Being originally from the Northeast, we love submarine sandwiches. So I came up with this hearty ham-and-cheese combination that's good either hot or cold. -Jennifer Beck, Concord, Ohio

1 loaf (1 pound) unsliced French bread
3 ounces cream cheese, softened
1/2 pound sliced deli ham
6 slices provolone cheese
1 jar (4 ounces) sliced mushrooms, drained
1-1/2 cups shredded lettuce
2 medium tomatoes, thinly sliced
1 small onion, thinly sliced
2 banana peppers, thinly sliced

Steps:

  • Split bread lengthwise; spread bread bottom with cream cheese and layer with ham, provolone cheese and mushrooms. Replace top. Cut sandwich crosswise in half., On a microwave-safe plate, microwave each half, covered, on high for 15-30 seconds or until cheese is melted. Remove bread tops and layer with lettuce, tomatoes, onion and peppers. Close sandwiches; cut each in half.

Club-Style Filling, Mediterranean Filling or Western Barbecue Filling (below)
3 cups shredded roasted chicken (from a deli rotisserie chicken)
6 soft hoagie or crusty submarine sandwich rolls (about 6 inch), split

Steps:

  • Choose one or more of the fillings and layer with chicken on rolls.
  • Club-Style Filling: Spread 1/2 cup honey mustard on cut sides of rolls. Layer with 4 ounces thinly sliced cooked roast beef or fully cooked ham. Top with chicken. Add 6 tablespoons sliced ripe or pimiento-stuffed olives, 2 medium tomatoes, sliced, and, if desired, spinach leaves. Mediterranean Filling: Spread 1/2 cup hummus on cut sides of rolls. Layer with 1 small red onion, thinly sliced, 2 ounces feta cheese, crumbled (1/2 cup), 24 spinach leaves and the chicken. Western Barbecue Filling: Spread 1/2 cup guacamole on cut sides of rolls. Layer with chicken. Drizzle with 1/4 cup barbecue sauce. Add 1 small green bell pepper, thinly sliced.

1 loaf unsliced French bread
1 (3 ounce) package cream cheese, softened
8 slices cooked ham
6 slices provolone cheese
1 (4 ounce) jar sliced mushrooms, drained
1 1/2 cups shredded lettuce
2 medium tomatoes, thinly sliced
1 small onion, thinly sliced
2 banana peppers, thinly sliced

Steps:

  • Cut the loaf of bread in half horizontally. Spread bottom half with cream cheese; layer with the ham, provolone and mushrooms.
  • Replace top.
  • Cut loaf in half. Cover and microwave on high for 30-45 seconds or until cheese is melted. Remove top; add the lettuce, tomatoes, onion and peppers. Replace top. Cut into serving-size pieces.

2 sub rolls or mini baguettes
1 tbsp mayonnaise or horseradish sauce
1 tbsp vegetable oil
1 small onion , finely sliced
1 red pepper , deseeded and finely sliced
2 thin frying steaks
2 slices gruyère cheese

Steps:

  • Split the rolls down the middle, spread with the mayonnaise or horseradish, then set aside. Heat half the oil in a large frying pan and fry onions and peppers together for 5-10 mins until soft and beginning to colour, then spoon into the rolls.
  • Heat remaining oil in the same pan, season the steaks and cook for 1 min until browned. Flip steaks over, top with the cheese and continue to cook until the steak is cooked to your liking and the cheese has melted. lift the steaks into the rolls and tuck in.

1 loaf French bread, halved lengthwise (1 pound loaf)
4 tablespoons butter, softened
2 -3 cloves garlic, minced
1 cup grated parmesan cheese
1 teaspoon dried oregano
1 lb sliced honey ham deli meat
1 lb sliced deli turkey
1 lb sliced cotto salami or 1 lb hard salami (or mixed)
1 lb sliced mozzarella cheese
1 lb sliced swiss cheese
1 lb sliced provolone cheese
2 -3 cups lettuce, shredded
2 -3 tomatoes, sliced
1 red onion, sliced thin
1 (10 ounce) can pitted black olives, sliced (optional)
1 (4 ounce) jar sliced mushrooms, drained (optional)
1 green bell pepper, seeded and thinly sliced (optional)
1 cup banana pepper, sliced (optional)

Steps:

  • Mix together butter and garlic until smooth.
  • Spread butter generously on split bread halves, and sprinkle with Parmesan cheese and oregano.
  • Bake at 425F until cheese is lightly golden and remove from oven.
  • Build layers of meat and cheese on bread.
  • Top with lettuce, tomatoes, olives.
  • onions, mushrooms, green peppers, and banana peppers.
  • Top with upper layer of bread and press down gently.
  • Slice into 8 servings.
