Got wilted, past-their-prime greens? Time to celebrate! No, really-- that means you get to make this savory, herbaceous jam. It's a perfect way to salvage those greens and also any tender herbs before they go bad. Treat the jam like a condiment and spread it on toast, use as a pizza sauce or serve with fish.

Number Of Ingredients 10

6 to 8 ounces hearty greens, such as kale, Swiss chard and collards, wilted is fine (4 to 5 cups)
2 to 4 ounces tender herbs, such as parsley, cilantro, basil and tarragon, wilted is fine (2 to 3 cups)
2 cloves garlic
1/4 cup plus 1 tablespoon extra-virgin olive oil
4 kalamata olives, pitted and finely chopped
1 teaspoon capers, drained and finely chopped, optional
Large pinch brown or granulated sugar, plus more to taste
Pinch crushed red pepper flakes
Kosher salt
1 teaspoon fresh lemon juice or white wine vinegar

Steps:

  • Remove the stems from the greens and herbs. Roughly chop or tear the leaves.
  • Set a steamer basket in a large saucepan filled with 2 inches of water. Bring to a boil and add the greens, herbs and garlic. Cover, reduce the heat to a simmer and cook until all greens and the garlic are tender, about 10 minutes. (Tougher greens like collards may take 5 minutes more.) Remove from the heat and let the mixture stand until cool enough to handle (it's OK to let it cool all the way too). Chop finely (including the garlic); you're looking to make a rough paste.
  • Heat 1/4 cup of the olive oil in a medium pot over medium heat. Add the olives and capers if using and cook, stirring, until fragrant, about 1 minute. Add the chopped greens mixture, sugar, red pepper flakes and a large pinch of salt. Reduce the heat to medium-low and cook, stirring constantly, until the greens have cooked down and dried out some, about 4 minutes. Stir in the remaining 1 tablespoon olive oil and the lemon juice. Adjust the seasoning with more salt and sugar if needed.
  • Let cool to room temperature. Refrigerate in an airtight container for up to 5 days.

200g green bean , trimmed
250g baby courgette , halved and quartered lengthways
250g pea
4 tbsp olive oil
2 tbsp lemon juice
handful flatleaf parsley , roughly chopped
handful mint leaves, roughly chopped
1 tbsp snipped chive

Steps:

  • Boil water in a large pan with a steamer attachment and fill a large bowl with ice-cold water. Steam the green beans for 3-4 mins, the courgettes for 2-3 mins, and the peas for 2 mins, until everything is just tender. (If you don't have a steamer, just boil the vegetables in boiling salted water for the same times as above.) After cooking, immediately plunge vegetables into the ice-cold water to cool quickly, drain, then pat dry with kitchen paper.
  • For the dressing, whisk together the oil and lemon juice, stir in the parsley, mint and chives, then season. Take the dressing and vegetables to the picnic in separate containers, then toss gently together to serve.

6 slices bacon, chopped
½ cup water
¼ cup vinegar
½ cup white sugar
⅛ teaspoon salt
⅛ teaspoon black pepper
2 ½ pounds fresh collard greens, tough stems removed and leaves torn into bite-size pieces

Steps:

  • Cook the bacon in a large Dutch oven over medium heat until browned and crisp, about 8 minutes, stirring often. Transfer bacon pieces into a bowl with a slotted spoon, leaving the drippings in the pan.
  • Stir water, vinegar, sugar, salt, and black pepper into the bacon drippings until the sugar has dissolved; bring the mixture to a boil. Place collards into the boiling mixture, and stir to mix well. Cover the Dutch oven, reduce heat to a simmer, and cook until the greens are tender, 30 to 45 minutes. Drizzle in a little more water or vinegar if greens become too dry.
  • Spoon greens into a serving dish, and sprinkle with the cooked bacon pieces.

6 cups assorted green vegetables (sliced leeks, cabbage, courgettes, asparagus, celery, broccoli or cauliflower florets, chopped green)
2 tablespoons brown sugar or 2 tablespoons honey
2 tablespoons vinegar
1 tablespoon oil
2 tablespoons finely chopped herbs (lemon thyme, mint, chives or parsley)
1 teaspoon finely grated lemon rind (optional)

Steps:

  • Steam, boil, stirfry or microwave the vegetables until tender but still slightly crisp.
  • Mix all sauce ingredients together and heat gently in a saucepan or the microwave until the sugar or honey has melted.
  • Pour the hot sauce over the warm vegetables.
  • Serve immediately.
