GARLIC-BROWN SUGAR CHICKEN THIGHS
I love the crunchy chicken skin and brown sugar pan sauce that comes out of this.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Season chicken thighs with salt and pepper.
- Melt 2 tablespoons butter in a large oven-proof skillet over medium-high heat. Add chicken, skin-side down, and sear until brown, 2 to 3 minutes per side. Remove chicken to a plate.
- Melt remaining butter in the skillet. Add garlic; cook and stir until fragrant, 1 to 2 minutes. Remove from heat and stir in brown sugar, honey, oregano, thyme, and basil until well combined. Return chicken to the skillet.
- Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Here is another recipe from the 60's. It was so good the first time I had it as a young girl, I still make it every once in awhile.

Steps:
- Shake chicken pieces in bag with flour, salt, pepper and paprika.
- Brown chicken in butter/shortening in a large skillet. You may have to do this in batches.
- Remove to baking dish.
- In same skillet, lightly brown almonds.
- Stir in remaining flour mixture and mix well.
- Gradually stir in water, consomme and ketchup.
- Cook stirring constantly until thickened.
- Remove from heat; stir in sour cream.
- Pour over chicken; cover.
- Bake at 375 degrees to 30 - 40 minutes or until chicken is cooked.
- Drain and arrange peach halves (cut side up) on chicken. Sprinkle cheese over meat and peaches.
- Return to oven; uncovered for 10 minutes.

- Pat chicken pieces dry and season lightly with kosher salt on both sides. Set aside in room temperature for 40 to 45 minutes or so (or, if you have the time, cover and refrigerate for 2 hours or overnight. If you do this, take chicken out of fridge and let it rest at room temperature for a few minutes before cooking.)
- In a 12" deep ceramic pan or braiser like this one, heat 2 tbsp extra virgin olive oil over medium-high heat until shimmering but not smoking. Add chicken (skin side down, if you kept skin) and brown for 5 minutes. Turn over and brown on the other side for another 3 minutes or so.
- Lower heat to medium-low and add onions, garlic, and cilantro. Cover and cook for 3 minutes, then add lemon slices, olives, raisins, and dried apricots.
