My girlfriend and I are both college students so this quick and easy chicken recipe was an affordable and tasty hit at our table last night! Requiring just a few ingredients and low prep time makes this a great dish any day of the week. The homemade BBQ sauce goes great on pork and ribs too! Feel free to adjust the sweetness or spiciness to your pleasure.

1 serving cooking spray
½ cup barbeque sauce (such as Sweet Baby Ray's®)
¼ cup honey
¼ cup brown sugar
1 tablespoon chile-garlic sauce (such as Sriracha®)
4 skinless, boneless chicken breast halves, pounded to an even thickness
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray the foil with cooking spray.
  • Mix barbeque sauce, honey, brown sugar, and chile-garlic sauce together in a bowl until you have no clumps of brown sugar. Spoon about half the sauce into a separate bowl for serving.
  • Arrange chicken breast halves onto the prepared sheet. Brush sauce from one of the bowls onto breasts.
  • Bake chicken breasts in the preheated oven, brushing with sauce every 10 minutes, until no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Season with pepper and serve with the reserved bowl of sauce for dipping.

2 pounds boneless, skinless chicken breasts and/or thighs

1/4 cup honey
1 cup canned pineapple chunks plus 1/4 cup pineapple juice
3 tablespoons ketchup
2 tablespoons low-sodium soy sauce or tamari
2 teaspoons light brown sugar
1 large garlic clove, finely grated
1/2 medium onion, thinly sliced
1 medium green or red bell pepper, seeds and ribs removed, sliced into 1" pieces

Steps:

  • Whisk cornstarch, pepper, and 1 1/2 tsp. salt in a large bowl. Pat chicken dry and cut into 1" chunks. Add to cornstarch mixture and toss to coat.
  • Heat 2 Tbsp. oil in a large nonstick skillet over high. Add half of chicken and cook, turning occasionally, until chicken is cooked through and a light brown crust forms, about 5 minutes.
  • Meanwhile, stir vinegar, honey, pineapple juice, ketchup, soy sauce, brown sugar, garlic, and remaining 1/4 tsp. salt in a medium bowl.
  • Transfer cooked chicken to a plate or bowl. Heat remaining 2 Tbsp. oil in skillet and cook remaining chicken, turning occasionally, 3 minutes. Add onion and pepper and cook, stirring occasionally, until vegetables are softened and chicken is cooked through, about 2 minutes more. Add sauce to skillet along with pineapple chunks and first batch of chicken. Toss well to coat in sauce and continue to cook until sauce is reduced and thickened, 1-2 minutes more.
  • Divide chicken mixture among plates and top with scallion. Serve with rice alongside.

This recipes comes from me trying to "fix" another recipe on the site but it ended up being a whole new recipe. I think it turned out very well, and It's something we really enjoy. Make it as sweet or spicy as you like by messing with the amounts of brown sugar (not the molasses!) and chili flakes. Enjoy! This recipe includes sauce for rice but be careful, if you cook it too long the chicken will soak up the sauce fast, if your looking for more of a sticky glaze, cook it a little longer and leave the lid off during most of the cooking. I have only made it sticky without the vegetables added, so if your worried about overcooking, wait to add or cook them separately. I would also suggest chopping into pieces when raw and pan frying the chicken to help seal it some so it doesn't break down as much when cooking. I would be wary reducing the amount of water to reduce cooking time, as it changes the flavor, and not for the better IMHO.

1 -2 lb boneless skinless chicken breast, cooked and chopped into large chunks
6 ounces frozen mixed vegetables (I like carrots, broccoli and water chestnuts)
2 garlic cloves, minced (or 2 tsp minced jarred garlic)
1/2 cup apple juice
2/3 cup brown sugar
4 tablespoons ketchup
1 -2 teaspoon red pepper flakes (to taste)
1 1/4 cups water
1/4 cup soy sauce
1 teaspoon beef base (or beef bouillon granules)
1/8 cup cider vinegar, plus
2 1/2 teaspoons cider vinegar
1/2 teaspoon dark molasses
1/4 teaspoon pepper

Steps:

  • Place all sauce ingredients in a large chefs pan or anything large with a lid.
  • Cook on medium heat, stirring constantly, until slightly bubbly and combined.
  • Add chicken and vegetables, if desired, Stir to coat.
  • Cook on medium/high heat, covered, for 20-30 minutes (stirring every 10 minutes, more if its a pan that sticks) or until desired thickness is achieved and chicken (and veggies) are heated through.
  • I like it served over rice.
