SWEDISH HASSELBACK POTATOES

Easy recipe for Swedish Hasselback Potatoes. These potatoes are very popular in the Nordic kitchen and is a great side dish for a lot of different food.

1 kg potatoes ((2 lb))
50 g butter ((2 oz ))
2 tbsp rosemary (, fresh or dried)
2 tbsp thyme (, fresh or dried)
2 clove garlic (, finely chopped)
salt

Steps:

  • In a sauce pan; melt the butter at low heat.
  • When the butter is melted; chop the herbs and garlic and add it to the butter. Let it cook/sit for about 5-10 minutes on very little heat.
  • Clean and peel the potatoes.
  • At the bottom side of the potatoes make a small horizontal cut. This will make sure the potatoes sits stable on the oven plate.
  • On the opposite side; make deep cuts side-by-side into the potatoes. The cuts should be about 2/3 into the potatoes and about 2 mm apart.
  • On a parchment paper covered oven plate; place the potatoes side-by-side with the grooves upwards.
  • Brush the potatoes with the butter and herb mixture.
  • Bake the potatoes for about 60 minutes at 200 C (400 F). The cooking time is depended on the size of the potatoes. The potatoes are done when you can easily stick a fork into them. During the cooking brush the potatoes 2-3 times extra with the herb mixture.

Jansson's Temptation (Swedish Potato and Anchovy Casserole) image

I found this on another website researching Swedish recipes. I love to make it and not tell people it has anchovies in it until after they rave about how good it is. The anchovies melt into it to make a sauce. It has such a yummy flavor! Here is a quote from the recipe: "Jansson's Temptation is a classic Swedish dish traditionally served before guests leave to ensure that during their cold journey home they have something warm inside them."

2 -3 large onions, sliced
3 tablespoons unsalted butter
6 russet baking potatoes, peeled and sliced thin lengthwise
1 (2 ounce) can anchovy fillets, drained, reserving the oil and chopped
1 1/2 cups heavy cream
salt and pepper

Steps:

  • In a large skillet cook the onions in 2 tbsp of the butter over moderate heat, stirring occasionally, until they are golden.
  • Preheat oven to 400.
  • In a buttered 2 1/2- 3 quart shallow baking dish (13x9 works well), layer 1/3 of the potatoes, 1/2 of the onions, 1/2 of the chopped anchovies, salt and pepper to taste, 1/3 potatoes, 1/2 onions, 1/2 of the chopped anchovies, salt and pepper to taste, last third of potatoes.
  • Drizzle the top of potatoes with the reserved oil from the anchovy can (about 2 tbsp.) and dot them with the remaining 1 tbsp of butter cut into bits.
  • Bake the casserole on the middle rack for 10 minutes.
  • Pour 3/4 cup of the cream over the potatoes and bake the casserole for 20 minutes more.
  • Pour the remaining cream over the casserole, reduce heat to 300, and bake for 30 minutes more or until the potatoes are tender.
  • Great served with anything that goes well with a potato side dish.

8 medium potatoes, peeled
1 1/2 ounces butter, melted
3 garlic cloves, crushed (mixed with the butter)
1 1/2 teaspoons salt
pepper
1 1/2 ounces parmesan cheese (optional)
2 tablespoons fresh whole wheat bread crumbs

Steps:

  • Cut the potatoes into thin slices 3/4 way through, leaving a small uncut portion of the potato (fan like).
  • Put half of the butter and garlic in an oven proof dish and place the potatoes in the dish.
  • Sprinkle with salt & pepper.
  • Drizzle with remaining butter and garlic.
  • Bake in 375°F oven (takes about and hour depending on the size of the potato).
  • Baste occasionally with the butter in the dish.
  • After 30 minutes sprinkle with the cheese and bread crumbs- do not baste after putting on the cheese and crumbs.
  • Finish baking until potatoes are done and golden.

1 cup chopped onion
1 (16 ounce) package frozen french fries
1 cup shredded cheddar cheese
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup sour cream
2 eggs, slightly beaten

Steps:

  • Melt butter in large skillet.
  • Add onions and fries, heat and stir till onions are wilted and fries are hot. Remove from heat, stir in cheese, salt and pepper.
  • Pour into shallow baking dish.
  • Mix sour cream and eggs together and pour ove fries.
  • Bake for 20 minutes at 350 degrees.

1/2 small onion, chopped
1 egg, beaten
3 ounces shredded gruyere cheese (3/4 cup)

2 ounces shredded gruyere cheese (1/2 cup)

Steps:

  • Heat oven to 350 degrees.
  • Butter 2 quart casserole, combine potatoes, salt, pepper, onion, egg and 3 ounces Gruyere cheese.
  • Heat milk and cream to boiling in saucepan, combine with potato mixture.
  • Place in casserole, sprinkle with remaining cheese and dot with butter.
  • Bake 1 hour.
  • If top not browned, broil until lightly brown.

The Swedish mashed potatoes took a bit of getting used to for me. I love nutmeg in my apple pies and other sweets, but it's not a flavor I expect in my mashed potatoes. Of course I always ate them the way my first husband's Norwegian gramma made them, but when I make them myself I use just enough to add a hint of flavor. After all, without the nutmeg they're just plain mashed potatoes. ;)

2 1/2 lbs potatoes, peeled and cubed
6 ounces milk, warmed
2 teaspoons salt
1 teaspoon white pepper
1 teaspoon caster sugar
1/4 teaspoon nutmeg (or less, to taste)
4 tablespoons butter

Steps:

  • In a large pot, cover the potatoes with water and boil until tender.
  • Drain and mash the potatoes with a masher.
  • Slowly whisk the milk together with the potatoes, preferably with an electric whisk. Add more milk if the mash is to firm.
  • Season with salt, pepper, sugar and nutmeg.
  • Add the butter and whisk until melted.

Steps:

  • Heat oven to 325°F. Grease rectangular baking dish, 13x9x2 inches.
  • Cut potatoes crosswise into 1/8-inch slices, cutting only three-fourths of the way through to bottom. Place cut sides up in dish. Brush with butter. Sprinkle with salt and pepper.
  • Bake uncovered 1 hour, brushing with butter once or twice. Mix cheese and bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake 20 to 30 minutes longer or until tender.
