2 cups ketchup
2 cups tomato sauce
1 ¼ cups brown sugar
1 ¼ cups red wine vinegar
½ cup unsulfured molasses
4 teaspoons hickory-flavored liquid smoke
2 tablespoons butter
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon chili powder
1 teaspoon paprika
½ teaspoon celery seed
¼ teaspoon ground cinnamon
½ teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon coarsely ground black pepper

Steps:

  • In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
  • Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.

Bring to a simmer over low heat and cook to allow the flavors to concentrate, 10 to 15 minutes. Let cool to room temperature before using.

1¼ cups ketchup
1/3 to 1/2 cup red wine vinegar (see notes)
1 tablespoon worcestershire sauce
1½ cups dark brown sugar (packed (see notes))
2½ teaspoons ground mustard
2 teaspoons paprika
1½ teaspoons kosher salt (more or less to taste)
1 teaspoon black pepper

Steps:

  • Measure and add the ketchup, vinegar, worcestershire, sugar, mustard, paprika, salt and pepper into to a mixing bowl, preferably with a spout.
  • Whisk well until the sugar has dissolved and the spices are throughout.
  • Pour barbecue sauce into an air-tight jar(s) or container(s) and store it in your fridge. This allows the flavors to develop and meld. Overnight is best but at the least a few hours will do.
  • This sauce can also be frozen.

2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon ground black pepper
½ teaspoon salt
¼ teaspoon cayenne pepper (optional)
1 teaspoon liquid smoke (optional)
2 tablespoons tomato paste (optional, for a thicker, stronger tomato flavor bbq sauce)

Steps:

  • In a medium saucepan over medium heat, combine the tomato sauce, apple cider vinegar, honey, brown sugar, Worcestershire sauce, smoked paprika, garlic and onion powder, ground pepper, and salt. Whisk until combined.
  • Simmer barbecue sauce, uncovered, for 15 to 20 minutes or until the sauce has thickened to your liking. Cook it for a bit longer if you prefer a thicker sauce. Test for seasoning keeping in mind that flavors will deepen as the sauce has a chance to cool.
  • Store barbecue sauce in an airtight container in the fridge for up to one week.

6 tablespoons packed dark brown sugar
1/2 cup cider vinegar
1/4 cup molasses
1/4 cup honey
1/4 cup Worcestershire sauce
2 tablespoons dark rum
2 tablespoons yellow mustard
1 tablespoon liquid smoke
1 tablespoon chile powder
2 teaspoons freshly ground black pepper
2 teaspoons garlic powder
1 teaspoon ground allspice
1/4 teaspoon ground cloves
4 cups ketchup
Coarse salt (sea salt or kosher) and freshly ground black pepper

Steps:

  • Combine all the ingredients through the cloves in a large, deep, heavy, nonreactive saucepan and bring to a simmer over medium heat. Cook, uncovered, until all the ingredients are dissolved, stirring constantly, about 5 minutes. Stir in the ketchup and bring to a boil, stirring well, as the ketchup has a tendency to spatter. Add salt and pepper to taste.
  • Reduce the heat and gently simmer, uncovered, until dark, thick, and richly flavored, 15 to 20 minutes, stirring often. Use right away or transfer to jars, cover, cool to room temperature, and refrigerate. The sauce will keep for several weeks.
