Best Ever Sweet Pickles image

I pack away homegrown cucumbers every summer. This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. Number Of Ingredients 12

9 cups sliced pickling cucumbers
1 large sweet onion, halved and thinly sliced
1/4 cup canning salt
1 cup sugar
1 cup water
1 cup white vinegar
1/2 cup cider vinegar
2 tablespoons mustard seed
1 teaspoon celery seed
1/2 teaspoon whole peppercorns
12 garlic cloves, crushed
4 bay leaves

Steps:

  • In a large nonreactive bowl, combine cucumbers, onion and salt. Cover with crushed ice and mix well. Let stand 3 hours. Drain; rinse and drain thoroughly., In a Dutch oven, combine sugar, water, vinegars, mustard seed, celery seed and peppercorns. Bring to a boil, stirring to dissolve sugar. Add cucumber mixture; return to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 4-5 minutes or until heated through., Carefully ladle hot mixture into 4 hot wide-mouth 1-pint jars, leaving 1/2-in. headspace. Add 3 garlic cloves and 1 bay leaf to each jar. Remove air bubbles and, if necessary, adjust headspace by adding hot pickling liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

DAMSON CRUMBLE

This damson and apple crumble will go down a treat as a family dessert. The damsons will contain stones, so remember to warn people to remove them as they eat

800g-900g damsons
50g light soft brown sugar
knob of butter
1-2 tbsp sloe gin (optional)
2 apples , peeled, cored and sliced
250g plain flour
150g unsalted butter , cold
80g light soft brown sugar
80g demerara sugar
50g ground almonds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the damsons into a pan with the sugar, butter and sloe gin if using (or a splash of water if not) and heat gently until the damsons start to give off their juices. Tip into the base of a large shallow gratin dish (about 25cm long) and stir through the apple slices.
  • Put all the crumble ingredients into a food processor with a pinch of salt, and using the pulse button, whizz until the mixture just starts to clump together. Don't whizz for too long or the mixture will stick together too much. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.
  • Scatter the crumble over the damsons and bake in the oven for 30-40 mins until golden brown. Leave for about 15 mins before serving with custard or cream. Remember to warn everyone about the stones!

Grandma's Spicy Sweet Pickles image

Good old fashioned pickles from Grandma. This recipe is nearly 100 years old, passed from generation to generation. These are great pickles, and really very easy.

Number Of Ingredients 9

4 lbs cucumbers, after slicing
1/3 cup salt
1 quart white vinegar
1 cup sugar
1 tablespoon celery seed
1 tablespoon mustard seeds
2 tablespoons whole mixed pickling spices
1 tablespoon alum
5 cups sugar

Steps:

  • Slice cucumbers about 1/8 inch thick.
  • Pour salt over cucumbers.
  • Pour enough boiling water over all to cover.
  • Stir and let stand 8 hours or overnight.
  • Drain and discard brine.
  • In a saucepan, combine vinegar, 1 cup sugar, spices and alum.
  • Bring to a boil.
  • Put cucumbers in a large glass jar or plastic bucket with lid or a stoneware crock.
  • Pour boiling vinegar mixture over cucumbers.
  • Cover and let stand.
  • Next day, and each consecutive day for 5 days total, stir in one additional cup of sugar.
  • Do not reheat when sugar is added.
  • At the end of the 5th day, pickles are done and may be stored in covered jar.
  • Do not seal jars.
  • Pickles will keep indefinitely and get better with age.

Sweet Pickled Damsons image

Season: Late August to September. Dark-skinned with a bluish bloom, small oval damson plums are very tart and well flavored, which makes them wonderful for preserving. This is a straightforward recipe that keeps the fruit whole and tender. I love warming cinnamon and allspice in the mix, but you can use any spices you fancy, or even a good tablespoonful of ready-made pickling spice (see p. 89). These sweet spiced damsons are a lovely addition to any buffet table and splendid with cold poultry.

Yield makes four 12-ounce jars

Number Of Ingredients 6

2 1/2 cups cider vinegar
1 (2-inch) piece of cinnamon stick
1 teaspoon allspice berries
Juice and finely grated zest of 1 orange
2 1/4 pounds firm, ripe damson plums or any other small, tart variety of plum
3 3/4 cups granulated sugar

Steps:

  • Put the vinegar, cinnamon, allspice berries, and orange juice and zest into a pan and bring to a boil. Boil for 4 to 5 minutes, then strain and allow to cool.
  • Prick each plum with a needle or skewer (this will prevent them from splitting). Add the fruit to the cool spiced vinegar in a clean pan. Bring slowly to a simmer, then simmer very, very gently for 10 to 15 minutes, until the plums are just tender. Using a slotted spoon, lift out the plums and pack them into warm, sterilized jars (see p. 21).
  • Return the spiced vinegar to the heat, add the sugar, and stir until dissolved. Boil for several minutes to reduce and thicken. Pour this hot spiced syrup over the plums and seal immediately with vinegar-proof lids (see p. 22). Store in a cool, dark place. These pickled damsons are best kept for 6 to 8 weeks before eating. Use within 1 year.
  • You can use the same method to pickle firm cherries or green gooseberries. Rhubarb, cut into 2-inch chunks, can also be dealt with in this way - but add the sugar with the rhubarb, as it will help keep it whole.
