Sweet Potato-Cashew Bake image

This dish has always been on our Thanksgiving, Christmas, and Easter menus. You can't go wrong with sweet potatoes that are cooked, sliced, and layered with brown sugar, cinnamon, ginger, nutmeg, and cashews. The whole mixture is then baked and topped with mini marshmallows that brown at the end. Canned yams can be used instead of the sweet potatoes.

5 sweet potatoes, peeled and cut into 1/2 inch slices
¾ cup packed brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground ginger
⅛ teaspoon ground nutmeg
½ teaspoon salt
¼ cup butter, cut into pieces
½ cup coarsely chopped cashews
1 cup miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking 9x13 inch baking dish.
  • Place the sweet potatoes in a large pot, and fill with enough water to cover. Bring to a boil, and cook until a fork easily pierces the potatoes, about 10 minutes. Drain, and cool.
  • Mix the brown sugar, cinnamon, ginger, nutmeg, and salt together in a bowl. Stir in the cashews.
  • Arrange half the sweet potatoes over the bottom of the prepared baking dish. Sprinkle with half the brown sugar mixture. Top with half the butter pieces. Repeat with a second layer of sweet potatoes, brown sugar mixture, and remaining butter pieces.
  • Bake in preheated oven until potatoes are glazed with the brown sugar mixture, about 30 minutes. Sprinkle mini marshmallows over the top, and return to the oven to bake until browned, about 5 minutes more.

Steps:

  • Use as many medium to large sweet potatoes as you need, allowing one whole or half sweet potato per serving. To bake, preheat the oven to 375°F. Wrap each potato in foil and place on the oven rack; bake for about 40 minutes, or until easily pierced with a knife. To microwave, allow 2 minutes per medium potato and 3 minutes per large. Test with a knife; if still too firm, cook an additional 1 minute per potato until done.
  • Leaving the sweet potatoes in their jackets, cut each in half, smash lightly with a potato masher, and serve hot with freshly made Cashew Butter Sauce (page 216).

1/3 cup broken cashews
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 lbs sweet potatoes, cooked, peeled, and cut crosswise into thick pieces (5 or 6 medium)
1 (8 ounce) can peach slices, well drained
3 tablespoons butter (or margarine)
ground cinnamon (optional)
allspice (optional)
1 dash brandy (optional)
minced orange peel (optional)
peach preserves (optional)
sweet and spicy pecans, Sweet and Spicy Candied Pecans - With a Kick in place of the cashews (optional)

Steps:

  • Combine brown sugar, cashews, salt, and ginger.
  • In 10x6x2-inch baking dish layer half the sweet potatoes, half the peach slices, and half the brown sugar mixture. Repeat layers.
  • Dot with butter or margarine.
  • Bake, covered, at 350 degrees for 30 minutes.
  • Uncover and bake mixture about 10 minutes longer. Spoon brown sugar syrup over before serving.
  • Makes 6 to 8 servings.

1/2 cup packed brown sugar
1/3 cup coarsely chopped cashews

1 can (15-1/4 ounces) sliced peaches, drained
3 tablespoons butter

Steps:

  • Place sweet potatoes in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 30-45 minutes or just until tender. Drain and cool slightly; peel and cut into cubes. , In a small bowl, combine the brown sugar, cashews, salt and ginger. Place half of the sweet potatoes in an ungreased 11x7-in. baking dish; top with half of the peaches and brown sugar mixture. Repeat layers; dot with butter. , Cover and bake at 350° for 30 minutes. 4 cloves garlic
1 medium yellow onion, diced
2 tablespoons grapeseed oil
Kosher salt
2 carrots
2 ribs celery
1/2 cup tomato paste
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons fresh thyme, chopped
1 cup chopped tomatoes, canned or fresh
1 large white sweet potato
2 quarts chicken stock
1/2 cup raw unsalted cashews
2 Macintosh apples, leave the peel on

Steps:

  • Mince the garlic and dice the onion. Heat grapeseed oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add garlic and sauté until light brown, 1-2 minutes. Add onions and a pinch of salt. Stir and sweat the onions, 3-4 minutes.
  • Peel and chop the carrots; chop the celery. Stir in the celery, carrots, and tomato paste. Let the tomato paste brown in the pan a few minutes. Stir in cumin and coriander, followed by thyme and chopped tomatoes. Reduce heat to low and cook 5 minutes; meanwhile, peel and dice the sweet potato. Stir in the sweet potato, and cook 5 more minutes.
  • Purée chicken stock and cashews in a blender. Add to the vegetables and stir. Increase heat to medium-high and bring stew to a simmer. Cook uncovered until liquid is reduced by half, 35-40 minutes.
  • When stew is reduced, core and dice the apples and stir them in. Ladle into bowls and serve hot.
