3 large sweet potatoes
Pam cooking spray
1/2 cup brown sugar, packed
2 eggs
3/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
1/2 cup nonfat milk
1 cup pecans
1/4 cup all-purpose flour
3 tablespoons butter

Steps:

  • In a covered large saucepan, cook sweet potatoes in enough lightly salted boiling water to cover, for 25-30 minutes, or until very tender.
  • Meanwhile, preheat oven to 350.
  • Lightly coat a 1 1/2-2 quart oval baking dish, or a 2 quart square baking dish with non-stick cooking spray. Set aside.
  • Drain sweet potatoes, and return to saucepan.
  • Using an electric mixer or potato masher, mash sweet potatoes until smooth.
  • Stir in 1/4 cup brown sugar or brown sugar substitute, eggs, nutmeg, and cinnamon.
  • Add milk, and stir to combine.
  • Pour into the prepared baking dish.
  • In a small bowl, combine pecans, 1/4 cup brown sugar or brown sugar substitute, flour, and melted butter. Sprinkle over sweet potatoes.
  • Bake uncovered, about 30 minutes, or until sweet potatoes are heated through, and topping is golden brown.
  • Serve warm.

Steps:

  • Preheat the oven to 350 degrees. Coat a 1 1/2- to 2-quart casserole dish with nonstick cooking spray; set aside. Add water to a large saucepot until it's 2/3 full. Add the sweet potato to the pot and bring to boiling over medium heat. Cook the sweet potato for 20 minutes. TOPPING
1/2 cup whole-wheat flour
1/3 cup packed brown sugar
4 teaspoons frozen orange juice concentrate
1 tablespoon canola oil
1 tablespoon butter, melted
1/2 cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan; cover with lightly salted water and bring to a boil. Cover and cook over medium heat until tender, 10 to 15 minutes. Drain well and return to the pan. Mash with a potato masher. Measure out 3 cups. (Reserve any extra for another use.) Preheat oven to 350 degrees F. Coat an 8-inch-square (or similar 2-quart) baking dish with cooking spray. Whisk eggs, oil and honey in a medium bowl. Add mashed sweet potato and mix well. Stir in milk, orange zest, vanilla and salt. Spread the mixture in the prepared baking dish. 1/2 teaspoon finely grated orange zest

Kosher salt and freshly ground black pepper
2 egg whites, lightly beaten

1 cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 2 1/2 quart casserole dish with non-stick cooking spray.
