5 Italian sausage links (4 ounces each), sliced
1 large onion, halved and sliced
6 cups water
1 can (28 ounces) crushed tomatoes, undrained
2 small zucchini, quartered and sliced
1/2 cup chopped green pepper
1 tablespoon beef bouillon granules
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
3 ounces uncooked linguine, broken into 2-inch pieces
3 tablespoons grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage and onion over medium heat until sausage is no longer pink; drain. , Stir in the water, tomatoes, zucchini, green pepper, bouillon, basil, oregano and pepper. Bring to a boil. Stir in linguine. Cover and simmer for 10-15 minutes or until linguine is tender. Sprinkle with cheese.

2 tablespoons extra-virgin olive oil
2 leeks, white part only, washed well and chopped
1 clove garlic, minced
1 small potato, peeled and chopped
1 (8-ounce) package frozen artichoke hearts, thawed
2 cups chicken stock
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons plus 1/3 cup mascarpone cheese
2 tablespoons chopped chives, for garnish

Steps:

  • Heat olive oil in a heavy, large pot over medium heat. Add the leeks and the garlic and stir. Add the potatoes and cook for 5 minutes, stirring often. Add the artichokes, stock, salt, and pepper and cook until the vegetables are tender, about 20 minutes.
  • Using a handheld immersion blender, or in a blender in batches*, puree the soup. Add the 2 tablespoons mascarpone and blend again to combine. In a small bowl, stir the remaining 1/3 cup mascarpone to soften.
  • Ladle the soup into serving bowls. Dollop the top of each of the soups with a spoonful of the softened mascarpone cheese and top the cheese with chives.
  • * When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

3 small russet potatoes (cubed (about 3 cups))
½ teaspoon Italian seasoning

6 cups beef bone broth (see notes)
2 cups chopped kale or swiss chard leaves (packed)
Sea salt (to taste (see notes))

Steps:

  • Add the sausage to a soup pot on medium-high heat. Cook until the sausages have released some oil and have started to brown. Remove them from the pot.
  • Add the onion, garlic, potatoes, Italian seasoning, and chili flakes to the pot and cook until the onion is soft, about 5 minutes. Add the broth, return the sausages to the pot, and bring the pot to a boil. Reduce the heat and simmer until the potatoes are soft, about 7 minutes.
  • Add the kale or swiss chard to the pot and let it wilt. Season to taste with sea salt.

This is one of my favorite soups and it always gets rave reviews! Salad, hard rolls and wine make a meal! You can make this 24 hours ahead of time without the noodles and wait to add the spinach noodles until soup is reheated for serving. Yummy! Serve topped with grated Parmesan!

1 ½ pounds sweet Italian sausage
2 cloves garlic, minced
2 small onions, chopped
2 (16 ounce) cans whole peeled tomatoes
1 ¼ cups dry red wine
5 cups beef broth
½ teaspoon dried basil
½ teaspoon dried oregano
2 zucchini, sliced
1 green bell pepper, chopped
3 tablespoons chopped fresh parsley
1 (16 ounce) package spinach fettuccine pasta
salt and pepper to taste

Steps:

  • In a large pot, cook sausage over medium heat until brown. Remove with a slotted spoon, and drain on paper towels. Drain fat from pan, reserving 3 tablespoons.

  • Bring a pot of lightly salted water to a boil. Cook pasta in boiling water until al dente, about 7 minutes. Drain water, and add pasta to the slow cooker. Simmer for a few minutes, and season with salt and pepper before serving.

1 large onion, chopped
2 carrots, peeled and chopped
4 cups beef or 4 cups chicken broth

1 (8 ounce) can tomato sauce
1 (19 ounce) can tomatoes with juice, chopped (reserve juices)
2 cups sliced mushrooms
1 (10 ounce) package frozen cheese-filled tortellini
1 zucchini, quartered lengthwise and sliced
1/4 cup chopped fresh parsley
2 tablespoons grated parmesan cheese

Steps:

  • In a large nonsticke skillet over medium-high heat, cook sausage until browned. With a slotted spoon, transfer to slow cooker.
  • Add onion, carrots, broth, Italian seasoning, salt, pepper, tomato sauce, tomatoes and mushrooms to slow cooker.

1 1/2 lbs mild Italian sausage, cut into ¼ inch slices (or use hot instead of mild)
2 cloves garlic, minced or pressed
2 large onions, chopped
1 (28 ounce) can Italian-style tomatoes
3 (14 1/2 ounce) cans regular-strength beef broth
1 1/2 cups dry red wine or 1 1/2 cups water
1/2 teaspoon dry basil
3 tablespoons chopped parsley
1 medium green pepper, seeded and chopped
2 medium zucchini, cut into ½ inch slices
5 ounces bow-shaped medium noodles, uncooked (about 3 cups)

Steps:

2 (3.5 ounce) links hot Italian sausage
2 (16 ounce) packages gnocchi
2 tablespoons olive oil
1 (8 ounce) package sliced baby bella mushrooms
2 medium shallots, peeled and thinly sliced
1 teaspoon red pepper flakes
salt and ground black pepper to taste
4 cloves garlic, minced
1 cup dry red wine
1 (28 ounce) can diced tomatoes, drained
1 teaspoon Italian seasoning
1 (32 fluid ounce) container chicken stock
½ cup finely chopped fresh basil
1 bay leaf
4 cups fresh baby spinach
¼ cup grated Parmesan cheese

Steps:

  • Add 1/2 inch water to a 10-inch frying pan. Place sausage links in the pan, cover, and heat over medium heat for 10 minutes. Remove the lid, turn the links, and cook for another 10 minutes, adding more water as needed to prevent scorching. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Transfer sausages to a cutting board and let cool.
  • While the sausages are cooking, bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain.
  • At the same time, heat olive oil in a 12-inch saute pan over medium heat. Add mushrooms, shallots, and red pepper flakes and sprinkle with salt and pepper. Cook, stirring frequently, until mushrooms are soft and onions are translucent, about 5 minutes. Add diced tomatoes and Italian seasoning; cook and stir for 2 to 3 minutes.
  • Stir in chicken stock, basil, and bay leaf and bring to a low boil. Add spinach, cover, and reduce heat to a simmer; cook for 5 to 7 minutes.
  • Slice sausage links and add to the pan. Simmer soup for 5 minutes.
  • Place gnocchi in serving bowls and ladle soup mixture over top. Season with salt and pepper and sprinkle with Parmesan cheese.

1 pound sweet Italian Sausage
1 large red onion, peeled and chopped
1- 14 oz. can artichoke hearts, drained
1- 28 oz. can Italian plum tomatoes with juice (smoked-optional)
3 cups chicken stock
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon fennel seed
1/4 pound penne pasta
salt and pepper to taste
*Add water, as desired

Steps:

  • Remove the sausage from it's casing, crumble and brown with the chopped onion in large soup pot over medium heat. Cut the artichoke hearts and the tomatoes into bite-sized pieces and add them to the pot. Pour the chicken stock over the sausage and vegetables, then add the oregano, basil and fennel. Bring to a boil, then turn down the heat and simmer, uncovered for 30 minutes. Add the pasta and cook for 15 minutes more, or until the pasta is al dente. Taste for seasoning, add more water, if desired, and serve. To smoke tomatoes: Place 1 heaping tablespoon of fine wood chips in the bottom of a stovetop smoker. Make an aluminum foil tray with raised edges to fit on top of the wire rack. Arrange fresh or canned tomatoes on the tray. Close the stovetop smoker almost tight. Place over one burner on medium-high. When a wisp of smoke escapes, close the stovetop smoker lid all the way, then start your timer. Your tomatoes are done when they have a good, smokey aroma and are slightly burnished, about 20 minutes.

1 lb frozen artichoke heart (or 17 oz. canned, drained)
2 small potatoes, peeled and sliced
1/2 medium onion, peeled and sliced
1 1/2 celery ribs, chopped
1/2 medium leek, sliced (white only)
1 garlic clove, finely chopped (optional)
3 cups chicken stock or 3 cups vegetable stock
2 tablespoons fresh flat-leaf Italian parsley
1/3 teaspoon dried oregano
1/2 teaspoon dried basil
3 tablespoons butter
2 tablespoons flour
1/2 teaspoon half-and-half
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 -2 teaspoon fresh lemon juice

Steps:

  • Cook vegetables, including frozen artichoke hearts if used, in water until soft, approx 10-12 minutes.
  • Drain.
  • In blender, purée cooked vegetables (add canned artichoke hearts here, if used) and optional garlic.
  • Return to pot.
  • Add the herbs and stock.
  • Simmer for 20 minutes.
  • Make a roux with the melted butter and flour over medium heat.
  • Add the half and half, stirring until smooth.
  • Add to soup.
  • Add the heavy cream.
  • Bring soup back up to boil and season with salt, pepper and fresh lemon juice to taste.
  • To thin soup, add half and half. To thicken, add more roux.
