This cherry crumble is like a cherry pie without the fuss. EASY. The crumbly crisp almond topping is a perfect match to those juicy plump cherries.

1/4 cup all-purpose flour
1/4 cup granulated sugar
2 1/2 lbs fresh or frozen sweet cherries (pitted)
2 Tbsp fresh lemon juice (from 1/2 lemon)
1/2 tsp vanilla extract
1 cup all-purpose flour
1/4 cup granulated sugar
1/3 cup light brown sugar (packed)
1/8 tsp salt
8 Tbsp 1 stick cold, unsalted butter, diced
½ cup quick cooking oats
1 cup sliced almonds (divided)
Whipped cream or vanilla ice cream to serve (optional)

Steps:

  • In a small bowl, stir together 1/4 cup flour and 1/4 cup sugar.
  • In a medium bowl, toss cherries with 2 Tbsp lemon juice and 1/2 tsp vanilla. Sprinkle the top with your flour/sugar mixture and stir to evenly coat cherries. Transfer cherries to a 9x13 or 9x12 baking dish.
  • In the bowl of a food processor fitted with a steel blade, combine: 1 cup flour, 1/4 cup granulated sugar, 1/3 cup brown sugar, and 1/8 tsp salt. Pulse to combine. Add 1 stick diced cold butter and pulse until butter is pea-sized.
  • Transfer mixture to a medium bowl, add 1/2 cup oats and use your hands to make large crumbs, rubbing the mixture between your fingers. Add 1/2 cup shaved almonds and toss to combine.
  • Spread the crumble topping evenly over the cherries and sprinkle on the second 1/2 cup sliced almonds. Bake uncovered at 350˚F for 45 minutes, or until almonds are golden brown and cherry juices are bubbling at the edges. Let crumble cool at least 15 minutes before serving; cherry juices will thicken as it cools.

For the Crumble
4 cups fresh sweet cherries , pitted
3/4 cup water
3/4 cup sugar
2 1/2 tablespoons cornstarch
For the Crumble Topping
4 tablespoons butter
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup walnuts or pecans, finely chopped

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F. Lightly spray 4 (7- to 8-ounce) ramekins or 5 to 6 (5- or 6-ounce) ramekins or custard cups with cooking spray. Alternatively, lightly butter bottoms and sides.
  • Combine cherries, water, sugar, and cornstarch in a medium saucepan and stir to blend. Place pan over medium heat and bring to a simmer.
  • Reduce heat and continue simmering, uncovered, for 10 minutes, stirring frequently.
  • Divide cherry mixture among ramekins.
  • Combine topping ingredients in a medium bowl.
  • Sprinkle topping evenly over each filled ramekin.
  • Put ramekins in oven with a baking sheet on rack below to catch drips. Bake for 25 to 30 minutes, or until topping is browned and filling is bubbly.

3 pounds mixed cherries
¾ cup sugar
4 tablespoons kirsch (optional)
12 tablespoons unsalted butter
2¼ cup all purpose flour
1¼ cup rolled oats
¾ cup light brown sugar
1 teaspoon salt
Baking spray

Steps:

  • Pit the cherries and transfer to a large bowl. Toss with the sugar and kirsch and set aside.
  • Melt the butter in a small sauce pan. In a large bowl, combine the flour, oats, sugar, and salt and stir to combine. Pour the butter and use your hands to incorporate until a crumbly, dry dough forms. Set aside.
  • Lightly coat a 13''x10'' baking pan (At least 2'' deep) with baking spray. First, pour in half the crumble mixture and use your fingers to press it into a the bottom of the pan in a firm, even layer. Next, add the cherries in over top and spread it into an even layer. Finally, top with the remaining crumble mixture on top in an even layer. Transfer to the oven and bake for 30-40 minutes until the top is golden brown and the cherry filling is bubbling.
  • Divide the crumble between dessert plates and serve warm with vanilla ice cream, if desired. Store leftovers in the fridge. Enjoy!

3 cups pitted cherries
10 tablespoons white sugar, divided
2 teaspoons lemon juice
1 cup gluten-free all purpose baking flour
1 teaspoon vanilla powder
1 teaspoon ground nutmeg

Steps:

  • Cube butter and place in freezer until firm, about 15 minutes.
  • Preheat air fryer to 325 degrees F (165 degrees C).
  • Combine pitted cherries, 2 tablespoons sugar, and lemon juice in a bowl; mix well. Pour cherry mixture into baking dish.
  • Mix flour and 6 tablespoons of sugar in a bowl. Cut in butter using fingers until particles are pea-size. Distribute over cherries and press down lightly.
  • Stir 2 tablespoons sugar, vanilla powder, nutmeg, and cinnamon together in a bowl. Dust sugar topping over the cherries and flour.
  • Bake in the preheated air fryer. Check at 25 minutes; if not yet browned, continue cooking and checking at 5-minute intervals until slightly browned. Close drawer and turn off air fryer. Leave crumble inside for 10 minutes. Remove and allow to cool slightly, about 5 minutes.

Use summer cherries to make this easy oat-topped crumble. Perfect with a scoop of vanilla ice cream, it makes a superb summertime dessert

1kg fresh cherries , pitted
50g golden caster sugar
1 lemon , juiced
½ tsp vanilla extract
150g plain flour
100g cold butter
½ tsp salt
70g soft brown sugar
100g rolled oats
40g flaked almonds
ice cream , to serve

Steps:

  • Tip the cherries into a medium-sized ovenproof dish (around 28cm) and mix with the sugar, lemon and vanilla. Set aside.
  • Heat the oven to 200C/180C fan/gas 4. Tip the flour and butter into a mixing bowl and rub together with your fingertips to create a fine, breadcrumb-like mixture. Stir through the salt, brown sugar, oats and most of the almonds. Tip over the cherry mixture, then top with the remaining almonds.
  • Bake the crumble in the centre of the oven for 30-35 mins or until the topping is golden brown. Serve warm with vanilla ice cream.
