Sweet Potato-Green Onion Ebelskiver with Herb Buttermilk Dip image

Number Of Ingredients 19

1 clove garlic
Kosher salt and freshly ground black pepper
1/2 cup whole-milk Greek yogurt
1/2 cup buttermilk
Grated zest and juice of 1 lime
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped fresh parsley
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon freshly ground black pepper
Pinch cayenne
2 cups buttermilk
2 eggs, separated
1/2 cup sweet potato puree (from about 1 very small roasted sweet potato), make sure it is dried out
4 tablespoons unsalted butter, melted and cooled, plus more for the pan
2 green onions, green and pale green part only, finely chopped

Steps:

  • For the herb buttermilk dip: Smash the garlic, sprinkle with salt and work to a paste with your knife blade. In a bowl, whisk together the yogurt, buttermilk, lime zest and juice, cilantro, parsley, garlic paste and some salt and pepper. Cover, and refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.
  • For the ebelskivers: In a large bowl, whisk together the flour, baking powder, baking soda, sea salt, nutmeg, black pepper and cayenne.
  • In a medium bowl, combine the buttermilk, egg yolks, sweet potato puree, 4 tablespoons melted butter and green onions. Whisk until smooth. Slowly add the sweet potato mixture to the dry ingredients, stirring until combined. Whip the egg whites in a medium bowl until stiff peaks form. Gently fold the egg whites into the batter.
  • Set the ebelskiver pan over medium heat, and brush each divot with melted butter. Heat until the butter begins to bubble. Add 2 tablespoons of the batter to each divot. Cook until the sides of the ebelskivers are golden brown and come away easily from the pan (use a skewer to check) and the top starts to dry a bit and bubble, 3 to 4 minutes. With a skewer, carefully turn the ebelskivers over and cook until deep golden brown on the second side, about 3 minutes more; transfer to a platter. Repeat with the remaining batter. Serve the ebelskivers with herb buttermilk dip on the side.

Coarse salt
1/4 cup low-fat buttermilk
1/4 cup mayonnaise
2 tablespoons chopped fresh dill, plus more for sprinkling

Steps:

  • Preheat oven to 425 degrees. Toss wedges with olive oil and season with salt; roast until tender, about 20 minutes. For the dip, whisk together buttermilk, mayonnaise and dill; season with salt. Sprinkle with more dill before serving.

¼ cup amaretto liqueur
1 teaspoon dried thyme

¼ cup sliced almonds, toasted

Steps:

  • Heat oven to 425 degrees F.
  • Toss first 6 ingredients in a shallow medium-sized baking dish.
  • Cover; bake 30 minutes. Uncover; bake 20 minutes more. Sprinkle with almonds

Sweet Potatoes With Caramelized Onion image

I fail to remember where this recipe first appeared but chances are it was from Canadian Living magazine. This simple dish is much richer than you would expect and pairs well with grilled meats especially lamb and pork. Since sweet potatoes are very moist, adjust the amount of sour cream or milk to your taste. I do recall that the original recipe recommended placing the sweet potatoes and onion mixture in a food processor until blended. I found this method too gluey and altered it as stated.

1/4 cup olive oil
1 large Spanish onion, thinly sliced
2 tablespoons fresh thyme leaves
3 large sweet potatoes
2 tablespoons butter
1/4 cup low-fat sour cream (Carnation low fat works very well) or 1/4 cup milk (Carnation low fat works very well)
salt
fresh ground pepper

Steps:

  • Preheat oven to 400º.
  • Heat olive oil in frying pan at medium heat and add onion. Sauté until rings separate. Reduce heat to medium low and continue cooking uncovered, until onions are soft and caramelized at least 30 minutes or more, stirring occasionally.
  • Meanwhile, prick whole potatoes with skins on and bake in roasting pan for 40 minutes or until soft. When cool enough to handle peel skins from potatoes and set aside.
  • When onions are soft add thyme, salt and pepper to taste and mix well. At this point you can either place the onions in a food processor and pulse until they are slightly chunky or chop with a sharp knife.
  • Heat a medium sized pot and add butter. Add the sweet potatoes and mash with a fork or potato masher. Add the sour cream or milk a little at a time then add the onion mixture. Blend with a wooden spoon until fully incorporated and adjust S & P to taste.

  • Stir in brown sugar and jerk seasoning. Cook uncovered about 3 minutes, stirring occasionally, until glazed. Sprinkle with parsley.
