Steps:
- Working over a large bowl, cut kernels off the corn. Scrape the cobs well, using the bowl to reserve the kernels and any juice from the cobs.
- Heat oil in a skillet, preferably cast iron, over medium-high heat. Add the chopped onion and sauté, stirring occasionally, until the onion starts to soften, about 4 minutes. Then add the celery and pepper. Continue cooking and stirring until vegetables grow soft and fragrant, about another 5 minutes.
- Stir in the jalapeno, grape tomatoes, corn, thyme and smoked paprika. Reduce heat to medium, cover and let the maque choux simmer for 10 minutes. Mixture will throw off liquid, creating its own broth.
- Remove lid, add optional chopped greens and stir until greens just wilt. Add chopped fresh basil and season generously with sea salt and fresh ground pepper.
SHRIMP AND SWEET CORN MAQUE CHOUX
A spicy Southern dish, Shrimp & Sweet Corn Maque Choux is satisfying and ready in under 30 minutes. This is my recreation of the Emeril Lagasse dish we had his restaurant, NOLA, in New Orleans. Fresh vegetables are the key to this recipe, which cook quickly and retain their bright, crisp flavors.

SWEET AND SPICY MAQUE CHOUX
Traditional Cajun side-dish that is full of flavor. You can adjust the amount of pepper to fit your taste, but I think the sweet/spicy combination is just perfect. I wouldn't recommend using canned or frozen corn for this...it's just not the same.

Steps:
- Shuck the corn and remove all of the cornsilk.
- Hold each cob over a bowl and cut the kernels away in layers (don't cut whole kernels) then scrape the knife along the cob to get all of the 'milk' out of it.
- Melt butter in large saucepan or pot over medium-high heat. Add the onions, bell peppers, celery and tomatoes and saute until the onions are transparent, about 10 minutes.
- Stir in the salt and peppers, then add the corn and milk from the cobs, the sugar and the evaporated milk and stir well.
- Reduce heat to medium and cook until corn is tender, about 10-15 more minutes.
- Adjust seasonings to taste.
