1 cup all-purpose flour
2 tablespoons granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
2 tablespoons ice water
1 1/2 pounds McIntosh, Macoun, or Empire apples (3 large)
1/4 teaspoon grated orange zest
1/4 cup flour
1/4 cup granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
4 tablespoons (1/2 stick) cold unsalted butter, diced

Steps:

  • For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.
  • Preheat the oven to 450 degrees F.
  • Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Transfer it to a baking sheet.
  • For the filling, peel, core, and cut the apples into 8ths. Cut each wedge into 3 chunks. Toss the chunks with the orange zest. Cover the tart dough with the apple chunks leaving a 1 1/2-inch border.
  • Combine the flour, sugar, salt, cinnamon, and allspice in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts holding together. Sprinkle evenly on the apples. Gently fold the border over the apples to enclose the dough, pleating it to make a circle.
  • Bake the crostata for 20 to 25 minutes, until the crust is golden and the apples are tender. Allow to cool. Serve warm or at room temperature.

1 2/3 cups all-purpose flour
1 1/2 teaspoons sugar
3/4 teaspoon salt
1 1/4 sticks cold unsalted butter, cut into pieces
4 to 5 tablespoons ice water
For filling
1/3 cup water
2 tablespoons Calvados
1 cup packed pitted prunes (7 oz), halved
1 teaspoon cinnamon
Pinch of ground cloves
5 tablespoons all-purpose flour
3/4 cup sugar
2 pounds tart green apples (5)
1 1/2 tablespoons fresh lemon juice
1/2 cup walnut pieces, toasted
1 tablespoon whole milk
1 tablespoon sugar

Steps:

  • Make dough:
  • Pulse together flour, sugar, and salt in a food processor. Add butter and pulse until mixture resembles coarse meal. Sprinkle in 4 tablespoons ice water and pulse until pastry starts to hold together, adding remaining tablespoon ice water if needed. Turn dough out onto a very lightly floured surface and knead 4 or 5 times. Form dough into a disk and chill, wrapped in plastic wrap, 30 minutes.
  • Make filling:
  • Simmer water, Calvados, and prunes, uncovered, until most of liquid is absorbed, about 10 minutes. Remove from heat and cool.
  • Preheat oven to 400°F.
  • Stir together cinnamon, cloves, 2 tablespoons flour, and 1/2 cup sugar.
  • Peel and core apples and cut into 1/2-inch wedges. Halve wedges crosswise and toss with cinnamon mixture. Add lemon juice and toss to coat.
  • Finely grind walnuts with remaining 3 tablespoons flour and remaining 1/4 cup sugar in a food processor.
  • Assemble and bake tart:
  • Roll out dough on a lightly floured surface into a 14- by 18-inch oval. Roll dough loosely onto floured rolling pin and unroll onto a large buttered baking sheet. Spinkle walnut mixture over pastry, leaving a 2 1/2- to 3-inch border.
  • Stir stewed prunes into apple mixture and spoon over walnut mixture, evenly tucking prunes between apple pieces. Turn edge of dough over fruit to form pleats. Brush top of dough with milk and sprinkle with sugar.
  • Bake tart, loosely covered with foil, in middle of oven 30 minutes. Remove foil and bake until crust and fruit are golden and juices are bubbling, about 30 minutes more. Cool tart on baking sheet on a rack at least 20 minutes before serving.

Good for diabetics. It has no artificial sugar, deriving its sweetness from pear concentrate, apples and prunes. If pear concentrate is not available, I'm sure apple juice or similar would be fine. The original recipe by Judy Davie called for semolina but I substituted wholemeal flour with great results. You are always welcome to try it with semolina. Also, you might need to adjust the oven time, there was no given one--180°C worked fine for mine.

1/4 cup margarine
250 g whole wheat flour

  • Blend the apple, prunes, pear concentrate and water until well combined.
  • Separate the eggs and beat the whites until they form peaks.Combine two of the egg yolks, the margarine, wholemeal flour, baking powder and allspice with the fruit mixture.
  • Fold the prune mixture through the egg whites until well combined.
  • Pour the mix into a greased loaf tin and bake for 40 min at 180°C.

1 large or 2 small Spanish onions (about 1 pound), cut into 1/4-inch-thick wedges
1/2 cup raisins
12 pitted prunes, cut lengthwise into strips
1 1/2 tablespoons finely chopped ginger
1 cup white vinegar
1/3 cup sugar
3/4 teaspoon ground cumin
3/4 teaspoon coarse salt
6 tart apples (2 1/2 pounds), peeled, cored, and cut into 1-inch cubes

Steps:

  • Place onion, raisins, prunes, ginger, vinegar, sugar, cumin, salt, and 2 cups water in a low-sided, 6-quart saucepan. Set over medium-high heat, and bring to a boil.
  • Reduce to heat to medium-low, and simmer, stirring occasionally, until most of the liquid has been absorbed, about 40 minutes.
  • Add the apples and 1 1/2 cups water. Cook, stirring frequently, until apples are soft and translucent and liquid has been absorbed, about 50 minutes. Remove pan from heat.
  • Transfer to a large bowl set over an ice bath to chill, and store in airtight container, refrigerated, up to 4 weeks.

2/3 cup old-fashioned oats

Steps:

  • Preheat oven to 425°F.

4 cooking apples , cored but left whole
2 stem ginger balls, finely chopped
½ tsp ground cinnamon
4 prunes , chopped
50g light muscovado sugar
1 tbsp butter
4 big scoops good quality vanilla ice cream , to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Using a sharp knife, score a line around the equator of each apple. Put them into a baking dish with a small splash of water in the bottom.
  • In a bowl, combine the ginger, cinnamon, prunes and sugar. Stuff the mixture into the apples so that they are well packed. Top each with a knob of butter and bake for 35-40 mins, or until cooked through. To test, pierce with a sharp knife - it should slide straight through. The apples can be cooked up to a day ahead, then warmed through in the oven or microwave before eating.
  • Remove from the oven and baste the apples with the liquid left in the dish. Serve hot or warm with the ice cream.

1 cup beef stock
2 bay leaves
