APPLE AND CARAMELIZED ONION CHUTNEY



Apple and Caramelized Onion Chutney image

A sweet-and-spicy condiment that is a beautiful addition to any Indian dinner, or as an appetizer, served with cheese or without, on bread or crackers. Also delicious on potato latkes.

1 pound onions (quartered and thinly sliced, 2-3 medium)
2 tablespoons oil or butter or a combination
1 pound tart apples (such as Granny Smiths (2-3 medium), peeled, cored, and cut into small pieces)
1 cup granulated sugar
1/3 cup + 2 tablespoons apple cider vinegar
2 tablespoons grated or finely minced fresh ginger
1 tablespoon fresh lemon juice
1 1/2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon Dijon mustard

Steps:

  • Caramelize the onions in the fat (oil, butter or combination). Deglaze the pan with 2 tablespoons of the cider vinegar and pour the onions and the deglazing liquid into a large, heavy enamel or stainless steel pot.
  • Add the apples, sugar, ginger, and the rest of the cider vinegar. Mix all the ingredients and bring them to a rolling boil over high heat. Lower the heat and simmer the mixture, uncovered for 20 minutes, stirring every few minutes.
  • Add the lemon juice, curry powder, alt, cinnamon and Dijon mustard. Raise the heat slightly and continue cooking at a high simmer for another 5 minutes.
  • Let the mixture cool before putting in an airtight container. The mixture should be kept refrigerated and is best eaten cold. Will last for weeks (or longer) refrigerated.

Not only can use serve this dip with sausage balls as an appetizer at your next dinner party, Superbowl gathering or office pot luck, but you can also use this dip with chicken wings (as originally intended), breaded chicken fingers or even fresh veggies!

2 tbsp. butter
1/8 medium red onion, diced
1/8 medium yellow onion, diced
3 tbsp. apple butter
5 oz. plain greek yogurt
1/4 c. sour cream
2 tbsp. Deli Mustard (Dijon or Spicy Brown)
1 tsp. apple cider vinegar
Pepper to taste

Steps:

  • Dice onions.
  • Carmelize the onions in 2 tbsp. butter on medium-low heat (about 10-15 minutes or until browned)
  • While the onions are cooking, mix the apple butter, greek yogurt, sour cream, deli mustard and apple cider vinegar. Add pepper to taste.
  • Add sauteed onions.
  • Refrigerate for about 15 minutes to reduce the already cool mixture back down from adding the hot onions.

Number Of Ingredients 11

1 large sweet onion, finely chopped
3 tablespoons butter
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
1/4 cup cornstarch
4 cups chicken stock
4 ounces cream cheese, cubed and softened
1/4 cup apple butter

Steps:

  • In a large saucepan, saute onion in butter. Stir in flour and seasonings. Whisk cornstarch and chicken stock until smooth; gradually stir into onion mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly., Transfer to a blender; cover and process until smooth. Return all to pan and heat through. Stir in cream cheese and apple butter; cook and stir just until blended.

Steps:

  • In 10-inch skillet, melt butter over medium-high heat. Cook onions in butter 10 minutes, stirring occasionally, until golden.
  • Stir in apples; cook 10 minutes, stirring occasionally, or until caramel colored. Remove from heat; stir in salt and pepper. Sprinkle with parsley. Serve warm.
