barbecue skillet or cast-iron skillet). Close the lid on the grill and allow to cook for about 30 minutes, stirring occasionally with BBQ tongs. Cook until they are soft and easily pierced with a fork.

- Cover and grill vegetables over medium heat 10 minutes. Add onion to oil mixture in bowl; toss to coat. Add onion to grill basket. Cover and grill 8 to 10 minutes longer, shaking basket or stirring vegetables occasionally, until all vegetables are crisp-tender.

- In a large saucepan, cook sliced carrots in boiling water until tender. Drain and set aside.
- In the same saucepan, combine pineapple juice, brown sugar, butter, cornstarch, salt, cinnamon, and allspice. Bring to a boil, reduce the heat, and simmer, uncovered, for 5 minutes. Remove from heat.
- Add the cooked, drained carrots and chopped pecans to hot sauce mixture; stir in and heat through.

- In a large skillet, over medium heat, add nuts and heat for 1 to 2 minutes or until fragrant. Toss pan a few times to turn the nuts. Watch closely as nuts can easily burn. Once fragrant, turn off heat, and transfer pecans to cutting board. Set aside to cool.
- In the hot skillet, add the ginger, cinnamon, salt and pepper. Shake pan to spread the spices and once fragrant, add the carrots and stir to coat. The residual heat from the pan will awaken the spices and bring out their optimal flavor. You need to add the carrots the second you smell the spices to prevent the spices from burning.
- Add the juice, butter and sugar and stir. Turn the heat back on to high and bring to a boil. Cover the skillet and cook for 5 minutes.
