HEALING FUDGE

Ingredients
1 cup coconut oil, soft yet still solid
¼ cup full fat coconut milk
¼ cup organic cocoa powder
1/2 tbsp. raw honey or 4 drops glycerine free Stevia
1 tsp. vanilla extract
1/2 tbsp. cinnamon
1/2 tsp. maca
½ tsp. Celtic sea salt

Steps:

  • Place the coconut oil and coconut milk in a medium sized bowl and mix with a hand mixer on high for 4 minutes or until well combined.
  • Place the remaining ingredients in the bowl and stir on low speed until the cocoa is combined. Increase speed and mix until everything is well combined.
  • Taste the fudge and adjust to desired sweetness.
  • Place a sheet of parchment along the inside of a loaf pan.
  • Place the loaf pan in the freezer for at least 15 minutes, until just set.
  • Use the edges of the parchment to pull the fudge out of the pan.
  • Place on a cutting board and remove the parchment paper.
  • Use a sharp knife to cut the fudge into squares.
  • Store in an airtight container in the freezer as it will liquefy if you leave it in a warm area.

SUPER EASY & DELICIOUS FUDGE

If you like fudge and you like easy, this is the recipe for you! My grandma used to give this to us for Christmas served in circular tins, separated by wax paper. I prefer plain chocolate fudge, but have been known to insert some Andes mints in here or there. I went through a phase in high school where I made this almost bi-weekly.

3 tablespoons salted butter
12 ounces semi-sweet chocolate chips (I use Nestle)
1 (12 ounce) can sweetened condensed milk (I use Eagle brand)
1 teaspoon vanilla
10 chocolate-covered mint candies (I use Andes brand) (optional)

Steps:

  • Spray a large bread pan (or two small bread pans) with a non-stick spray. Also, prepare a double boiler by getting the water boiling. Also, this is a recipe which requires constant stirring, so have a spoon handy!
  • In the double boiler, add the butter, vanilla and sweetened condensed milk and melt together. Note: if you don't have a double boiler, create a makeshift one by boiling water in a pot and placing another similar-sized pot over it. It keeps you from burning the chocolate by providing an even heat source.
  • Once the mixture is blended and easy to stir, add the chocolate chips, stirring constantly.
  • Stir until the mixture is glossy and well blended with no chunks.
  • Pour into the prepared bread pan(s). If desired, insert Andes chocolate mints throughout the fudge by pushing it into the top. Let cool completely before serving. (Don't put into the refrigerator to cool either.) Enjoy!

2 cups chocolate chips
1 3/4 cups condensed milk
1/2 cup icing sugar (sifted)
1 cup nuts, chopped (your choice) (optional)

Steps:

  • In a double boiler melt chocolate chips with the condensed milk.
  • Stir while chocolate is melting to combine.
  • Let cool for 10 minutes off heat.
  • With mixer on medium speed, beat chocolate mixture, slowly adding in sifted icing sugar. Add nuts if you desire.
  • Pour mixture into a parchment lined pan. I used a 4x9 loaf pan to make thick pieces of fudge.
  • Chill for at least 1 hour, remove from pan, slice and serve.
  • Other flavours to try : Use white chocolate chips and almonds,.
  • :peanut butter chips and peanuts.
  • :mint chocolate chips(1 cup) and regular chocolate chips (1cup) and crushed hand mint candy.

4 1/2 cups sugar
1 (14 ounce) can evaporated milk
1 cup butter, softened
1 (7 ounce) jar marshmallow cream
3 (12 ounce) bags semi-sweet chocolate chips
2 teaspoons vanilla
2 cups coarsely chopped nuts

Steps:

  • In a large saucepan, mix sugar with evaporated milk.
  • Stir well to dissolve sugar.
  • Bring to a rolling boil for 7 to 8 minutes.
  • In a large bowl, cream butter and marshmallow cream until fluffy.
  • Stir in chocolate chips.
  • Pour hot mixture over chocolate mixture.
  • When chocolate is melted, add vanilla and nuts.
  • Blend well.
  • Pour into a buttered 9 x 13 pan.
  • Chill.
  • Cut into squares before becoming firm.
  • Caution: This makes a LOT of fudge!

⅓ cup vegetable oil
2 eggs
1 egg yolk
¼ cup applesauce
¼ cup chocolate syrup
1 (13 ounce) package brownie mix
1 tablespoon unsweetened cocoa powder
1 cup semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9 inch square pan.
  • In a medium bowl, stir together the vegetable oil, eggs, egg yolk, applesauce and chocolate syrup until well blended. Stir in the brownie mix and cocoa powder. Fold in the chocolate chips and walnuts. Spread evenly into the prepared pan.
  • Bake for 40 to 45 minutes in the preheated oven, until the top of the brownies appear dry.
