Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
  • Combine sweet potatoes and eggs in a medium bowl. Beat in the brown sugar, milk, butter, lemon juice, ginger, cloves, cinnamon, salt. Pour into prepared dish.
  • Bake in preheated oven until hot and golden brown on top, about 30 minutes.

1 cup raisins
2 tablespoons rum
1 cup whole wheat pastry flour
1/2 teaspoon nutmeg, freshly ground
1/2 teaspoon salt
1 lb cooked sweet potato
3 large eggs
1 (14 ounce) can light coconut milk
1 cup light brown sugar, packed
2 tablespoons butter, melted
1/2 cup unsweetened coconut
2 tablespoons brown sugar, packed
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to 350. Coat a 9-inch springform pan with cooking spray.
  • Toss raisins and rum in a small bowl and let stand.
  • Whisk flour, nutmeg and salt in another bowl.
  • Mash sweet potato in a large bowl.
  • Add eggs and beat with an electric mixer on medium speed until combined.
  • Add coconut milk, 1 c brown sugar and butter.
  • Beat until combined.
  • Stir in the dry ingredients until evenly moistened.
  • Stir in the raisins and any remaining rum.
  • Spread into prepared pan.
  • TOPPING: Combine coconut, 2 T brown sugar and cinnamon.
  • Sprinkle on top of the cake.
  • Bake until a knife inserted in the center comes out clean--1 to 1 1/4 hours.
  • Let cool in the pan for 10 minutes.
  • Run a knife around the edge of the pan and remove the ring.
  • Cool at room temperature for 1 hour, then refrigerate until cold (about 3 hrs).
  • Prep time does not include the cooling and refrigerating.

2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon

1 1/2 cups (3 sticks) margarine
1 cup brown sugar
3 large eggs
1 tablespoon vanilla extract
2 1/2 cups mashed cooked sweet potatoes
1/2 cup crushed pineapple, drained
1 cup raisins
1 cup chopped walnuts, plus additional for garnish, optional
16 ounces cream cheese, softened
1/3 cup butter, softened
1 tablespoon vanilla extract
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F. Adjust the position of the rack to the center of the oven. Grease and flour 2 (9-inch) pans or 3 (8-inch) pans. Set aside.
  • In a large bowl, stir together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and granulated sugar. Set aside. In the bowl of a mixer, cream margarine and brown sugar on low speed, and then increase speed to medium and beat until well-combined. Gradually add the dry ingredients and beat on low speed until just incorporated. Add eggs, 1 at a time, beating well after each egg and scraping down the sides of the bowl after the addition of each egg. Add vanilla, sweet potatoes, pineapple, raisins, and walnuts and blend on low speed until thoroughly mixed.
  • Pour batter into pans and smooth the surface with a metal spatula. Bake for 1 hour to 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean; when you touch the center of the cake, it should spring back. Allow to cool in pans for 10 minutes, and then invert onto a rack and cool completely.
  • For icing: In the bowl of an electric mixer, beat cream cheese and butter on medium speed until smooth. Add vanilla and beat until incorporated. Gradually add sugar and beat on low speed until smooth.
  • Icing the cake: Place 1 cake layer, top-side down, on a cake platter. Using a metal spatula, spread a layer of cream cheese frosting evenly over the top of the cake. Take the next layer and place it on top, rounded-side up. Frost the top and sides of the cake with the remaining frosting. The cake should be refrigerated for about 1 hour to make sure the layers are set. Sprinkle chopped walnuts on top of cake, if desired.

2 1/2 pounds medium sweet potatoes (about 3), poked with a fork
1/2 cup (1 stick) butter, room temperature
2 large eggs
1 cup sugar
1/2 cup milk
1 tablespoon self-rising cornmeal
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup pecan halves
1/2 cup packed brown sugar

Steps:

  • Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with cooking spray.
  • On a foil-covered baking sheet, bake the sweet potatoes until soft, about 1 hour. Remove and let cool. Reduce the oven temperature to 325 degrees F. When cool enough to handle, peel the potatoes, place the flesh in a large mixing bowl, add the butter and mash until smooth. Add the eggs 1 at a time, beating well after each addition. Add the sugar, milk, cornmeal, salt and 1/2 teaspoon of the vanilla and beat until smooth. Pour the batter into the prepared baking dish. Steps:

  • With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.

4 cups mashed sweet potatoes
1/2 cup heavy whipping cream
3 large eggs, separated
2 tablespoons lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup sweetened shredded coconut, divided
1/3 cup packed brown sugar
1/3 cup slivered almonds
Vanilla ice cream, optional

Steps:

  • In a large bowl, beat the potatoes, cream, egg yolks, lemon juice, lemon zest and spices until smooth. Fold in 2/3 cup coconut., In a large bowl with clean beaters, beat egg whites on medium speed until soft peaks form. Gradually beat in brown sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved., With a spatula, stir a fourth of the egg whites into sweet potato mixture until no white streaks remain. Fold in remaining egg whites until combined., Transfer to a greased 11x7-in. baking dish. Sprinkle with almonds and remaining coconut. Bake at 325° for 50-55 minutes or until a knife inserted in the center comes out clean. Serve warm, with ice cream if desired.

This delicious and decadent cake has a firm texture, closer to a bar/brownie. It was created for the Ready Set Cook #8 contest. To enjoy the full flavor of the spices and rum, make a day ahead and refrigerate overnight. Best served cold.

1/2 cup raisins
1/4 cup dark rum
2 cups mashed cooked sweet potatoes
2 cups all-purpose flour
1 1/2 cups brown sugar (firmly packed)
1 tablespoon fresh orange zest (finely grated)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 teaspoon ground ginger (or use fresh)
1/2 teaspoon salt
4 eggs
3/4 cup vegetable oil
1/4 cup juice squeezed from fresh orange
1 cup dried unsweetened coconut
1/2 cup unsalted butter
4 cups confectioners' sugar
3 tablespoons dark rum
1 teaspoon fresh orange zest (finely grated)
1/2 cup dried unsweetened coconut

Steps:

  • Soak the raisins in rum for at least 30 minutes to plump them up.
  • Meanwhile peel, dice and boil sweet potatoes until tender. Mash and let cool.
  • Preheat oven to 350º, and prepare 13 X 9 baking pan with cooking spray and a little flour.
  • Combine all of the cake ingredients (except raisins) in a large mixing bowl. Stir to combine. With an electric mixer, mix on medium speed for about 2 minutes. Fold in the raisin/rum mixture. Spread into the prepared baking pan and bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Cool the cake completely before frosting.
  • To make the frosting, melt the butter in a large saucepan, and allow it to brown just lightly. Remove from the heat and add the remaining frosting ingredients. Beat until smooth and creamy. You can add a little additional rum, orange juice, or water to thin it if necessary, or add a little confectioners sugar if you need to thicken it. Spread over the cake and refrigerate overnight. Serve cold.

1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2 tsp. pumpkin pie spice
1 tsp. baking soda
1 cup butter, softened
1 cup sugar
3 eggs
1 cup plain mashed sweet potatoes
1/4 cup milk
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F.
  • Mix flour, dry pudding mix, pumpkin pie spice and baking soda in small bowl.
  • Beat butter and sugar in large bowl with mixer until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add sweet potatoes and milk; beat until blended. Gradually add flour mixture, beating after each addition until blended. Pour into 9x5-inch loaf pan sprayed with cooking spray. Sprinkle with nuts.
  • Bake 50 min. to 1 hour or until toothpick inserted in center comes out clean. Cool in pan 15 min. Invert cake onto wire rack; gently remove pan. Cool completely.
