1 package (16 ounces) uncooked penne pasta
1-1/2 pounds bulk Italian sausage
2/3 cup julienned soft sun-dried tomatoes (not packed in oil)
3 garlic cloves, thinly sliced
2 teaspoons fennel seed
1/4 teaspoon crushed red pepper flakes
1/2 cup dry red wine or reduced-sodium chicken broth
1/2 cup heavy whipping cream
1 package (9 ounces) fresh spinach
3/4 cup shredded Romano cheese, divided
2/3 cup crushed seasoned salad croutons

Steps:

  • Cook pasta according to package directions for al dente., Meanwhile, in a Dutch oven, cook sausage over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles. Stir in tomatoes, garlic, fennel seed and pepper flakes; cook 1 minute longer., Add wine. Bring to a boil; cook until liquid is almost evaporated, 1-2 minutes. Stir in cream; cook 1 minute longer. Add spinach; cook and stir just until spinach is wilted., Drain pasta; add to sausage mixture. Stir in 1/2 cup cheese. Sprinkle with crushed croutons and remaining cheese.

Creamy Tuscan Sausage Pasta makes the ultimate comfort food meal. It's perfect for family dinners, at home date nights, and for entertaining as well. The combination of sun-dried tomatoes along with the sausage and parmesan enveloped in a creamy sauce is always a crowd pleaser. This recipe is made with gluten free pasta, but you can use regular pasta too. And if you can't have dairy, no worries because there's a dairy free option as well!

8 ounces mild bulk Italian sausage, see notes
1 tablespoon olive oil, see notes
2 cups 1/4″ diced onion, from 1
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 cup chopped sun-dried tomatoes, see notes
1/2 cup white wine, or 1/2 cup chicken broth with 1-2 teaspoons fresh lemon juice
1 teaspoon Dijon mustard
2 cups heavy cream, see notes for dairy free
12 ounces gluten free pasta, penne, fettuccini, etc. I use 100% brown rice from Jovial
4 cups baby spinach, 4 ounces, roughly chopped
1 cup freshly grated parmesan cheese, plus more for serving, or dairy free substitute of choice
1/2 teaspoon sea salt, more or less to taste depending on ingredients used
1/4 teaspoon black pepper
Optional: 1/2 cup chopped fresh basil

Steps:

  • Place a large 9-10″ skillet over medium high heat. When the pan is hot add the sausage, and using a wooden spoon or metal utensil if appropriate, break apart the sausage and brown it. When the sausage is done, remove it from the pan and set it aside.
  • Bring a large pot of water to a boil for the pasta while you continue on with the sauce.
  • Add the olive oil to the pan with the sausage grease if needed along with the onion and garlic. Sauté over medium heat stirring frequently until the onion is golden brown. Add the Italian seasoning, sun-dried tomatoes, white wine, and Dijon mustard. Briskly simmer until the wine is almost gone.
  • Next add the pasta to the boiling water and cook according to the package directions for al dente. I like to remove the pasta a couple minutes early so it can finish in the sauce.
  • While the pasta cooks, add the heavy cream to the pan with the sun-dried tomato mixture. Bring the sauce to a boil, then reduce the heat to maintain a light simmer. Be careful not to let it boil over so there's no mess!
  • Simmer the sauce until it's lightly thickened 6-8 minutes. Next add the roughly chopped spinach and stir to combine and wilt the spinach, then add the sausage back to the pan. If your pan is too small, add the spinach to the drained pasta in it's pot along with the sauce and simmer in that instead.
  • Drain the pasta, then add it to the pan along with the sausage and simmer 1-2 minutes stirring constantly to help the sauce adhere to the pasta.
  • Finally add the grated parmesan, season to taste with sea salt and black pepper. Stir in the optional basil leaving some to sprinkle as a garnish, and serve immediately with more grated parmesan.

13 oz. smoked sausage
1 tbsp. extra-virgin olive oil
1/2 sweet onion, finely diced
1 clove garlic, minced
2 oz. sun-dried tomatoes, julienned and dry packed
8 oz. penne
2 c. low-sodium chicken broth
3/4 c. half-and-half
1/2 c. Grated Gruyère
2 tbsp. Freshly Chopped Parsley

Steps:

  • Slice sausage into 1/4" thick rounds, then set aside. In a deep, 12" skillet over medium heat, heat oil. Add onions and sausage and cook, stirring often, 5 minutes. Add garlic and cook one minute more, stirring constantly. Add sun-dried tomatoes, penne, chicken broth, and half-and-half and turn heat to high.
  • Bring to a boil then reduce to a simmer. Stir, cover, and cook, 12 minutes. Fold in cheese and parsley and serve immediately.

3/4 cup drained oil-packed sun-dried tomatoes, sliced, 2 tablespoons of oil reserved
1 pound Italian hot sausages, casings removed
2 (8-ounce) packages frozen artichoke hearts
2 large cloves garlic, chopped
1 3/4 cups chicken broth
1/2 cup dry white wine
16 ounces fusilli pasta
1/2 cup shredded Parmesan, plus additional for garnish
1/3 cup chopped fresh basil leaves
1/4 cup chopped fresh Italian parsley leaves
8 ounces water-packed fresh mozzarella, drained and cubed, optional
Salt and freshly ground pepper

Steps:

  • Heat the oil reserved from the tomatoes in a heavy large frying pan over medium-high heat. Add the sausages and cook until brown, breaking up the meat into bite-size pieces with a fork, about 8 minutes. Transfer the sausage to a bowl. Add the artichokes and garlic to the same skillet, and saute over medium heat until the garlic is tender, about 2 minutes. Add the broth, wine, and sun-dried tomatoes. Boil over medium-high heat until the sauce reduces slightly, stirring occasionally, about 8 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the fusilli in boiling water until tender but still firm to the bite, stirring often, about 8 minutes. Drain the pasta (do not rinse). Add the pasta, sausage, 1/2 cup Parmesan, basil, and parsley to the artichoke mixture. Toss until the sauce is almost absorbed by the pasta. Stir in the mozzarella. Season, to taste, with salt and pepper. Serve, passing the additional Parmesan cheese alongside.

  • Saute the garlic and onion in the olive oil.

1 pound casarecce or other short pasta
Kosher salt
1/4 cup olive oil
1 large onion, thinly sliced
1 pound spicy Italian sausage, casings removed
1 1/4 pounds radicchio, cored, coarsely chopped (about 7 cups)
1/2 cup thinly sliced drained oil-packed sun-dried tomatoes
Freshly ground black pepper

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 3/4 cup pasta cooking liquid; return pasta to pot.
  • Meanwhile, heat oil in a medium skillet over medium-high. Add onion and 1/4 tsp. salt and cook, stirring occasionally, until tender, about 5 minutes (do not brown). Add sausage and cook, stirring occasionally and breaking up sausage into small bits with a wooden spoon, until sausage is mostly cooked through, about 5 minutes. Add radicchio and 2 Tbsp. water. Cook, covered, until sausage is cooked through and radicchio is wilted, 3-5 minutes more.
  • Add tomatoes, sausage mixture, and 1/2 cup pasta cooking liquid to pot with pasta. Season with salt and pepper, toss to coat, and add remaining 1/4 cup pasta cooking liquid, if needed. Divide among serving plates and top with pepper.
