- 1. Preheat oven to 425°F. 2. Wash and slice potatoes (you can peel them first if you like), toss in olive oil, lay out on a foil-lined baking sheet with cooking spray and sprinkle with equal parts salt and sumac, and half as much smoked paprika (make sure to sprinkle both sides). If you're new to sumac, you might want to start off light on the seasoning, but I like to be pretty generous with it. 3. Roast for 30-40 minutes, checking and turning every so often to prevent burning, until the potatoes get a nice dark, brown, and crispy exterior. Pop a few in your mouth. You deserve a snack at this point.

- Line a baking sheet with parchment paper.
- Combine potatoes and olive oil in a large bowl and mix well. Sprinkle potatoes with za'atar, salt, and pepper; toss to coat. Transfer potatoes to the prepared baking sheet.
- Set baking sheet on the lowest rack of a cold oven and heat the oven to 425 degrees F (220 degrees C). Roast until potatoes are golden brown and tender, 30 to 35 minutes, stirring halfway through.

- Fill a large pot with water (enough to cover potatoes) and bring to a boil. Add 2 tablespoons of kosher salt and the chopped potatoes and stir. Slightly reduce heat and cook potatoes over a rolling boil until tender (about 10-15 minutes). Remove pot from heat and drain all the water. Allow potatoes to rest for 1 minute. Use a fork to slightly "rough up" the potatoes which will increase the surface area and give you small potato bits that will get super crispy when roasted. Try to avoid breaking the potato slices too much.
- Place potatoes in a large bowl and toss with the olive oil, sumac, rosemary, and salt. Make sure all potato slices are well coated.
