1/4 cup water
1 tablespoon cider vinegar
1 tablespoon honey
2 tablespoons soy sauce
1/2 teaspoon ground ginger
1 can (8 ounces) pineapple chunks in juice, drained and juice reserved
3/4 pound firm tofu, cut into 1-inch cubes
2 teaspoons cornstarch
2 tablespoons cold water
1 tablespoon sesame oil
1 medium onion, chopped (1/2 cup)
2 medium carrots, sliced (1 cup)
1 medium green bell pepper, cut into 1-inch pieces (1 cup)
4 cups hot cooked rice
Sunflower nuts, if desired

Steps:

  • Mix 1/4 cup water, the vinegar, honey, soy sauce, ginger and pineapple juice. Place tofu in small glass or plastic bowl. Pour juice mixture over tofu; toss gently. Cover and refrigerate 1 to 2 hours.
  • Remove tofu from marinade; reserve marinade. Dissolve cornstarch in 2 tablespoons water.
  • Heat sesame oil in wok or 12-inch skillet over medium-high heat. Add onion and carrots; stir-fry about 3 minutes or until crisp-tender. Add pineapple, tofu and bell pepper; gently stir-fry 2 minutes.
  • Stir cornstarch mixture into reserved marinade; pour into wok. Cook 2 minutes, stirring occasionally. Reduce heat; cover and cook 2 minutes. Serve over rice. Sprinkle with nuts.

This bright and colourful stir fry is made with a classic Sweet & Sour Sauce which is truly like what you get at good Chinese restaurants. I know 1/2 cup of sugar sounds like a lot, but it works out at 1 1/2 tbsp per serving, which isn't too bad!

1/3 cup apple cider vinegar
3 tbsp pineapple juice ((from the canned pineapple pieces))
3 tbsp ketchup ((Australia: tomato sauce))

1 tsp Oyster Sauce ((Note 2))

400 g / 13 oz chicken thigh fillets (, cut into bite size pieces (Note 3))
1 red capsicum / bell pepper (, cut into bite size pieces)
1 green or yellow capsicum / bell pepper (, cut into bite size pieces)
1 can ((8oz/250g) canned pineapple pieces in natural juice. Separate pineapple from juice.)
Sliced shallots / scallions (, for garnish)

Steps:

  • Mix together Sauce ingredients. Mix together Thickener in a separate small bowl.
  • Heat oil in a wok or skillet over high heat. Add garlic and onion, cook for 1 minute.
  • Add chicken and stir fry until it it is white all over but still pink inside.
  • Add capsicum and stir fry for 2 minutes.
  • Add Sauce ingredients. Stir until sugar has dissolved and the sauce begins to bubble.
  • Add Thickener. Bring to simmer, stirring constantly. Then cook until it thickens to a syrup consistency - about 3 minutes.
  • Stir through pineapple pieces (just to warm) and remove from stove.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with shallots if desired.

1/2 lb udon noodles or 1/2 lb soba noodles
1 -2 head broccoli
3 carrots, diced
1 tablespoon grapeseed oil
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 cup snow peas, trimmed and strings removed
1 cup pineapple chunk
2 tablespoons rice vinegar
2 tablespoons mirin
2 tablespoons soy sauce, low sodium
2 tablespoons toasted sesame oil
1/4 cup toasted sesame seeds

Steps:

  • Cook noodles according to directions on package.
  • Drain in colander and rinse thoroughly under cold water.
  • Place colander on a plate and refrigerate.
  • Bring 2-3 cups water to boil.
  • Cut broccoli florets into bite-size pieces.
  • Peel and discard tough outer stems and cut remaining stems into chunks.
  • Place prepared carrots and broccoli in bowl, cover with boiling water and let sit 2 minutes.
  • Drain, rinse with cold water and set aside.
  • Heat wok or skillet over medium-high.
  • Add grapeseed oil, garlic and ginger and cook 1 minute.
  • If anything starts to stick, add 1 tablespoon water.
  • Add broccoli, carrots and snow peas, stir and cook 2-3 minutes.
  • Add pineapple, 1 tablespoon vinegar, 1 tablespoon mirin, 1 tablespoon soy sauce and cook 1 minute longer.
  • Remove vegetables from wok and set aside.
  • Pour remaining tablespoon of vinegar, mirin and soy sauce into empty wok.
  • Fold in chilled noodles until evenly coated and heated through.
  • Drizzle with 1 tablespoon sesame oil.
  • Transfer noodles to serving dish.
  • Toss vegetables briefly in hot wok to reheat, drizzle with remaining tablespoon toasted sesame oil and spoon vegetables over noodles.
  • Top with sesame seeds and serve.

  • Prepare shrimp according to package directions and keep warm. Place a wok or a large saute pan over high heat. Add oil and stir-fry mix and cook, stirring constantly, for 3 minutes. Sweet and Sour Stir-Fried Radishes With Their Greens image

The bitterness of radish greens pairs wells with a sweet-and-sour sauce in this stir-fry. We always toss out radish greens, but we shouldn't. They are as nutritious as any green, and they have a pleasantly bitter flavor that is very much like that of turnip greens, which are a close relative. The bitterness works very well against a sweet and sour stir-fry sauce. The radishes should be barely cooked. This is a great dish for large, colorful breakfast radishes. The big bunches I get at my farmers' market weigh a pound, sometimes a little more. Use 2 bunches if yours are smaller.

1 generous bunch large radishes, with greens (about 1 pound total), or 2 smaller bunches
1 tablespoon soy sauce
1 tablespoon rice vinegar
2 teaspoons agave nectar or honey
2 tablespoons chicken stock, vegetable stock or water
Salt and freshly ground pepper to taste
1 tablespoon peanut, canola, sunflower, or grape seed oil
2 teaspoons minced garlic
2 teaspoons minced ginger
1 bunch scallions, chopped, white and green parts separated
1/4 cup chopped cilantro
1 teaspoon cornstarch dissolved in 2 tablespoons water

Steps:

  • Cut away greens from radishes and trim off bottoms of the stems. Wash in 2 changes of water and spin dry. Chop coarsely. Trim away tips of radishes and quarter lengthwise if large, cut in half if small.
  • In a small bowl or measuring cup combine soy sauce, vinegar, agave nectar or honey, and stock or water. Have all ingredients within arm's length of your burner.
  • Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates within a second or two when added to the pan. Add oil to wok or pan and swirl to coat sides, then add garlic and ginger and stir-fry for no more than 10 seconds. Add white parts of scallions and stir-fry for 30 seconds to a minute. Add radish greens, salt and pepper and stir-fry for 1 to 2 minutes more, until they wilt, and stir in radishes. Stir-fry for 1/2 minute and add soy sauce mixture. Stir-fry for a minute more, then stir in ilantro and scallion greens, stir together for a few seconds, add cornstarch slurry and stir until vegetables are glazed (less than 30 seconds). Remove from heat and serve.

227g can pineapple slices in juice, drained and chopped, juice reserved
1 tbsp cornflour
1 tbsp tomato sauce
1 tsp each soy and brown sugar
2 ½ tbsp rice wine vinegar or white wine vinegar
1 tbsp sunflower oil
200g stir-fry pork strips, trimmed of fat
1 red pepper , cut into chunks
3 spring onions , quartered and shredded

Steps:

  • Mix 4 tbsp of pineapple juice into the cornflour until smooth, then stir in the tomato sauce, soy, sugar and vinegar.
  • Heat oil until very hot in a wok, then throw in the pork for 1 min, stirring. Lift pork out onto a plate, then set aside.
  • Add the pepper, stir-fry for 2 mins, then add the pineapple and most of the spring onions for 30 secs. Stir in the sauce for 1 min, splashing in a little water as it cooks, then stir the pork back in for 20-30 secs until just cooked through - it should still be tender. Scatter with the remaining spring onions and serve with rice or noodles.
