This fantastic recipe brings together hash browns, fluffy eggs, and fantastic Johnsonville Breakfast Sausage. It's sure to be a family favorite.

2 (12 ounce) packages Johnsonville Original Recipe Ground Breakfast Sausage
9 eggs
3 cups milk
1 1/2 teaspoons ground mustard
1 teaspoon salt
1/2 teaspoon pepper
1 (30 ounce) package frozen country-style hash browns, thawed
2 cups shredded 4-cheese Mexican blend cheese
1/2 cup diced red bell pepper
1/3 cup thinly sliced green onion
salsa (optional) or picante sauce (optional)

Steps:

  • Arrange sausages on an ungreased 15-in. x 10-in. x 1-in. baking pan.
  • Bake at 375ºF for 15-20 minutes, turning links once or until sausage is cooked through and lightly browned; drained.
  • Allow to cool slightly.
  • Slice sausage into 1/4 -inch coins.
  • In a large bowl, whisk eggs, milk and seasonings.
  • Add sausage, hash browns, cheese, bell pepper and onions.
  • Pour into a greased 13-in. x 9-in. x 2-in. baking dish.
  • Cover and refrigerate overnight.
  • Remove from refrigerator 30 minutes before baking.
  • Bake, uncovered at 350ºF for 65-70 minutes or until a knife inserted in the center comes out clean.
  • Let stand 10 minutes before serving.
  • Serve with salsa or picante sauce.

We love breakfast casseroles such as this one, everything in one dish, and always so yummy and satisfying. Can also make the night before. I think they taste better when preparing the night before, and leaving the flavors mingle.

2 can(s) 12 fl. oz. each) nestlÉ® carnation® evaporated milk
8 large eggs, beaten
1 pound(s) precooked sausage links, cut into ¼-inch slices
2 cup(s) (8-oz. pkg.) shredded cheddar cheese
1 cup(s) chopped red pepper
2 - green onions (green parts only), sliced (if i dont have green onions, i chop a small sweet onion.
1/2 teaspoon(s) onion powder
1/4 teaspoon(s) garlic powder
8 cup(s) 1/2-inch cubed italian or french bread (about 9 slices)

Steps:

  • Preheat your oven to 350º F. Grease 13 x 9-inch baking dish.
  • Combine milk, eggs, sausage, cheese, red pepper, green onions, onion powder and garlic powder in large bowl. Add bread cubes, stirring gently to moisten bread. Pour mixture into baking dish.
  • BAKE for 45 minutes or until set. Serve warm. Note: May be assembled ahead of time and refrigerated. Let stand at room temperature for 30 minutes before baking.

I clipped this recipe out of a coupon flyer and made a couple of modifications. This is the recipe I use for our Christmas morning breakfast casserole.

1 lb roll pork sausage
2 slices bread, toasted, buttered and cut into 1/2 inch cubes (about 2 cups)
1/2 cup onion, diced
1/2-3/4 cup green and red pepper, diced
1 cup shredded sharp cheddar cheese
6 eggs
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dry mustard

Steps:

  • Preheat oven to 350 degrees F. Grease an 11X7 baking dish.
  • Crumble and cook sausage and onion in medium skillet over medium heat until browned. Drain off fat.
  • Spread bread cubes in dish; top with sausage, peppers, and cheese.
  • Whisk eggs, milk, salt, pepper, and mustard until well blended; pour over cheese.
  • Bake 30 to 40 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.
  • Note: This may be made the day before and refrigerated overnight. Baking time should be increased to an hour.

1/2 cup red bell pepper, chopped
1/3 cup green onions, sliced
Additional shredded cheese, optional
Salsa, optional

Steps:

  • Place sausage on a 15-in. X 10-in. X 1-in. baking pan. Bake at 375 degrees for 15-20 minutes or until sausage is no longer pink, turning once. Drain sausage and slice into 1/4 inch coins. In a large bowl, combine the eggs, milk, mustard, salt and pepper. Stir in the hash browns, cheese, peppers, onions and sausage; mix well. Transfer to a greased 13-in. x 9-in. X 2-in. baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees for 65-70 minutes or until set and golden brown. For those of us who eat grits! This is a great way to use up left over grits for the next day! We all know once they are cold we toss them so why not make a casserole for the next day! And using cheese grits only adds to the cheesey flavor! This is great for vacations at the beach!

2 lbs sausage, cooked and drained
4 eggs, beaten
1 (6 ounce) package cornbread mix
1/2 cup butter, melted
8 ounces cheese, grated
1 cup cooked grits
1 1/2 cups milk, heated
3/4 teaspoon salt

Steps:

  • grease a 9x13 casserole pan.
  • layer the sausage, then top it with 1/2 of the cheese.
  • mix the eggs and the remainder of the ingredients. Mi well so there are no lumps.
  • pour over the sausage, cover pan and refridgerate overnight.
  • remove and let sit at room temperature for about 30 minutes.
  • bake at 350 for 45-60 minutes until toothpick inserted in center comes out clean.
