This creamy, sweet and savory corn pudding casserole is always a family-favorite holiday side dish. Plus, it is gluten free.

15 oz. can whole kernel corn, (drained or 1 1/2 cups frozen corn, thawed)
34 oz. creamed corn ((two 17-oz. cans))
5 large eggs, (lightly beaten, or 1 1/4 cups liquid egg substitute)
1/2 cup sugar
4 Tablespoons cornstarch
1 1/2 teaspoons seasoning salt
1/2 teaspoon dry mustard
1 teaspoon dried minced onion
1/2 cup milk (- (I have used skim, 1%, and 2% and all have worked fine))
1/2 cup melted butter (margarine, or vegetable oil spread (like Smart Balance))

Steps:

  • Preheat oven to 400°F.
  • Spray a 3 qt. casserole dish or 9x13 in. glass baking dish (or even disposable aluminum pan) with cooking spray or oil.
  • In a large bowl, combine the two kinds of corn and eggs.
  • In a small bowl, combine the sugar, cornstarch, seasoned salt, dry mustard, and dried minced onion. Add this mixture to the corn mixture, and stir to combine.
  • Stir in the milk and melted butter.
  • Pour the mixture into the prepared dish.
  • Bake for 1 hour, stirring once, or until set and lightly browned, but still soft.

The Southern holiday sideboard isn't complete without a pan of cheesy and creamy corn pudding. This version, made with fontina or Swiss cheese, is more savory than sweet. If fresh corn isn't in season, you can use frozen corn. Drain the thawed corn well so it doesn't make the casserole watery.

4 large eggs
2 1/2 cups half-and-half
2 (15-oz.) pkg. frozen corn, thawed
8 ounces fontina or Swiss cheese, shredded (about 2 cups)
1/2 cup grated yellow onion (from 1 large onion)
6 tablespoons all-purpose flour
2 teaspoons minced garlic (about 2 garlic cloves)
2 tablespoons chopped fresh chives, plus more for garnish
1 tablespoon chopped fresh thyme, plus more for garnish
2 teaspoons kosher salt
1 teaspoon black pepper

Steps:

  • Whisk together eggs and half-and-half in a large bowl. Pulse corn, in 2 batches, in a food processor until coarsely chopped, about 5 times. Add to egg mixture along with cheese, grated onion, flour, garlic, chives, thyme, salt, and pepper. Stir to combine. Transfer to a lightly greased 13- x 9-inch baking dish; cover and chill until ready to bake, up to 1 day ahead.
  • Preheat oven to 350°F. Remove casserole from refrigerator while oven preheats. Bake, uncovered, until golden and bubbly around edges and center is just set, about 45 minutes. Let stand 10 minutes before serving. Garnish with thyme and chives.

8 corn tortillas, torn into 2-inch pieces
1 ½ pounds ground beef
½ cup salsa
½ teaspoon garlic salt
1 sweet yellow onion, quartered
1 (10 ounce) package frozen corn
2 cups milk
1 cup shredded Cheddar cheese, divided
1 (4 ounce) can diced green chile peppers
1 (4 ounce) jar chopped pimento peppers
2 large eggs
1 teaspoon hot sauce
1 teaspoon smoked paprika
½ teaspoon salt
1 (7.5 ounce) package corn bread mix (such as Jiffy®)
1 (6 ounce) can sliced black olives
2 green onions, thinly sliced, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Arrange corn tortilla pieces in the bottom of prepared baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix ground beef with salsa and garlic salt in a bowl; spoon mixture over tortillas.
  • Place onion and corn in a food processor; pulse until onion is coarsely chopped. Add milk, 1/2 cup Cheddar cheese, green chile peppers, pimento peppers, eggs, hot sauce, paprika, and salt; pulse until just mixed. Add corn bread mix and pulse until just blended. This recipe has been made and served in my mother's family for as long as I can remember. It is traditionally served with turkey and mashed potatoes. To save fat and calories, I cut the amount of butter and sugar for the topping in half, but for full flavor it is better with the full amount.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, whisk together the milk, eggs, flour, baking powder and sugar. Add corn and pour into a 9x13 inch baking dish. Bake for 40 minutes.
