SWEET-AND-SAVORY KALE SALAD



Sweet-and-Savory Kale Salad image

2 tablespoons pomegranate molasses
2 teaspoons champagne vinegar
1 teaspoon Dijon mustard
3 tablespoons extra-virgin olive oil
Kosher salt
2 large sweet potatoes, peeled, halved and cut into 1/3-inch half-moons
One 14-ounce bag frozen pearl onions, thawed and well drained
3 tablespoon olive oil
Kosher salt
1 Honeycrisp or Fuji apple, cut into 1/4-inch half-moons
Half 5-ounce container baby kale
1/4 cup pomegranate seeds

Steps:

  • Preheat the oven to 425 degrees F.
  • For the dressing: In a small bowl, whisk together the pomegranate molasses, vinegar and mustard. Pouring in a steady stream, whisk in the olive oil. Season with 1/4 teaspoon salt. (The dressing can be made up to 3 days in advance.)
  • For the salad: Scatter the sweet potatoes and pearl onions on a rimmed baking sheet. Drizzle with the olive oil and season with 1 teaspoon salt. Roast until the potatoes are tender throughout and beginning to brown, about 35 minutes, tossing halfway through. Transfer to a large bowl to cool slightly.
  • Add the apples, baby kale and the dressing to the bowl, and season with 1/4 teaspoon salt. Using two wooden spoons, toss gently to combine and coat evenly in the dressing.
  • Sprinkle the salad with the pomegranate seeds before serving.

1 cup romaine lettuce hearts, ribs removed
1 cup butter lettuce, ribs removed
1/2 cup cilantro
1/2 cup watercress
1 gala apples, diced
1 green onion, thinly sliced
1/2 cucumber, peeled and sliced
1 ripe avocado, diced
1/8 cup glazed walnuts
1/8 cup dried cranberries, for salad
equal parts hidden valley ranch and simply dressed blue cheese dressing
sea salt
fresh ground pepper

Steps:

  • Wash and rip lettuce, cress, cilantro and green onion, set aside in bowl.
  • add diced avocado, apple and sliced cucumber.
  • throw in the walnut pieces and cranberries.
  • salt and pepper to taste.
  • add dressings and toss.
  • Enjoy.

½ pound bacon
3 heads broccoli, or more to taste, chopped
1 red onion, diced
¾ cup raisins
¾ cup chopped salted cashews
1 cup mayonnaise
½ cup brown sugar
2 tablespoons red wine vinegar

Steps:

  • Cook bacon in a large skillet and over medium-high heat, turning occasionally, until crisp, about 10 minutes. Drain the bacon slices on paper towels and crumble once cooled.
  • Mix bacon, broccoli, red onion, raisins, and cashews together in a large bowl.
  • Whisk mayonnaise, brown sugar, and red wine vinegar together in a separate bowl; drizzle over the broccoli mixture in small amounts, tossing the salad between additions to coat somewhat evenly.

Sweet and Savory Pasta Salad image

I made this recipe one day when I had a little bit of everything in the pantry to use up. It's easy, and the ingredient amounts are very flexible depending on what your friends and family like. I take this to potluck dinners and never have leftovers, although this recipe is even better the next day and doesn't dry out like a lot of pasta salad recipes. Helpful hint: drizzle a tiny bit of extra light olive oil over the noodles before cooling them.

1 lb tri-color spiral pasta
1 (15 ounce) can artichoke hearts, chopped
1 (8 ounce) can sliced black olives
1 (11 ounce) can mandarin oranges, undrained
1 (8 ounce) can sliced mushrooms
1/2 cup sliced green olives
1 tablespoon green olive juice
1 pint grape tomatoes, halved
1 small cucumber, diced
1/2 small red onion, chopped
bottled poppy seed dressing

Steps:

  • Cook the noodles according to the package directions and refrigerate to cool. Add remaining ingredients, including the juice from the mandarin oranges. Toss together with the poppyseed dressing and chill at least one hour before serving.
