1/3 cup orange juice
2 tablespoons honey
3 cups watermelon balls, about half a watermelon
2 cups cantaloupe balls, about half a cantaloupe
2 cups honeydew balls, about half a honeydew

Steps:

In a medium bowl, combine mint, orange juice and honey, blend until smooth.
In a large bowl, combine watermelon, cantaloupe and honeydew.
Pour orange juice mixture over fruit and gently toss.

1 white grapefruit, peeled and sectioned
1 pink grapefruit, peeled and sectioned
1 navel orange, peeled and sectioned
1 honeydew melon, halved and seeded
1 cantaloupe, halved and seeded
1 large avocado, chopped into small pieces
1 tablespoon lemon juice
¼ cup extra-virgin olive oil
¼ cup fresh lemon juice
1 teaspoon balsamic vinegar
⅓ cup chopped fresh mint
2 tablespoons honey
1 teaspoon coarse sea salt
freshly ground black pepper to taste
fresh mint, leaves picked

Steps:

Combine white grapefruit, pink grapefruit, and orange sections in a large bowl.
Scoop out honeydew melon and cantaloupe flesh using a melon baller; add to the citrus in the bowl.
Toss avocado with 1 tablespoon lemon juice in a small bowl. Remove from the juice; add to the bowl of citrus and melons.
Whisk olive oil, 1/4 cup lemon juice, and balsamic vinegar together in a bowl. Stir in 1/3 cup chopped mint, honey, salt, and black pepper. Pour over citrus and melon mixture; toss gently to prevent mashing avocado. Garnish with fresh mint leaves.

2 cups cubed cantaloupe
1 package (8 ounces) feta cheese, cubed
1 medium ripe avocado, peeled and cubed
1 bunch watercress, coarsely chopped
1/2 cup fresh basil leaves, coarsely chopped
1/4 cup chopped red onion
CORIANDER-LIME VINAIGRETTE:
1 teaspoon coriander seeds
1/3 cup canola oil
3 tablespoons lime juice
2 tablespoons rice vinegar
1 tablespoon honey
1 tablespoon grated lime zest
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

In a large bowl, combine the tomatoes, cucumber, cantaloupe, cheese, avocado, watercress, basil and onion., In a dry small skillet over medium heat, toast coriander seeds until aromatic, about 2-3 minutes. Cool. Transfer to a spice grinder or a mortar and pestle; coarsely grind., In a small bowl, whisk the oil, lime juice, vinegar, honey, lime zest, salt, pepper and coriander. Pour over tomato mixture and gently toss to coat.
