1 tablespoon butter
1 egg
salt, to taste
pepper, to taste

Steps:

  • Melt the butter in a medium frying pan over high heat.
  • Crack the egg into the pan and let it cook until the egg whites begin coagulating, about 1 minute. Sprinkle with salt and pepper. Cover with a lid on for 1 minute to finish cooking the egg. Then, uncover and remove the egg from the pan.
  • Enjoy!

3/4 lb sharp cheddar cheese
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1 dash cayenne
1 teaspoon salt, to taste
1 cup sour cream
1 lb sausage, cooked and drained
10 eggs

Steps:

  • Spray bottom of 11x7-inch pan with cooking spray.
  • Slice half of cheese to cover bottom.
  • Grate other half and set aside.
  • Mix seasonings with sour cream.
  • Pour half of mixture over cheese.
  • Layer cooked, crumbled, sausage over sour cream.
  • Break whole eggs on top of sausage.
  • Spread on remaining sour cream (dollop, without breaking eggs).
  • Top with remaining grated cheese.
  • Bake at 325ºF.
  • for 25-30 minutes, or until set.

1 teaspoon olive oil
2 large eggs
Toast, for serving, optional
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oil in a medium nonstick skillet over low heat until slightly shimmering, about 5 minutes. Crack an egg into a small ramekin and slowly add it to the skillet; repeat with the other egg, adding it to the other side of the skillet. Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, 2 to 2 1/2 minutes. Slide the eggs out of the skillet onto a plate or toast. Season with salt and pepper.

You can divide the eggs and serve them on English muffins if desired. Cooked ham slices can be substituted for the bacon if desired. Cooking time does not include cooking the bacon.

14 slices cooked bacon (not crispy)
2 cups shredded swiss cheese (or to taste)
12 large eggs
1 cup whipping cream
salt and pepper
1 pinch cayenne pepper (optional)
1/3 cup grated parmesan cheese
1 teaspoon paprika
chopped fresh parsley

Steps:

  • Set oven to 425 degrees.
  • Set oven rack to bottom position.
  • Butter a 13 x 9-inch baking dish.
  • Place the bacon in one layer into the bottom of the buttered baking dish, then sprinkle with Swiss cheese (make certain to only use half-cooked bacon for this, do not cook until crisp).
  • Break the eggs carefully over the cheese spacing evenly.
  • Whisk the whipping cream with cayenne pepper, salt and black pepper, then pour over the eggs.
  • Bake in a 425 degree oven for about 10 minutes or until set.
  • Remove from oven the sprinkle with Parmesan cheese; let stand for about 8-10 minutes before serving.
  • Sprinkle with fresh chopped parsley.

1 teaspoon Worcestershire sauce
4 eggs

1 medium tomato, chopped (3/4 cup)
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 400°. Grease square pan, 8x8x2 inches.
  • Prepare noodles and sauce mix as directed on package; stir in Worcestershire sauce. Spread mixture in pan. Make 4 indentations in noodle mixture, using back of spoon. Break 1 egg into each indentation. Sprinkle with salt and pepper.
  • Bake uncovered 15 to 20 minutes or until egg whites and yolks are firm, not runny. Sprinkle with tomato and parsley.

3/4 cup sour cream
1 tablespoon dijon style mustard
8 eggs
paprika for garnish

Steps:

  • prehaet oven to 325. Over medium heat, brown sausage. drain drippings, set aside. Grease bottom of 7 x 10 inch glass baking dish. Cover bottom with coarsely crumbled croutons and sprinkle with 1 cup shredded cheese. In small bowl, combine sour cream and mustard, place half of sour cream mixture over cheese and croutons in evenly spaced spoonfuls. spread sausage over top. make eight evenly spaced shallow indentations into the sausage(about 1 inch in diameter) Break each egg separately into a small dish and gently slide one egg into each of the indentations. Spoon on remaining sour cream mixture between the eggs. sprinkle casserole with1 cup cheddar and paprika. bake 20-25 minutes until eggs are lightly set. serve with salsa if desired. serves 8
