SWEET POTATO FRIES RECIPE BY TASTY
Here's what you need: medium sweet potato, olive oil, fresh rosemary, salt, freshly ground black pepper

Steps:
- Preheat oven to 425ºF/220ºC.
- Slice the ends off of the sweet potato and then slice it in half. Take one half and slice it horizontally 4 times then slice vertically 4 times to cut into fries.
- In a large bowl mix fries and ingredients until evenly spread.
- Place fries on a prepared baking sheet and bake for 25 minutes or until fluffy inside and crunchy on the outside.
- Enjoy!

- Place a large skillet over medium-high heat.
- In a small mason jar, add the soy, sugar, ginger, chili paste and garlic. Secure the lid and shake to combine. Set aside.
- Add 1 tablespoon of the olive oil and 1 tablespoon of the butter to the skillet. When the oil is hot and the butter has melted, add the eggs and cook, stirring, until scrambled, 2 to 3 minutes. Remove to a plate.
- Add the remaining butter and oil to the skillet. Add the edamame, then the corn and peppers. Cook, stirring occasionally, until heated through and lightly colored, 2 to 3 minutes. Add the riced cauliflower and sweet potatoes, stirring to combine. Cook until the cauliflower is just heated through, about 2 minutes.
- Give the sauce one last shake and add to the skillet. Return the eggs to the skillet and cook, stirring, for an additional minute. Garnish with the scallions, cilantro and sesame seeds.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Cut each sweet potato in half crosswise. Quarter each half lengthwise. Cut each quarter evenly into 2 to 4 pieces. Repeat with remaining sweet potatoes.
- Place sweet potatoes on a rimmed baking sheet. Add salt. Drizzle olive oil on top. Stir up potatoes to coat with oil; spread out evenly on the baking sheet. Season with pepper.
- Bake in the preheated oven, stirring every 10 minutes, until browned, 20 to 30 minutes.

SWEET POTATO FRIES
These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

- Heat the oven to 400.
- Cut the sweet potatoes into sticks 1/4 to 1/2 inch wide and 3 inches long, and toss them with the oil.
- Mix the spices, salt and pepper in a small bowl, and toss them with the sweet potatoes. Spread them out on 2 rimmed baking sheets.
- Bake until brown and crisp on the bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes. Serve hot.

Add in the sweet potato rice, stir well and let cook for 2-3 minutes to warm through. Add in the vegetable broth and cook for another 2-3 minutes, adding more broth if it sticks to the bottom of the pan. Add in the peas, stir well to combine, and then build a cavity in the center of the mixture and pour in the eggs. Scramble the eggs in the middle and then stir altogether to combine. Season with pepper and drizzle with soy sauce. Stir well to combine and remove from heat. Serve.

Add the sweet potato, season with some salt and pepper, cover, and cook, stirring occasionally, until the potatoes start to soften and brown, about 5 minutes. (Covering the sweet skillet helps the sweet potatoes to cook more quickly.)
- Remove the lid, add the rice, garlic, and ginger, and continue to cook, stirring occasionally, until the rice is warmed through and starts to crisp up a bit, about 5 minutes.
