These Crunchy Sweet Chicken Salad Sandwiches are packed with texture and great flavor. A wholesome but super satisfying lunch idea for people of all ages.

- Remove and discard the skin from the breast portion of the rotisserie chicken. Pull white breast meat from the chicken to a cutting board and use your hands to shred it. You should have approximately 2-1/2 cups shredded chicken. Reserve dark meat for another purpose.
- Preheat the oven to 350 degrees. Place 1/3 cup walnuts in a small baking dish and bake for 5 to 7 minutes or until lightly toasted. Remove from oven and set aside until cool enough to handle. Chop walnuts and set aside.
- In a large mixing bowl combine Greek yogurt, mayonnaise, Dijon mustard, chopped dried cranberries, celery, red onion, lemon juice and zest, salt and pepper. Mix well to combine. Add shredded chicken and chopped walnuts and mix until well combined.
- Divide mixture between the sandwich bread or wraps. Top with some of the broccoli slaw. Serve immediately or place in an airtight container in a chilled thermal bag to send to school with your child for lunch.

SWEET & SAVORY CHICKEN SALAD SANDWICHES
I usually double this recipe and it makes six large sandwiches and about 8 regular size. I created this recipe by changing a similar chicken salad recipe I have, and it's a big hit with my husband and kids alike. Also, I personlly don't like onion or celery by themselves, but I wouldn't leave them out of this recipe. Together, the flavors are all on point.

Steps:
- Combine chicken, celery, onion, apple, and nuts in a mixing bowl, place in the refrigerator while preparing the dressing.
- Blend mayo, sour cream, dijon mustard, lemon juice, salt, white pepper, and sugar until creamy.
- Add dressing to salad mixture, stir until salad is evenly coated and refrigerate while preparing bacon. If your bacon is precooked, let chicken salad chill for 15 to 20 minutes.
- Prepare bacon so that is crispy, but not charred. Drain well.
- Toast bread lightly, preferably on a griddle with a small bit of butter.
- Place a small bed of lettuce on one half of sandwich and heap chicken salad on top.
- Lightly press the heap to slightly flatten and lay 2 or 3 strips of bacon on top. Serve open-faced.

- In a bowl, combine chicken, celery, onion, sliced tomatoes, apple, yogurt, salt and pepper.
- Spread the chicken salad on one of the pieces of bread and place the lettuce on the other piece. Top with desired condiments and bring the two pieces of bread together. Cut in half and place in a reusable container with some fruits and veggies.

CHICKEN SALAD SANDWICHES
Steps:
- In a medium mixing bowl, place the chicken, grapes, nuts, celery, onion, relish, salt, and pepper. Stir until well combined. Add the mayonnaise and stir until the chicken is well coated.
- Arrange a few slices of bread in a neat stack and use a serrated knife to slice off the crusts. Repeat until all of the bread slices are trimmed.
- Place about a 1/2 cup chicken salad on half of the slices. Place the remaining slices on top. Slice each sandwich into 4 squares or triangles. Arrange on a platter and serve.

- Aunt Elsa would make these ahead of time for a party and refrigerate them for a few hours or freeze them for up to a week and remove them from the freezer the morning of the event. Her secret was to spread a thin coat of butter on the bread, which prevents the sandwiches from getting soggy without changing any flavor.
- To make ahead, spread a light coat of butter on one side of each slice of bread. After slicing as directed above, cover the sandwiches with wax paper, and then cover with a damp towel. Refrigerate until needed.
- For longer storage, cover the platter of sandwiches with plastic wrap and freeze. Uncover the sandwiches and let stand at room temperature for a few hours before serving.
