4 pounds russet potatoes, cut into 1/4-inch slices
salt and ground black pepper to taste
6 tablespoons butter
6 tablespoons all-purpose flour
1 ½ cups whole milk
1 cup heavy whipping cream
2 ½ cups shredded mild Cheddar cheese
1 cup shredded Asiago cheese
1 sweet onion, sliced into rings
¾ cup sliced green onions
⅓ cup shaved Parmesan cheese
7 buttery round crackers (such as Ritz®), crushed
2 tablespoons chopped fresh parsley

Steps:

  • Place potatoes into a large pot and cover with water; add salt and bring to a boil. Reduce heat to medium-low and simmer until just beginning to soften, 15 to 20 minutes; drain.
  • Melt butter in a saucepan over medium heat; add flour and whisk until the mixture thickens, 1 to 2 minutes. Pour milk and heavy cream into the saucepan; cook and stir until smooth, 2 to 3 minutes. Melt Cheddar and Asiago cheese into the butter mixture; cook while stirring continually until the mixture is smooth and creamy, 1 to 2 minutes. Season the sauce with salt and pepper.
  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch casserole dish.
  • Layer about half the sliced potatoes into the bottom of the baking dish. Top the potatoes with sweet onion slices and green onions; pour about 1/3 of the cheese sauce over the onions. Arrange the remaining potato slices into the dish; pour remaining cheese sauce over the potatoes. Sprinkle Parmesan cheese and crushed crackers over the top.
  • Bake in the preheated oven until hot in the center and beginning to brown at the edge, about 30 minutes. Sprinkle parsley over the top of the dish to serve.

A slow roasted sweet onion gratin with a cheesy cream sauce.

4 large yellow onions, peeled and sliced into 1/4 inch slices
olive oil
salt and pepper to taste
1 teaspoon thyme, chopped
1 cup of heavy cream
1/4 cup of white wine
1/4 cup of parmigiano regginao (parmesan), grated

Steps:

  • Spread the onion slices out in a baking dish and drizzle them with olive oil.
  • Season with salt and pepper and sprinkle with the thyme.
  • Bake in a preheated 375F/190C oven for 15 minutes.
  • Meanwhile heat the heavy cream and wine in a sauce pan until it starts to bubble on the edges.
  • Spoon the cream over the onions.
  • Cover in foil and bake for another 25 minutes.
  • Remove the foil and sprinkle the cheese on top.
  • Increase the temperature to 450F/230C and bake until golden brown, about 5 minutes.

1 pint (2 cups) heavy cream
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon salt

3 pounds sweet potatoes (about 12 sweet potatoes, depending on size), peeled and sliced thin with a mandoline
1 tablespoon chopped fresh parsley leaves
2 tablespoons butter, cut into chunks, plus more for baking dish
1/4 cup panko bread crumbs
1/4 cup grated Cheddar

Steps:

  • In a large saucepan combine milk, cream, nutmeg, cinnamon, salt, and pepper. Gently fold in sweet potatoes. Bring to a simmer and allow sauce to thicken.
  • Preheat oven to 350 degrees F.
  • Butter a 3-quart baking dish. Combine the bread crumbs, butter and Cheddar to make the gratin topping. Transfer the potato mixture to the baking dish and sprinkle with the gratin topping. Bake until the potatoes are cooked through, about 35 to 45 minutes.
  • Serve in the baking dish, garnished with chopped parsley.

Sweet & White Potato Gratin image

This is a variation on the fabulous recipe in Williams-Sonoma's Holiday Celebrations cookbook. I made it a bit simpler by substituting cheddar for the fontina (not a really close substitution, I know, but I'm so much more likely to have it on hand, and it still tastes great!), replacing the fresh thyme with dried, and adding a French-fried onion topping instead of breadcrumbs, which adds a lovely flavor. I prefer goat cheese to the feta myself, but feta works just fine if you can't find the goat cheese. By the way, as an Italian, I am pleading with you NOT to use the canned powder masquerading as Parmesan cheese! The bagged, pre-shredded cheese I'll allow, however! :)

1 1/2 lbs russet potatoes
1 lb sweet potato
1 1/2 cups cheddar cheese, shredded
1/4 lb feta or 1/4 lb goat cheese, crumbled

1 teaspoon salt
ground pepper
2 tablespoons flour
1 cup heavy cream
1 cup chicken broth
1 1/2 cups canned French-fried onions

Steps:

  • Preheat oven to 350. Lighly grease a 9x13-inch baking dish.
  • Peel and thinly slice potatoes, using a food processor if available. Arrange half of the white and sweet potato slices randomly in the baking dish.
  • In a small bowl, combine the cheeses, thyme, salt and pepper. Sprinkle half of the cheese mixture over the potatoes. Sprinkle evenly with flour.
  • Add the remaining potato slices, and sprinkle the remaining cheese mixture on top.
  • Pour the chicken broth and cream over the potatoes.
  • Cover with aluminum foil and bake for about 1 1/2 hours, until potatoes are tender. Meanwhile, crush the French-fried onions.
  • Remove the baking dish from the oven and uncover. Sprinkle the crushed onions evenly over the top and return to the oven to bake, uncovered, for another 10 minutes. Remove from the oven and let stand 20 minutes before serving.

½ cup beef broth
½ cup heavy cream
2 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish.
  • Melt the butter in a large skillet over medium heat. Add onions; cook and stir until tender, about 5 minutes. Transfer to the prepared baking dish. In a medium bowl, stir together the beef broth and flour until smooth. Mix in the cream and season with salt and pepper; pour over the onions. Sprinkle Swiss cheese and Parmesan cheese over the top.
  • Bake for 25 to 30 minutes in the preheated oven, until cheese is golden brown and the sauce is bubbly.

I had some potatoes I needed to use and was planning on making plain scalloped potatoes. I noticed that I also had two sweet onions that I probably should use also so this is the recipe that came out of it.

2 tablespoons butter
1 tablespoon flour
1 1/2 cups milk
cracked pepper
1 teaspoon oregano
1 teaspoon basil
2 minced garlic cloves
6 small potatoes
2 small sweet onions (such as Vidalia)
2 cups grated cheddar cheese
Italian breadcrumbs
1/4 cup melted butter

Steps:

  • Preheat oven to 350 degrees F and grease a 9x13 baking dish.
  • Melt 2 tablespoons.
  • butter in small saucepan over medium heat and whisk in 1 tablespoons.
  • flour.
  • Add milk in slowly, constantly stirring.
  • Add cracked pepper, oregano, basil and minced garlic and whisk until well blended and slightly thickened and set aside.
  • Thinly slice potatoes and onions separating the onions into rings.
  • Layer 1/3 of the potato slices, 1/2 of the onion rings and 1 cup of the cheddar cheese.
  • Repeat one more time.
  • End with the last 1/3 of the potato slices on the top.
  • Pour the cream sauce evenly over potatoes, cover with bread crumbs and sprinkle melted butter over all.
  • Bake covered for 1 hour, uncover and bake 15 minutes more or until done.

1 large or 2 medium sweet onions, such as Vidalia, thinly sliced
Salt and freshly ground black pepper
1/2 teaspoon ground thyme
1 bay leaf, fresh or dried
2 pounds baby Yukon gold potatoes or fingerling potatoes
1/2 to 2/3 cup heavy cream
1/2 cup grated Parmigiano-Reggiano
1/2 pound brick Gruyere or Swiss cheese, shredded

Steps:

  • Heat a small skillet with the butter over medium heat. Add the onions, season with salt ground thyme, bay leaf and cook until very soft and sweet and lightly caramelized, 20 minutes. Season with salt and pepper, to taste, and discard the bay leaf.
  • While the onions cook, put the potatoes in a medium pot and cover with water. Bring to a boil, then salt the water and cook to tender, 12 to 15 minutes. Drain and return the potatoes to the hot pot. Mash the potatoes with the cream and Parmesan and season with salt and pepper, to taste.
  • Preheat the broiler.
  • Arrange the mashed potatoes in individual gratin dishes or 1 shallow casserole. Top the potatoes with the onions and Gruyere cheese. Put them on a sheet pan and brown under a hot broiler until bubbly, about 2 minutes. Remove from the oven and serve hot.

1/4 cup unsalted butter
1/4 cup flour
2 cups whole milk
1 bay leaf
1/2 teaspoon coarse Kosher salt
1/2 teaspoon ground white pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 1/2 cups sharp cheddar cheese (, shredded and divided )
4-5 large Russet potatoes

Steps:

  • Preheat oven to 350°F. Coat a 3 quart casserole dish with cooking spray. Set aside.
  • In a small saucepan, melt the butter and then whisk with flour until it forms a paste. While whisking, pour in milk until smooth. Add the bay leaf, salt, pepper, onion and garlic powder. Bring to a low simmer.
  • Remove the saucepan from heat and whisk in 2 cups of the cheese. Whisk until cheese has melted and sauce thickens. Set aside.
  • Peel potatoes and evenly slice to 1/4 inch or less thick. Place in cold ice water to prevent browning (optional).
  • Remove the bay leaf from cheese sauce.
  • Place half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the top. Add remaining potatoes and top with the remaining cheese sauce. Cover tightly with aluminum foil.
  • Bake covered for 60 minutes.
  • Take the baking dish out of the oven and remove the aluminum foil. Top with the remaining 1/2 cup of shredded cheddar cheese and return to the oven uncovered. Bake for an additional 20 minutes or until potatoes are soft the whole way through.
  • Remove and allow to sit for 15 minutes before slicing and serving.
  • Optionally, top with additional salt and pepper, bacon, scallions or chives.
