1/4 to 1/2 cup soy sauce
1/2 tablespoon sambal oelek
1 teaspoon sesame oil
3 scallions, white and green parts separated, sliced thinly on the bias
2 cloves garlic, smashed and finely chopped
One 1-inch piece ginger, peeled and grated
1/2 sweet white onion, such as Maui, julienned
1 pound ahi tuna, cut into 1/2-inch chunks
2 tablespoons chopped dry-roasted macadamia nuts

Steps:

  • Combine the soy sauce, sambal, sesame oil, scallion whites, garlic, ginger and onions in a medium bowl. Toss in the tuna and let sit in the fridge for 30 minutes.
  • Stir in the macadamia nuts. Plate as desired and garnish with the scallion greens.

I wanted to make a banana poke cake and couldn't find banana pudding so I took a recipe and modified it with pistachio pudding. Thanks Madicakes for her Banana Pudding Poke Cake recipe that I used and modified.

nonstick cooking spray with flour
1 (16.25 ounce) package white cake mix
1 cup water
½ cup vegetable oil
3 large eggs
⅔ fluid ounce green gel food coloring (1 tube)
2 cups cold milk
2 (3.4 ounce) packages instant pistachio pudding mix
1 (8 ounce) container frozen whipped topping, thawed
2 tablespoons chopped pistachios

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass baking dish with floured cooking spray.
  • Place cake mix in a large mixing bowl. Add water, vegetable oil, eggs, and food coloring; whisk until smooth. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 23 to 28 minutes. Remove from the oven and let cool, about 30 minutes.
  • When the cake is almost finished cooling, whisk together cold milk and pudding mix in a bowl for 2 minutes. Let sit until soft and thickened, about 5 minutes.
  • Poke holes all over the top of the cooled cake using the handle of a clean wooden spoon. Pour pudding over the cake, spreading evenly to the edges. Spread whipped topping over the pudding layer. Sprinkle pistachios over top.

1 lb Little Smokies sausage
2 (8 ounce) cans crescent rolls
1 cup chopped pecans
1/2 cup butter
6 tablespoons brown sugar

Steps:

  • Roll sausages in crescent rolls. You'll have to cut each crescent triange into 2 to 3 pieces to have enough.
  • Melt butter in 13x9 glass pan.
  • Stir in and melt brown sugar.
  • Sprinkle pecans over butter mixture.
  • Place rolled up suasages one right next to the other over the butter mixture & pecans.
  • Bake at 375 degrees for 25 minutes or until golden brown.

Two ingredients are all you need to make the homemade dough for these pigs in a blanket that will be the hit of your next party. I like to serve with mustard dipping sauce but BBQ sauce and cheese dip are good too.

½ cup Greek yogurt
¾ cup self-rising flour, plus more for kneading
1 small egg
1 teaspoon water
24 cocktail wieners
2 tablespoons everything bagel seasoning

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper.
  • Place Greek yogurt in a large bowl. Add flour and stir until crumbly. Dust a cutting board with flour. Add dough mixture to the cutting board and knead until smooth, about 5 minutes.
  • Whisk egg and water together in a separate bowl.
  • Roll dough into a 12x6-inch rectangle. Cut dough in half lengthwise. Cut crosswise into 1-inch strips to form 24 strips.
  • Wrap 1 dough strip around a cocktail wiener and place seam side down onto the prepared baking sheet. Repeat with remaining cocktail wieners.
  • Brush egg wash evenly over dough. Sprinkle each pig in the blanket with everything bagel seasoning.
  • Bake in the preheated oven until browned, about 15 minutes.

4 boneless pork chops, 3/4-inch thick
2 peaches, sliced
1 large red onion, sliced
1 large red bell pepper, cored and sliced in rings
4 sprigs fresh rosemary
1/2 cup fresh basil
1/4 cup fresh lemon juice
1 tablespoon fresh ground pepper
1/4 cup extra virgin olive oil
Reynolds Wrap Foil

Steps:

  • Cut four pieces of Reynolds heavy-duty aluminum foil, 12 x 15 inches and four pieces of Reynolds parchment paper the same size. To assemble "pokes", top sheets of foil with parchment. Place one pork chop on each piece of parchment. Divide peaches, red onion slices and bell pepper rings evenly between packets. Top with sprig of fresh rosemary, fresh basil, lemon juice, pepper and a drizzle of olive oil. Fold foil and parchment into a package and seal edges. Place on medium-high grill and cook for 20 minutes or until meat reaches 145 degrees F. when tested. Remove from grill and allow to rest for 3 to 5 minutes. The pokes can also be placed on a baking sheet and baked in a 350 degree F. oven for 20 minutes or until temperature is reached.
