2 russet potatoes, cut in 1/2 lengthwise, halves cut lengthwise into fourths to make 16 big, fat wedges
1/4 cup extra-virgin olive oil
Kosher salt
2 tablespoons chopped parsley leaves
1/4 cup freshly grated Parmigiano-Reggiano

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a baking sheet in the hot oven for at least 5 minutes.
  • While the baking sheet is heating, toss the potatoes with the olive oil and 3/4 teaspoon salt in a large bowl. Then dump the potatoes out onto a baking sheet, spreading to a single layer. Roast for 30 to 35 minutes, shaking the pan every now and then, until the potatoes are cooked through, brown and crispy. Toss the fries in a big bowl with the parsley and cheese.

6 Yukon Gold potatoes, cut into thick fries
1 tablespoon white sugar
¼ cup extra-virgin olive oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
  • Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
  • Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

4 large potatoes (peeled and sliced into 1/2 inch cubes)
2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt

  • Preheat oven to 400 F.
  • Melt margarine/butter over medium heat in a large heavy bottomed fry pan which has a heat resistant handle(I use cast iron)
  • When butter starts to sizzle add potatoes and let fry for 2 minutes.
  • Turn with a spatula and cook for another 2 minutes.
  • Continue until all sides of potato cubes are browned.
  • Place in preheated oven for 15-20 minutes until potatoes are tender.*.

  • Adjust oven rack to lowest position and heat oven to 450 degrees.

  • Wash potatoes and cut them into semi-thin strips.
  • Place strips in a bowl and add cool water to cover the potatoes.
  • Wash out some of the"starch" and then drain the potatoes well.
  • Mix in the olive oil and sprinkle with salt.
