SUMMER SHRIMP STIRFRY

2 Tbsp butter
2 Tbsp olive oil
4 cloves garlic, minced
1 pound shrimp, cleaned & de-veined
handful of asparagus, wooden bottoms removed & cut in half
3/4 cup corn niblets, either cut from cob fresh or thawed frozen
1/2 cup yellow bell pepper, diced
1/2 cup grape tomatoes, halved
Juice of 1/2 a lemon
Salt & Pepper to taste

Steps:

  • Heat a skillet over medium high heat. Add one Tbsp of butter & one Tbsp of olive oil. Add garlic. When hot, add shrimp. Cook until just done, about 3 minutes. Remove shrimp to a plate.
  • Add remaining oil and butter to the same skillet. Add asparagus and bell pepper to pan. Cook for about 2 minutes until they start to soften. Push to the edge of the pan. Add the corn to the middle. Cook for 1 minute. Add tomatoes and cook for an additional minute. Add shrimp back to pan and add the lemon juice. Cook for 30 seconds to 1 minute. Salt and pepper to taste.
  • Remove stir-fry from pan and serve on a platter. Best if it cools for a minute or two before you serve it.

2 tablespoons cornstarch
3/4 cup cold water
2 tablespoons reduced-sodium soy sauce
1 teaspoon garlic powder
1/2 teaspoon ground ginger
2 cups fresh broccoli florets
2 tablespoons olive oil
1 medium sweet red pepper, julienned
3 green onions, chopped
1 pound uncooked medium shrimp, peeled and deveined
1 cup frozen stir-fry vegetable blend, thawed
3 garlic cloves, minced
1/4 cup chopped peanuts

Steps:

  • In a small bowl, combine cornstarch and water until smooth. Stir in the soy sauce, garlic powder and ginger; set aside., In a large nonstick skillet or wok, stir-fry broccoli in oil for 2 minutes. Add red pepper and onions; stir-fry for 2-3 minutes or until vegetables are crisp-tender. Add the shrimp, Oriental vegetables and garlic; cook 3 minutes longer. , Stir cornstarch mixture and stir into shrimp mixture. Add the peanuts. Bring to a boil; cook and stir for 2 minutes or until thickened.

1 small zucchini or yellow summer squash, cut int 1/4-inch slices
1 small green pepper, julienned
1 small onion, chopped
1 tablespoon butter
1 medium tomato, peeled and chopped
1/2 cup cubed fully cooked ham, optional
Salt and pepper to taste
1/2 cup shredded cheddar cheese, optional

Steps:

  • In a skillet, saute the zucchini, green pepper and onion in butter until crisp-tender. Stir in the tomato and ham if desired; heat through. Sprinkle with salt and pepper. remove from the heat. Top with cheese if desired; cover and let stand until cheese is melted.

The key to a successful stir-fry is to have all of your ingredients prepped before you start cooking. The high heat under the pan makes things go quickly - if you stop to prep inbetween, your food will overcook.

1 tablespoon butter
1 tablespoon olive oil
2 pounds boneless skinless chicken breast, cut into 1-inch chunks
4 cloves garlic, minced
2 large zucchinis, diced
2 large ears of corn, kernels removed
3/4 cup red grape tomatoes, sliced in half lengthwise
3/4 cup yellow grape tomatoes, sliced in half lengthwise
Salt and freshly ground black pepper
12 to 18 fresh basil leaves, cut in chiffonade
Parmesan shavings to serve
Juice of 1 lemon
Rice or Pasta, for serving, optional

Steps:

  • Melt the butter with the olive oil in a large skillet over a medium-high heat. Add the chicken and garlic, then sauté until the chicken is cooked through, about 5 minutes. Remove the chicken to a plate.
  • Increase the heat to high, then throw in the zucchini. Stir it around for about 45 seconds, then scoot the zucchini to the edges of the pan. Throw in the corn and cook it for a minute, then push it to the edges of the pan. Throw in the grape tomatoes, stir them around for a minute, then sprinkle on some salt and pepper to taste.
  • Next, throw the chicken back in. Stir everything around for about 45 seconds, or until it's all combined and hot. Pour it onto a big platter.
  • Sprinkle on the fresh basil and some Parmesan shavings then ... this is the best part ... squeeze the lemon all over the top. This adds a wonderful, indescribable freshness.

2 pounds shrimp, peeled
Coarse salt
2 egg whites
2 tablespoons cornstarch mixed to a paste with 2 tablespoons dry sherry
4 tablespoons dry sherry
1 teaspoon sugar
3 teaspoons wine vinegar
3 tablespoons soy sauce
2 to 3 teaspoons hot chili pepper sauce (according to taste)
4 tablespoons peanut oil
6 scallions, chopped (white and green part)
3 tablespoons ginger root, minced
1 clove garlic, minced
4 cups yellow squash or zucchini, diced
2 tablespoons chives
3/4 cup pine nuts, toasted

Steps:

  • Soak the shrimp for five minutes in cold water to which you have added two tablespoons coarse salt. Rinse and repeat this procedure twice. Rinse, drain and pat dry.
  • In bowl large enough to hold the shrimp, combine the egg whites with the cornstarch sherry mixture. Beat together and add the shrimp. Coat with the mixture and marinate in the refrigerator at least an hour.
  • In a small bowl, combine the ingredients for the sauce: Sherry, sugar, vinegar, soy sauce and hot chili pepper sauce. Mix and set aside.
  • When ready to cook, place the wok over high heat. Add two tablespoons peanut oil. Remove the shrimp from the marinade with a slotted spoon. Saute for one minute. Remove and set aside.
  • Add the remaining oil to the wok and stir-fry the scallions, ginger root and garlic for one minute. Add the squash, stir-fry for a few seconds, then add the sauce and the shrimp. Stir-fry for a few more seconds, remove from heat, sprinkle with chives and pine nuts and serve.
